~ AMETSA ~

WITH ARZAK INSTRUCTION

Ametsa is a collaboration between the Halkin Hotel and a team that includes chef Elena Arzak

along with her father Juan Mari Arzak, Mikel Sorazu, Igor Zalakain and Xavier Gutierrez

Father and daughter Juan Mari and

Elena Arzak hold three Michelin stars

at the original Arzak restaurant in San

Sebastian, Spain, which regularly features

in the top 10 of the World’s 50 Best Restaurants

awards.

Sergio Sanz Blanco (pictured) takes on the

role of head chef at Ametsa in London and dishes

on the menu include Vieiras en Casa ‘Scallops at

Home’, Bacalao y Petalos de Ajo ‘Cod with Garlic

Petals’ and Pan de Naranja y Espinacas ‘Orange

Toast and Spinach’. The lunch tasting menu is

priced at £56 or £74 with wine pairings and the

dinner tasting menu is priced at £110 or £165 with

wine pairings. Interiors, by the London-based

studio, Ab Rogers Design, take inspiration from

the raw look at the original Arzak in San Sebastian

and the tranquillity of the Halkin Hotel to create a

culinary oasis.

The focal point of the restaurant is a wavelike

ceiling, created from 7,200 delicate glass

receptacles filled with vibrantly coloured spices

including cumin, turmeric, mustard, ginger and

paprika. Part sculpture, part chandelier, it forms a

warm, glittering canopy. A series of mirrors along

one wall are also engraved with illustrations of the

spices. “Ametsa means ‘dream’ in our language,”

says Elena.

“The dream of a kitchen beyond our frontiers,

in the middle of London, in the heart of the

Halkin Hotel.” Juan Mari adds: “It is a very exciting

development for us. An Ametsa team led by Arzak

Instruction’s culinary advice.”

Aqua Nueva, located in the heart of the West End, is a hidden

~ THE CINNAMON CLUB ~

The capital’s original fine dining Indian restaurant recently reopened

following a £1 million transformation ahead of its 15th anniversary

Set within the grand, Grade II-listed Old

Westminster Library, The Cinnamon Club’s

book-lined shelves and traditional features have

been updated and elevated with dashes of colour

and contemporary furnishings. Vivek Singh (pictured)

and head chef Rakesh Ravindran Nair have developed a

stunning new menu that combines The Cinnamon

Club’s signatures with new dishes and celebratory

platters. A roaming gin trolley offers cocktails from

lunchtime onwards.

Unique artwork showcasing the heritage of the

building adorns the walls of The Gallery. The Reading Room

affords a feeling of seclusion and comfort with heavy,

luxurious drapes and bookshelf units. Seating up to 60,

the room is styled in shades of jewel-toned blues and teals

offsetting the red tones of the timber floor and joinery.

The Old Library Bar is classically casual with clean lines,

traditional details and a refreshed colour palette – perfect

for pre- and post-dinner cocktails.

~ GERMAN GYMNASIUM ~

This European-style grand café opened in November 2015

within the newly renovated Victorian gymnasium between

King’s Cross station and St Pancras International

Constructed by architect Edward Gruning

in 1864-5, this was the first purposebuilt

gym in England. Today diners can

marvel at the soaring roof structure

of this Grade II-listed building, beneath which

long-forgotten sports were once practised, whilst

enjoying chef Bjoern Wassmuth’s contemporary

take on a Mittel-European grand café. The new

interiors, designed by Conran & Partners, are

influenced by the building’s original purpose

and playful gymnasium details filter through the

design. Gold mesh screens inspired by Victorian

detailing and fencing masks feature, while

original fixtures such as climbing hooks have

been retained in the ceiling of the awe-inspiring,

triple-height space.

Head Sommelier, Virgile Degrez, will take

wine lovers on a virtual tasting tour along the

Danube vineyards showcasing niche German,

Austrian and Hungarian labels as well as a

selection of bottles from eastern Europe. Those

wishing to sample the Meister bar’s innovative

cocktail menu – including the multi-sensory

concept, Le Whaf, which vaporises cocktails

turning them into dramatic, low-calorie clouds –

can join in the fun before or after dinner till 1am.

