equipment is alarmed in case of any break

downs and we have back-up generators in

case of power cuts in our cold stores. We

also monitor all vehicle fridges 24/7.

• Within our Quality system we have a

HACCP procedure specifically designed to

consider the safety of foodstuffs. At least

once a year we consider the potential

risks, how we minimise them and what the

appropriate action is in the unlikely event

that something is of concern.

It’s a Family Affair

How I became ‘hooked’ on Fish & Chips

I have been commercially involved in the fish

and chip industry since leaving school in 1955,

over sixty years ago! I was first ‘hooked’ on fish

and chips when as a young child during the

second World War, our local Fish and Chip shop,

‘Fishy Gerrards’ offered a delightful meal of Cod

and Chips, wrapped up in newspaper. The chips

cost one old penny and the fish all of three old

pence, adding up to 4p which equates to 1/60th

of £1! In our modern decimalised currency that

amounts to less than two new pence for a

delicious meal!

During the war our brave fishermen used to go to sea knowing that they

might hit a mine or blown up by a torpedo. The fish they caught was the

only food that was not on ration during the war. Perhaps it was this unique

situation that helped the British to develop their love of Fish and Chips

which continues to this day!

Fish and Chips were the original British ‘Take Away’ food. It was never and

will never be a ‘Fast Food’. To produce really good Fish and Chips takes a lot

of careful preparation and skill using the basic ingredients. Sourcing the right

potatoes, grown in the right climate and soil; choosing the right fish caught

in our cold northern seas and ensuring that it suits local taste; Haddock only

in Scotland; ‘Skin On’ Cod in Yorkshire and large slices of Skinless Cod in the

hungry industrial areas of the North East and then choosing the right batter

flour (different from region to region) with which to coat it and then frying it

in the right type of oil or fat is just part of the skill that is required to

produce the meal that will meet local expectations is no easy task!

It was into this fascinating industry that I came when I first started working

for my father, helping to deliver goods by van during the school holidays

when we sold only a very limited range of ambient products and no frozen

product at all.

One step beyond

This multitude of small and frequently family managed businesses

makes involvement with the industry so interesting because the

proprietors of these businesses often look to Companies like ours

for additional help and support. We take great pleasure in being

involved in the constant development of the Industry and work

hard to help members of the industry to compete successfully

with major Fast Food competitors who offer such a wide variety

of other Take Away Foods.

Fish & Chips are succeeding in a

competitive market

Some core products have barely changed over the years but the

range of food that Fish and Chip shops sell has developed – and

continues to develop - as new products appear in the market. The

continuing emergence of an ever wider range of frozen foods on

offer has allowed enterprising Fish and Chip shop proprietors to

offer their customers an ever more interesting range of freshly

cooked foods.

The Fish and Chip Industry has always needed to be able to adapt

to compete against the rapid increase in other Take Away food

alternatives – from McDonalds to KFC to Gregg’s range of Baked

‘Food to Go’ to Chinese and Indian Takeaways, the competition is

expanding and diversifying all the time.

It is a great tribute to the Fish and Chip industry that Fish and Chips

have not only survived the intense competition from so many

quarters but has actually seen an increase in the number of portions

that are sold.

The skills required in creating really good Fish and Chips ensure that

the industry which is dominated by owner run and managed shops

will not easily translate into large national chains of shops where

the skills required to produce a consistently good product are

difficult to replicate.

The fact that Fish and Chip shops are owned and managed by a

multitude of independent, hard-working and talented entrepreneurs

creates an interesting situation in that the industry is made up of

thousands of unique and independent Fish and Chip outlets all of

which have developed different ways of achieving success and all

offer their customers a slightly different range of products.

This fascinating fact makes being involved with the industry so

interesting. It consists of so many ‘jewels’, shops and restaurants that

thrive because they produce excellent food, using similar raw

materials but ending up with products that are so different and so

unique to each shop.

Henry Colbeck has been at the leading edge in helping the industry

to adapt to the changing retail world in which it operates for a long

time. We are proud to use the strapline ‘More than just a supplier’

and really do mean what it says!

We are passionate in our desire to help our customers and the

industry to ‘stay ahead of the curve’ in this fast changing world.

We were and still are instrumental in developing better packaging

for the industry. We want our customers to be confident that their

delicious products will still be hot and attractive to the eye at the

point of consumption. Both the corrugated box and the twocompartment

corrugated box are packaging concepts that we

pioneered and which help our customers to present the food

that they have prepared in the best possible packaging.

We have also developed the concept of greaseproof paper

printed with bespoke designs that helps our customers to

advertise their specific Take Away to their customers.

