<strong>sens</strong>ibilitatea se dim<strong>in</strong>ueaza odata cu cresterea temperaturii? Solicitati sugestii cu privire<br />

la mancaruri sau bauturi care isi pierd atractivitatea <strong>de</strong> la o temperatura la alta.<br />

Experimentul 7.2 Evaluarea per<strong>ce</strong>ptiei pragurilor <strong>in</strong> cadrul gustului <strong>de</strong> dul<strong>ce</strong><br />

(De la vasrta <strong>de</strong> 12 ani)<br />

A<strong>ce</strong>st test ne adu<strong>ce</strong> <strong>in</strong>apoi la tema senzitivitati gustului, con<strong>ce</strong>ntrandu-ne asupra gustului<br />

dul<strong>ce</strong> si explicand mai <strong>de</strong>parte pe tematica experimentului anterior. Per<strong>ce</strong>ptia mai<br />

multor praguri ale variatelor gusturi poate sa difere consi<strong>de</strong>rabil <strong>de</strong> la persoana la persoana.<br />

A<strong>ce</strong>st fapt explica <strong>de</strong> <strong>ce</strong> <strong>un</strong>ora li s-ar putea parea ca <strong>un</strong> meniu este fara gust<br />

sau prea sarat, iar altora li s-ar parea perfect proportionat. Focalizati-va d<strong>in</strong> nou asupra<br />

<strong>in</strong>fle<strong>un</strong>telor legate <strong>de</strong> obi<strong>ce</strong>iurile alimentare, asupra senzitivitatii, scotand <strong>in</strong> evi<strong>de</strong>nta<br />

faptul ca c<strong>in</strong>eva care mananca multa hrana <strong>in</strong>dustriala, ca si gustarile preambalate, este<br />

mai put<strong>in</strong> <strong>sens</strong>ibil la gust.<br />

Materiale:<br />

• 100 <strong>de</strong> grame <strong>de</strong> zahar<br />

• 6 litri <strong>de</strong> apa plata<br />

• 1 pipeta sau ser<strong>in</strong>ga cu capacitatea <strong>de</strong> 25 <strong>ce</strong>ntimetri cubi<br />

• 10 <strong>ce</strong>sti pentru fiecare participant<br />

• 9 sticle curate <strong>de</strong> a<strong>ce</strong>easi marime<br />

• 1 cana<br />

• 1 l<strong>in</strong>gura mare<br />

• Etichete<br />

• Hartie si creioane, fise <strong>in</strong>dividuale <strong>de</strong> evaluare (Fig.7.2)<br />

• Flipchart sau o coala <strong>de</strong> hartie mare pentru <strong>ce</strong>ntralizarea rezultatelor<br />

Metoda:<br />

• Prepara solutii cu con<strong>ce</strong>ntratii crescatoare d<strong>in</strong> p<strong>un</strong>ct <strong>de</strong> ve<strong>de</strong>rea al pro<strong>ce</strong>ntelor.<br />

Preparati o solutie <strong>de</strong> baza <strong>in</strong> cana , dizolvand 100 <strong>de</strong> grame <strong>de</strong> zahar <strong>in</strong>tr-<strong>un</strong> litru<br />

<strong>de</strong> apa. Umpleti <strong>ce</strong>le 9 sticle cu 500 <strong>ce</strong>ntimetri cubi / mililitri <strong>de</strong> apa. Folos<strong>in</strong>d pipeta<br />

sau ser<strong>in</strong>ga, scoateti afara 2.5 <strong>ce</strong>ntimentri cubi <strong>de</strong> apa d<strong>in</strong> prima sticla si <strong>in</strong>locuiti<br />

a<strong>ce</strong>lasi volum cu solutia <strong>de</strong> baza preparata. Cont<strong>in</strong>uati sa fa<strong>ce</strong>ti a<strong>ce</strong>lasi lucru cu restul<br />

sticlelor, disloc<strong>in</strong>d pe rand 5., 7.5, 10, 12.5, 15, 20 si 22.5 <strong>ce</strong>ntimetri cubi <strong>de</strong> apa,<br />

si <strong>in</strong>locuiti cu a<strong>ce</strong>lasi volum d<strong>in</strong> solutia preparata <strong>in</strong>itial. In f<strong>in</strong>al veti avea 9 solutii<br />

<strong>de</strong> con<strong>ce</strong>ntratii cu valori crescatoare egale numeric cu 0.5, 1, 1.5, 2, 2.5, 3, 3.5, 4 si<br />

4.5 grame/ litru. Numerotati-le <strong>in</strong> ord<strong>in</strong>ea cresterii con<strong>ce</strong>ntratiei cu numere <strong>de</strong> la<br />

1 la 9. Numerotati <strong>ce</strong>stile cu numere <strong>de</strong> la 0 la 9. Umpleti cana 0 cu apa pura iar
