Ivica Delić, 2005.; <strong>Diplomski</strong> <strong>rad</strong>_______________________________________________________________________________Kvaliteta plodova jabuke Granny Smith nakon toplinskog tretmanaProvedeno je istraživanje o utjecaju toplinskih tretmana potapanjem u vodu od 6 minuta na 48º C izagrijavanja toplim zrakom 3 dana na 38º na kvalitetu plodova jabuke Granny Smith nakončuvanja od 3 mjeseca u uvjetima NA i 7 dana života na polici. Kod oba tretmana došlo je dopromjena boje, tvrdoće i topljive suhe tvari. Tretman toplim zrakom se pokazao negativnim zakvalitetu ploda nakon čuvanja. Kod tretmana HWD 48º 6‘, boja je dosta svježa, no plodovi su uoba mjerenja ( 3 mjeseca , 3 mjeseca + 7 dana ) najviše gubili na tvrdoći. Na plodovima nije bilopovršinskog scalda ni u kontroli ni u toplinskim tretmanima.Ključne riječi : Malus domestica Borkh., čuvanje, toplina, jabuka, kvalitetaThe fruit quality of apple Granny Smith after heat treatmentA study of the effects of the hot water dips ( HWD ) at 48º C and hot air treatment ( HAT 38 ) onthe Granny Smith apples was done, during 3 months of storage in RA and 7 days of shelf life.Both treatments changed fruit color, firmness and soluble solids content. Hot air negativelyinfluenced on quality and color after storage. Fruits from HWD had fresh color, but they lostfirmness.
