Contributors Xavier Young “The starting point for this story was the famous Christmas lights in Regent Street,” says the photographer behind Lighting Up London (p50), which places the season’s most covetable jewels among some of the British capital’s most famous landmarks, which he captured over three evenings. “Working out the perspective for the jewellery was the most challenging part of the studio shoot and then the hours in retouching making the pieces look as convincing in the settings as possible. It’s a bit of fun but hopefully makes you look twice.” Emily Nathan “Fine dining in Greenland is a complex affair,” observes the Copenhagenbased writer. In A Faraway Feast (p56), she embarks on an adventure to the world’s most remote Michelinstarred restaurant: a seasonal pop-up perched above the icebergs and reached exclusively by shuttle boat. “Each course is a stunning work of modern culinary technique, but you won’t find esoteric dusts or obscure gelées; instead, it’s a visceral journey through Greenland’s sea, land and sky, experiencing ingredients the majority of Greenlandic restaurants either can’t or don’t dare to utilise.” Lee Marshall “The first time, I visited Pompeii at the end of the 1980s,” recalls the Umbria-based travel writer and film critic, who wrote Pompeii’s Return to the Future (p33), “You had to run the gauntlet of illegal tour guides and, once inside, many areas were closed due to safety issues or staff shortages.” Marshall is happy to report that Italy’s most famous archaeological site not only offers a pleasant visitor experience today – it’s also engaging with contemporary art and correcting the historical record to give a more inclusive picture of the Ancient Roman city. Brian Noone “Norwegian hospitality is still relatively young, so you never know exactly what you’re going to find, whether you’re in Oslo or the Arctic Circle,” says Noone, this magazine’s London-based International Deputy Editor, who travelled to Norway’s fjord land for Northern Soul (p44). “Steinar and Yngve at Åmot are exactly the kind of people you hope to meet: warm, engaging, genuine and knowledgeable. I understood immediately why the place has had such word-of-mouth success.” Jeffrey T Iverson “For me, having a plate of oysters with a glass of muscadet has always been one of those rites of passage for any epicurean visiting France, but I never gave much consideration to the wine itself.” So admits the Paris-based food and wine writer, who reports on the renaissance of this longmaligned Loire Valley wine in Muscadet Awakening (p66). “How wrong I was!