We take great pleasure in supporting the industry in many ways. In

the early New Year of every year for nearly a quarter of a Century

we have held exhibitions at one of three sites – Edinburgh,

Harrogate and Newcastle. Our exhibitions are always very well

supported by both our suppliers and by our customers. The

exhibitions present a wonderful opportunity for ‘Go Ahead’ fryers

to catch up with the latest trends in the marketplace. Our suppliers

and service providers - like the NFFF, Seafish and the Royal National

Mission to Deep Sea Fishermen welcome the opportunity that our

exhibitions offer for them to make contact with so many of the

leaders in the industry.

The wonderful fact is that Henry Colbeck Limited is extremely

fortunate to have a dedicated team of employees that really do

enjoy working for an organisation which is so much motivated to

be more than ‘just a supplier’. It makes life so much more interesting

when we can all enjoy contributing to and being part of a successful

industry that buzzes with enthusiasm and whose leading and very

talented participants are so keen to move with the time and to lead

the way in quality and style. We get great pleasure in working with

our customers and do our best to provide them with an unrivalled

quality of service that, we believe, goes far beyond just being a

provider of goods.

FEATURE

Investing in the future

I am the third generation of the family that set out on this fascinating journey way back in

1893. The fourth generation in my son Douglas and his wife Georgina have all of the drive

and enthusiasm and, dare I say it? – greater skills and awareness of what they can do for the

industry than previous generations have had. They will ensure that our interest in continuing

to support the development of the industry endures. Douglas and Georgina even have a

young son, Kye, who can’t wait to get involved.

Meanwhile, as I continue enjoying my ability to contribute to the industry that I love so

much, I look back over the sixty years in which I have enjoyed - and hopefully will continue

to enjoy for some time yet - being part of the talented and inspired team at Henry Colbeck.

My work has been and continues to be my most enjoyable hobby – better even than being a

rugby referee!

I have been so fortunate in that my life has been made much more interesting as a result of

being so involved in helping to support and develop this fascinating industry, composed of

many talented and interesting individuals who are inspired to work to keep it ahead of its

many - often international - Fast Food competitors. We as a Company have never been

profit maximisers. We are far more interested in investing in the continuing success of an

extraordinary industry.

Over the coming years I see the need for the industry to adapt to market demands to offer

more choice of portion sizes as consumers are being made more aware of the calorific value

and nutritional content of the food they are eating. Henry Colbeck will continue to work

towards providing its customers with innovative products and solutions in order to help

them to widen the appeal of Fish & Chips even further to future generations and to ensure

it remains the nations favourite.

What’s it all about?

It’s about raising the profile of the Fish & Chip market in

the U.K.

The National Edible Oil Distributors Association

(NEODA), of which Henry Colbeck Limited is a leading

member, decided last year that Fish & Chips, as a U.K.

valued brand, needed to be nationally and

internationally profiled.

NEODA will be using social media to profile National

Fish & Chip Day as well as using other media outlets to

promote Fish & Chips and Fish & Chip Shops.

What will it cost me to be associated with

National Fish & Chip Day?

Nothing!

NEODA members, including Henry Colbeck Limited, have

come together to create this event and pool their resources

to organise and develop a plan to promote Fish & Chips in a

way that’s never been done before - National Fish & Chip Day!

#NationalFishandChipDay

Giving away free mushy-peas to everyone on 3rd June when

they buy a regular portion of Fish & Chips would be a great

promotional and goodwill gesture.

You could produce leaflets advertising your shop and

promoting National Fish & Chip Day and deliver the

leaflets to the houses within a mile of your shop. Not all

of those residents will be your customers! Include a special

offer in the leaflet.

You could be really creative and hire fancy dress costume,

perhaps a pirate and get the person wearing the fancy

dress costume to hand out the leaflets in the streets

surrounding your shop and in the shopping area close to

your business.

You could organise a charity event to support either The

Fishermen’s Mission OR a local charity close to your heart.

Ask your staff to come up with ideas – you’ll be surprised

at how creative they are!

The event is all about using the opportunity to think about

how you and your staff can have some fun, raise the profile

of Fish & Chips and increase sales.

What do I have to do?

You don’t have to do anything OR you can take advantage of

National Fish & Chip Day and use it to have some fun and to

promote your business. This does not mean giving stuff away!

What you can do is organise your own business profiling event

week commencing 30th May culminating in a climax on 3rd

June - National Fish & Chip Day.

It can be as simple as getting all of your friends, family & staff

to use their social media skills, Twitter, Facebook, Instagram

etc. to “talk about” Fish & Chips and to suggest that in the

week leading up to National Fish & Chip Day EVERYONE

should get down to their local chippy to see just how good

Fish & Chips are!

You might want to link this to a prize-draw for your

customers. Why not have a lucky-dip in your shop on 3rd June

and have lots of small prizes?
