Now Enrique Olvera is taking on New York City with his latest brainchild, Cosme, in the restaurant-rich Flatiron District. Named after Mexico City’s San Cosme market, the space will play host to standbys like tortillas made in-house, but diners will look in vain for the usual combination plates. While the cooking isn’t as adventurous as Pujol's – where the mole cooks for 300-plus days and baby corn cobs are dusted with powdered ants – Olvera plans to upend American conceptions of what “Mexican” can mean, offering, for example, prawns with tamarind, ginger and cilantro, and pork jaw with sunflower seeds and orange.