~ THE GRILL ~

AT THE DORCHESTER

Established in 1931, this dining room was soon known as the place to be for the finest grill food in

London. In keeping with its original concept, Christophe Marleix has created new seasonal menus

Delicious dishes here range from grill

favourites to the signature blue lobster

chowder and an extensive sweet

soufflé menu – the first of its kind in

London. Lively and welcoming, the re-imagined

restaurant fuses The Dorchester’s elegance with

contemporary details.

The restaurant features a striking, hand-blown

Murano glass chandelier and contrasting natural

materials including zinc, copper and marble, set

against butterscotch leather and oak parquet

flooring. Pivoting wall panels create a separate

ambiance from day to night.

Christophe Marleix has spent almost a

decade working with the Dorchester Collection.

~ KOFFMANN’S ~

Legendary French chef Pierre Koffmann opened his highly

acclaimed restaurant in The Berkeley in 2010

Koffmann’s at The Berkeley saw Pierre

Koffmann move away from his much

applauded haute cuisine menu to a more

relaxed, informal style while embracing his

provincial French culinary roots. His greatest passion

is to be behind the stove, cooking the dishes he loves,

many inspired by his maternal grandmother Camille.

This restaurant gives him the freedom to express this

vision.

The menu offers robust, seasonal dishes influenced

by his Gascon heritage, with a good-value menu du jour

which changes daily. Some dishes have been designed

to highlight the theatre of carving and tableside service.

Koffmann’s signature favourites include scallops

with squid ink, braised pig’s trotter with morels, and of

course his renowned pistachio soufflé with pistachio

ice cream. With its convivial “bonhomie”, Koffmann’s

attracts local customers and culinary pilgrims paying

homage to one of the grand masters of cooking.

M is a pair of multifaceted venues housing Grill Dining Rooms,

Raw Bars, Public and Private Members Bars, private dining,

event spaces and a wine tasting room

Martin Williams opened the

multifaceted venue M in Threadneedle

Street almost two years ago. The

venue, together with its M Raw and

M Grill restaurants, have received great critical and

public acclaim.

Last December saw the opening of M Victoria

Street; a venue housing a Grill Dining Room, Raw

Bar, Public and Private Members Bars, private

dining and event spaces and wine tasting room, all

of which one enters via a wine store.

Returning from Melbourne to London is chef

Michael Reid (pictured), who trained at both Le

Gavroche and Restaurant Gordon Ramsay under

the tutelage of celebrated chefs Michel Roux Jr,

Simone Zanoni and Ramsay himself.

The past two years have seen Michael work

closely with celebrity chef Shannon Bennet in

his award winning Vue de Monde restaurant and

in opening Jardin Tan. All at the same time as

working with some of Australia’s finest chefs,

including George Calombaris and Peter Gilmore.

He has also cooked alongside Heston Blumenthal

at The Skinny Duck, Melbourne.

Roka Aldwych is moments from the Strand and serves contemporary

Japanese Robatayaki cuisine in relaxed and elegant surroundings

Rainer Becker, creator and founder

of the Zuma and Roka restaurant

group, introduced the robata grill

to Europe in 2002. Roka Aldwych is

based around the warmth and energy of the

Robata grill at the heart of the restaurant.

Roka Group Executive Chef, Hamish

Brown, together with Rainer, has created an

extensive menu that features some of Roka’s

most celebrated signature dishes such as lamb

cutlets with Korean spices and scallop skewers

with wasabi and shiso. Expertly prepared sushi

and sashimi also features on the menu.

The bar at Roka Aldwych offers unique

cocktails, inspired by the Japanese kaizen

philosophy of striving for perfection. The

largest of the Roka restaurants in London, the

room has textural highlights such as porphyry

stone, natural tanned leathers, stained grey

timber and dried green oak to create a warm

Roux at Parliament Square offers a unique culinary experience

Michel Roux Jr, Roux at Parliament

Head Chef Steve Groves took control of

the kitchen in January 2013 and since doing

so has set the standards exceptionally high.

His food philosophy is simple: “work with

the seasons”.

Steve grew up in Brightlingsea, Essex

and trained at Colchester Institute where he

took a course in Professional Craft Catering.

