Tajima-gyu are a rare breed of cattle from Tajima, located near Kobe, and are considered the pinnacle of Japanese Black breeds of Wagyu. Only Tajima-gyu whose meat meets extremely demanding criteria are officially certified as “Kobe beef ” – each cattle even gets its own ID number to prove it.
