Editor’s letter
September is a time of transition, a seasonal
shift in the wind. As leaves turn colour and
cool air welcomes me, it’s easy to fall into
a contemplative mood, observing nature’s
rhythms and seeing how they affect my own.
Inside this issue, you’ll read about masters who find
harmony between the world you can touch and one you
can’t. To strengthen the bond between the inner and
outer universes, a Taiwanese architect left urban life to
create a new path for himself — one of simplicity, nature
and divinity. While soul-searching high in the mountains,
he saw that travellers craved a taste of his ascetic lifestyle
as much as his delectable meals. His efforts became a
restaurant — a ten-course paradise of sorts — where
souls would be fed in more ways than one.
As much as food can nourish and heal, so too can
music. In fact, the Chinese character for medicine is made
of two parts: herbs and music. We feature a beloved
Eastern European conductor who possesses this ancient
understanding. With his current orchestra, they meditate
together and play from the heart, forming a bond that
inspires classical music unlike anything heard before.

In 1979, Michael Amini arrived in the US intending to
study electrical engineering. Decades later, bedecking
sleigh beds in Swarovski crystals and rubbing elbows with
Hollywood’s elite may seem like quite the drastic career
turn for the CEO and head designer of legendary furnishing
house AICO — but then, Amini has never been one for
predictability.
From studding leather with rose gold to wrapping dressers
in buttery upholstery, the trendsetting designer has made his
name by breaking with rules and tradition, to lead the industry
to glamorous new dimensions. A modern-day Renaissance
man who loves fashion, art, travel and architecture, he
channels inspiration from every corner of the globe: Russian
palaces, Old-World Tuscany, Hollywood glitz — these all
find a place in his elaborate carvings and opulent textiles.
With 20 years of accolades behind him, Amini’s persona is
as multifaceted as his ornate mirrors — one day, he’s working
on a new collection alongside acting-world darling Jane
Seymour; the next, he’s receiving an honourary doctorate
for building a state-of-the-art medical centre for transfusion
patients. And as a father of two, he knows the importance of
staying grounded: for Amini, it’s about function as much as
flights of furniture fancy.

He stands, arms raised — the audience hanging on
stillness. His baton wafts up then comes down with
a stirring dichotomy of motion — a fluidity and precision
commanding a sound that could move mountains.
“We want to give the audience not only emotional
pleasure, but the experience of discovering a completely
different world behind the music,” says Bulgarian-born
master conductor Milen Nachev of the Shen Yun Symphony
Orchestra. “You see people from the audience
say they cried, but they don’t know why.”
Nachev — honoured with awards for Outstanding
Musical Leadership by the Vatican City in Rome, Foundation
Napoleon in Paris, and the Bulgarian Ministry
of Culture — believes what he is now doing with Shen
Yun to be the pinnacle of his illustrious life’s work, a
metaphysical journey in music.
“We are capable of communicating with the audience
not only through the surface of the music, but
at a deeper layer of inner meaning,” he says. As he’s
cultivated his craft up to today, Nachev has discovered
a new universe within his profession — a marriage of
sound, substance and selflessness.
Scaling Up
A conductor’s journey usually begins like most musicians
— with a singular instrument. Though Nachev’s
approach was similar, his ascension wasn’t. At age 5,
his grandmother took him to his first piano lesson. “I
believe this first encounter with music changed my life
completely, forever,” he says. A mere year later, with
the urging of his empowering teacher, Nachev entered
and won a national piano competition in his age group.
A few years later, a 9-year-old Nachev’s natural musical
gifts were germinating. Without having seen the
music score, he began conducting Brahms Symphony
No. 4 by memory at home. “The physical contact between
the music and the gestures were extremely inspiring
for me,” he says.

This music-body connection while conducting — an
artistic medium that floats between leading and following
— would be cultivated as more masters were laid
out in Nachev’s tuneful path. At the world-famous
Saint Petersburg Conservatory in Russia, the prodigy
studied under Professor Ilya Musin, who also taught
Yuri Temirkanov, Valery Gergiev and many more
acclaimed conductors.
Until a person has studied conducting, it’s impossible
to know what it entails — the richness and complexity,
the fine-tuned
intuition and trust
— layer upon subtle
layer of understanding
and nuance.
To start, “you
must be extremely
well prepared, with
the history of music,
and knowledge
about the capacity
of every instrument
in the orchestra.”
Musin, of course, imparted physical technique and
how to clearly communicate with the orchestra, but
he went far beyond that, offering theoretical and practical
ways on how “to make the orchestra believe in
their own capabilities,” says Nachev. “He wasn’t only
my conducting teacher — he was my second father.”
With his teacher’s wisdom, Nachev saw clearly that
his role was not perfunctory at all in nature. “You have
to be a psychologist,” he says. “Our work is not with
instruments — we are working with people who are
playing instruments. Your only desire is to see in their
eyes that your behaviour on the podium is a source of
inspiration for them, making them eager to give their
very, very best on stage.”