Steve’s career as a chef has since included

positions at The Inn at Perry Cabin in the

United States and Launceston Place in

Kensington. He has also gained experience

at Le Gavroche, Buckingham Palace, The

Ledbury, The Greenhouse and Noma. In

2009 he won MasterChef The Professionals.

This year Steve has been shortlisted for

Craft Guild of Chefs Restaurant Chef of

the year.

~ SARTORIA ~

Savile Row’s only restaurant, Sartoria serves dishes

inspired by Francesco Mazzei’s native Calabria

and other regions in Italy

Sartoria relaunched in December 2015 with

a new look by interior designer David

D’Almada and celebrated Italian chef

Francesco Mazzei at the helm as chefpatron.

Open from breakfast through to dinner

and beyond, the food at Sartoria explores the bootshaped

country’s regional variety with a focus on

Southern Italian cuisine and hero ingredients.

D’Almada’s makeover captures the glamour

and romance of Italy in its 20th century heyday and

has seen the addition of the new Libare bar with

a cicchetti counter as well as an outside terrace

open all year round, to watch the Mayfair world go

round. Sartoria’s interiors now feature a rich palette

of oxblood, soft grey and walnut matched with

antique nickel and copper which exude elegance

and warmth with a touch of gentleman dandy style.

Highlights of the FT Laurent-Perrier menu,

designed by chef-patron Francesco Mazzei

(pictured), include the vitello tonnato – an Italian

classic – followed by innovative dishes such as Basil

risotto with red shrimp tartare and pork belly with

scallop, scampi and sanguinaccio.

Freshly baked breads and cakes are available

in the Libare bar for those looking for an Italian

spuntino (snack) during aperitivo hour. The cocktail

list comprises seasonal twists on all-time favourites

like Bellinis, Negronis and Spritzes, alongside some

~ SEA CONTAINERS ~

Overlooking the river Thames, Sea Containers is known for its

inventive flavours and emphasis on fresh ingredients

Sea Containers restaurant is located in the

Mondrian London hotel on the South

Bank. The ‘farm to table’ movement is

integral to the Sea Containers kitchen and

its menu; produce is carefully sourced from organic

farmers and Fair Trade cooperatives from around

the UK and continental Europe.

The restaurant features an open kitchen,

wood-fire oven, central “diner” bar and a

restaurant space designed by Tom Dixon with

floor-to-ceiling windows to complement its central

location on the river Thames.

Head Chef Gus Crosby (pictured) grew up

amidst sea and sand on the Sunshine Coast in

Australia. He funded his way through culinary

school by working as a kitchen hand in a beachside

restaurant and then embarked on a four-year

apprenticeship working in as many kitchens as

possible.

In 2004, London beckoned and Gus found

himself working in the kitchens of Smiths of

Smithfield under the watchful eye of John Torode

where he began to master his skills as a chef. Since

he arrived in London, some thrilling highlights

have included cooking at the opening of the 2012

Olympics and, as a keen cricket fan, cooking at

Lord’s was very special.

Over 10 years ago Vanilla Black set out to smash the stereotypes

associated with vegetarian cuisine

The brainchild of Andrew Dargue and

Donna Conroy, Vanilla Black first

opened in York in 2004. The couple

relocated the restaurant to London in

2008 to further pursue their mission.

Using modern techniques and interesting

flavour combinations, Vanilla Black continues

to challenge misconceptions of vegetarian

cuisine. The results have been rewarded with a

recommendation in the Michelin Guide.

Andrew Dargue (pictured) has worked as

a chef since he was 16 years of age. He became

vegetarian almost 17 years ago and in 2000 started

a small manufacturing company supplying

vegetarian dishes to hotels and restaurants.

Having researched many vegetarian

restaurants across the UK, Andrew and his

partner Donna Conroy found that many were

simply cafés with a focus on healthy, wholesome

food. They spotted an opportunity for an

innovative, exciting vegetarian venue, the

couple left their hometown of Teesside in

2004 and opened their first restaurant, Vanilla

Black, in York. Their ambition was to elevate

meat-free cuisine to the standard of the very

best restaurants.
