THE A-Z COMPENDIUM EXPOSITIONAL Eats Massimo Bottura, the famed chef of Osteria Francescana, on his culinary plan for Milan Expo 2015 1 The official theme of Expo 2015, in Milan, is a noble thought: “Feeding the Planet, Energy for Life.” If history is any indication, though, there will be plenty of leftovers. Thankfully, chef Massimo Bottura, of Modena’s Michelin three-star Osteria Francescana, has an idea to make sure they don’t go to waste. The project, called Refettorio Ambrosiano, is inspired by Da Vinci’s The Last Supper, so no wonder it has earned the church’s blessing: “I’m going to do a project [with the archbishop], in which I’ll invite all my friends, all the best chefs in the world, to serve food made from the leftovers of the other pavilions,” he says. Starting in May, the chefs in question – the list has yet to be finalised, but it’s sure to be any self-respecting foodie’s fantasy team – will serve lunch to students and dinner to the needy in a 1930s former theatre in the Greco quarter.
