Sometimes it appears as though the rift between the traditionalists and the avant-garde is far too deep to overcome. Other times, the two polarities are not so distant at all and, in fact, seem to be almost singing together, creating a profound, perspective-altering harmony. In the eighth edition of our annual The Compendium by Centurion, we focus on the most compelling renditions of finely balanced melody – a soundtrack of old-meets-new products, places and people that are changing our world for the better. Perhaps more than any other topic at the moment, food and drink are at the forefront of global conversations. What we consume and how it makes its way to our table are two hot-button subjects – putting fine dining and winemaking in a state of transition. In our feature on page 46, longtime correspondent Patricia Bröhm speaks to chefs across the globe about their increasingly plant-based menus, from Daniel Humm’s recent turn to a strictly vegan menu at Eleven Madison Park in New York to Alain Passard’s choice, over two decades ago, to eschew red meat, and why they represent a return to the primacy of the terroir that dominated early conceptions of haute cuisine. Terroir is also in focus on page 98, where Jeffrey T Iverson speaks to a new generation of winemakers across the globe who are turning their heritage-imbued family vineyards into 21st-century stalwarts, using everything from new science in agriculture to social media – ensuring that the tipples that accompany our meals are also well considered. Elsewhere in the issue, we take a deep dive into the return of the private fashion showroom, an intimate space given to intimate conversations where both brands and clients are able to express themselves best. We also look at private art collections – and whether it’s best to donate in full to a major institution, start your own private museum or take a different choice entirely. Travel, yachts, watches, jewellery – we explore these topics as well in the pages that follow, encompassing everything from the latest and greatest hotels near India’s largest tiger sanctuary to the most artistic of timepieces.
