BLACKBOOK IN THE KNOW GLOBAL GOURMAND ON OUR CULINARY RADAR: A DYNAMIC NEW DINING DESTINATION IN SYDNEY, FOOD AND MUSIC ON THE MENU ON IBIZA , PLUS A TRIO OF EPICUREAN TOMES All Aboard Sydney’s newly opened Tramsheds pairs industrial chic with a roster of culinary headliners T rams have long been absent from Sydney’s streets – the last one travelled its route in February 1961 – but they’ve become the focus of the city’s newest gourmet destination. Once the depot for the transport that shunted punters to the Harold Park harness racing, the Tramsheds had sat unused for decades and fallen into disrepair. Now with a full makeover, the heritage-listed site houses a dozen dining and drinking venues. It’s an all-star affair with well-known names serving their rations from early morning until late in the evening. Start the day at Garçon, where croquemonsieurs and coffee crafted from The Little Marionette beans are on the menu. Bekya serves up Egyptian street food, while Belles Hot Chicken purveys the finest Nashville-style fried bird. But it’s the addition of some favourite names that has turned this into the dining destination du jour. Jared Ingersoll returns with farm-to-table venue Butcher and the Farmer, replete with its own restored vintage tram. Here you can pick up a slab of brisket to cook at home, grab some takeaway or indulge in carefully sourced wagyu cooked over coals. The much-loved Porteño crew bolsters its portfolio with Bodega 1904, offering Spanish and South American tapas. Then there’s perfect pasta at Flour Eggs Water and sustainable seafood at Fish and Co. Evoking the spirit of a 1920s speakeasy with added beach terraces, this Balearic version stays true to the recipe of traditional Spanish dishes given a modern twist, but also takes advantage of the local bounty, with Mediterraneaninspired options on the menu curated by Nacho Chicharro, head chef at the Madrid original.
