Set right opposite the audacious lines of the Daniel Libeskind-designed Bord Gáis Energy Theatre in the Docklands quarter, it boasts bold, contemporary shapes of its own and one of the capital’s only rooftop lounges, with far-reaching views across the city to the heatherflecked Dublin Mountains beyond. Those with more traditional leanings can check into the city’s grandee, The Merrion Hotel ( merrionhotel.com) in the heart of Georgian Dublin, where they can expect gracious proportions, crackling fires and one of the country’s finest private art collections adorning the walls. as well as one of the city’s most august eateries, the two-star Michelin Restaurant Patrick Guilbaud. But Dublin’s dining scene continues to evolve. Its latest metamorphosis is a move to smaller, casual eateries in marked contrast to the starched linen offerings of yesteryear. And Super Miss Sue ( $ supermisssue.com) is a perfect harbinger: an arrestingly designed fish and chip shop, seafood café, oyster bar and gin bar all under one roof in a city that, despite its coastal setting, remains woefully short of fish restaurants. A bustling vibe also permeates Etto ( $ etto.ie), where the minute dimensions don’t seem to bother eager diners who pack into this new Italianate arrival to sample such dishes as grilled slip sole, potted shrimp butter and lentils as well as spinach and ricotta dumplings with trompette, crispy sage and egg yolk. Over at The Greenhouse Restaurant (thegreen houserestaurant.ie), an on-trend Scandinavian sensibility is on display, courtesy of Finnish chef Mickael Viljanen, who uses herbs and flowers picked by the restaurant’s in-house forager and locally sourced ingredients to conjure up memorable, pretty-as-apicture plates like roast Irish Sika Deer with chanterelle, celeriac, elderberry and smoked milk on its two-, three-, five- and seven-course tasting menus. But it isn’t only chefs who are crafting delectables for locals and visitors alike. Makers & Brothers (makersandbrothers.com) is one of the main exponents of Ireland’s renewed pride in its ancient, artisan Finnish chef Mickael Viljanen of The Greenhouse Restaurant; below, from left: Shaggy Dog cushion, Strand lamp and Freud teaball from Makers & Brothers REGAL RETURN With an eye toward restoring it to its opulent former glory, the new owners of Ashford Castle, Red Carnation Hotels, have just unveiled eight refurbished suites. An additional 30 guestrooms will debut shortly, with further enhancements planned over the coming year – a timely tribute to Ashford’s 75th anniversary as a hotel. ashford.ie traditions – its quirky showroom in the genteel, seaside suburb of Blackrock showcases the likes of hand-blown glass from the Jerpoint Studio in County Kilkenny alongside stylish, specially commissioned pieces. And not to be outdone, sibling to London’s Selfridges, Brown Thomas (brownthomas.com) remains Dublin’s go-to shop for all the luxe brands as well as the new outpost of Irish-born cocoa wizard Gerard Coleman’s Artisan du Chocolat.