“I found my place,” Nachev says about joining Shen
Yun Symphony Orchestra, part of the New Yorkbased
dance troupe that’s inspired millions while restoring
5,000 years of traditional Chinese culture. “Of
course, I had the opportunity to lead one of the European
orchestras, but I wanted to prove myself in a
completely different situation. When I arrived in the
United States, not many people knew about me, so I
had to start from scratch and wait for many years for
this opportunity.”
Shen Yun’s mission to preserve traditional Chinese
culture touched Nachev personally. During the 1960s,
“it was not only traditional Chinese culture that was
almost completely destroyed,” he says. “But also many
of my favourite classical Western composers, poets,
novelists and painters were destroyed — literally,
their works were destroyed. I call this a crime against
humanity. The world’s multi-century artistic heritage,
destroyed in just a few short years.”
Not only would Shen Yun preserve past forms of
music and art, but it was crafting an entirely new
sound altogether, as the first orchestra to blend classical
Eastern and Western instruments, a balancing act
that’s always being perfected.
“We know that music is an international language,”
Nachev says. “I’ve had to develop my musical intuition
for many, many years, working with different styles,
with different pieces by different composers from different
countries who lived in different centuries.”
Shen Yun’s original musical pieces are based on ancient
Chinese melodies and then developed into new
pieces of classical Western music. To harmonize the
rainbow of sounds, Nachev immersed himself in Chinese
folk music to better understand the capacity of
signature Chinese instruments like the erhu, pipa and
suona. “Once the door of your consciousness is open,
you can easily find the right tempo, articulation and
phrasing,” he says.

為 我 們 正 在 復 興 中
國 傳 統 文 化 ( 包 括
音 樂 ) 而 驕 傲 。 在 上
世 紀 六 十 年 代 中 國
文 革 時 期 , 不 僅 中
國 傳 統 文 化 幾 乎 被
摧 毀 殆 盡 。 在 西 方 ,
我 最 欣 賞 的 西 方 古
典 的 作 曲 家 、 詩 人 、
小 說 家 和 畫 家 等 也
都 ( 在 現 代 藝 術 的
衝 擊 下 ) 遭 到 了 破
壞 。 這 是 對 人 類 的
犯 罪 , 短 短 幾 年 中 , 全 世 界 幾 百 上 千 年 積 存 下 的 藝 術 遺 產
都 消 失 了 。」
在 2016 年 神 韻 交 響 樂 音 樂 會 巡 演 開 始 之 際 , 納 切 夫 先
生 衷 心 希 望 能 通 過 今 年 的 演 出 讓 更 多 觀 眾 感 受 到 正 統 古 典
藝 術 與 文 化 的 美 好 。「 對 於 我 來 說 , 音 樂 會 演 奏 的 每 首 作 品
都 融 入 了 生 動 的 回 憶 , 每 一 首 都 貼 近 我 的 心 靈 。 有 些 曲 目 我
們 在 神 韻 晚 會 全 球 巡 演 時 曾 和 舞 蹈 演 員 們 一 起 展 現 給 了 全
世 界 的 觀 眾 , 去 年 就 演 出 過 115 場 。 它 們 對 我 來 說 再 熟 悉 不
過 , 而 我 會 將 每 一 次 正 在 指 揮 的 那 首 曲 子 , 都 當 成 我 最 愛
的 作 品 。」

The difficulty and challenge of synthesizing the
sounds from such different cultures brings a unique
joy. “It’s like a secret code inside the musical text that
we bring out to the audience,” he says. “It’s not necessary
for them to understand the secret code, but the
effect and the resonance is there.”
In Tune
Nachev attributes Shen Yun’s unique sound to more
than the music’s masterful arrangement. For him, he
says, Shen Yun “is not only professional development,
but the orchestra is in deep harmony with my soul
and what I feel about the world.”
Nachev and the other members of the orchestra
practice a mind-body cultivation system called Falun
Dafa. Meditating together daily, the conductor says
allows “a different level of communication. This spiritual
exchange and communication between us is
something transcendental, beyond words.”
To better explain this intangible interplay, he
says, “Two days ago, we rehearsed a piece for three
erhu solos accompanied by the symphony orchestra.
During the process, without words, just
watching the eyes of the three soloists, I already
knew what they needed — what kind of tempo,
what kind of support, and how we could develop
the phrase together. My feeling was that they also
implicitly understood. When I desired to start the
phrase from one point and bring it to the arrival
point, they were completely with me — without
one word between us.”
With such graceful precision, Nachev believes this
metaphysical connection forges a new realm of perceptible
pleasure. “We want every single detail inside
the score to be so clear and articulate that we bring
a different spectrum of colours behind the melody.
We’re working in many dimensions. If you take a look
at the conductor’s score, not only vertically — like
harmony, balance, orchestration — but also horizontally,
we are using every single way to make the music
more impressive, and to create a really serious impact
for our audience.”

前 家 名 叫 「 食 養 山 房 」 的 餐 廳 用 餐 的 經 歷 。「 餐
廳 的 屋 舍 與 周 圍 的 山 野 完 全 融 為 一 體 , 寧 靜 的 像 是
一 個 修 行 的 地 方 。 菜 品 吃 到 嘴 裏 是 道 地 的 中 餐 味 道 ,
可 又 有 西 餐 的 形 制 。」 聽 了 友 人 繪 聲 繪 色 的 描 述 , 我
們 不 禁 滿 懷 好 奇 , 這 「 食 養 山 房 」 究 竟 是 怎 樣 一 家 餐
廳 呢 ?
終 於 聯 繫 上 了 「 食 養 山 房 」 的 主 人 林 炳 輝 先 生 ,
我 們 首 先 問 起 他 為 甚 麼 要 給 餐 廳 命 名 為 「 山 房 」。「
也 沒 甚 麼 特 別 的 理 念 ,『 山 房 』 從 前 指 的 是 古 時 高 士
的 山 居 住 所 , 這 名 字 應 該 也 是 對 那 樣 生 活 的 一 種 嚮
往 。」 林 先 生 的 回 答 自 然 、 平 和 , 宛 如 一 位 歸 隱 山 林
的 出 世 之 人 。
曾 經 是 一 位 建 築 設 計 師 的 林 先 生 在 不 惑 之 年 突
然 有 了 「 卸 甲 歸 田 」 的 想 法 , 於 是 拋 下 了 半 生 的 事 業
和 成 就 , 真 的 在 台 北 附 近 的 新 店 尋 了 一 處 山 林 住 了 下
來 。 每 天 就 是 沏 茶 讀 書 、 修 身 養 性 , 靜 觀 天 外 雲 卷 雲
舒 , 日 子 倒 也 逍 遙 自 在 。 偶 爾 有 友 人 來 訪 , 因 為 位 置
偏 僻 , 林 先 生 只 能 自 己 下 廚 做 幾 道 私 房 菜 招 待 , 誰
知 竟 大 獲 好 評 。 轉 眼 間 一 傳 十 、 十 傳 百 , 越 來 越 多 的
人 打 著 「 朋 友 介 紹 」 的 名 號 跑 來 一 飽 口 福 。 就 這 樣 「
家 」 一 點 點 地 變 成 了 「 餐 廳 」, 後 來 成 了 當 地 的 一 道
盛 景 。
如 今 , 經 過 近 二 十 年 的 經 營 和 兩 次 搬 遷 ,「 食
養 山 房 」 在 台 北 東 北 方 的 汐 止 安 頓 下 來 。 規 模 自 然
比 過 去 大 了 許 多 , 林 先 生 也 從 「 孤 家 寡 人 」 變 成 了 數
十 位 員 工 的 老 闆 , 而 唯 一 不 變 的 是 「 食 養 山 房 」 那 份
In the Xizhi District of Northern Taiwan, where
GPS manufacturer Garmin is headquartered,
ironically, I’m lost.
Or perhaps just off track for a moment. I’ve
been told by other travellers that my destination
— Shi-Yang Culture Restaurant in the Keelung
River Valley between Taipei City and Keelung is
a genuine pilgrimage. Not easy to get to, but an
authentic food experience worth the trek.
There’s quite a narrative to this restaurant. Over
its 20-year history, it has moved from mountain to
mountain, from its original Xindian City location,
to a perch high on Yangming Mountain. Then two
years ago, it relocated again to its current home
in the wild countryside on the outskirts of Yangmingshan
National Park. After nearly an hour, the
concrete city of Taipei feels a world away, the rural
trail following a rhythmic series of switchbacks,
slowly climbing Xiwan Road until at last reaching
the restaurant’s laneway.
The owner, Lin Pin-Hui, a former architect and
devout Buddhist, traded a successful city career
to pursue a more contemplative life in the mountains.
Initially, he spent his days reading, drinking
tea, meditating and discussing spirituality with
friends, who came to equate his home with a retreat
centre. As one cannot live on tea alone, Pin-Hui
Food for the Soul
When an architect trades city life for a home in the remote hills of Northern Taiwan,
his finely balanced dishes attract an unexpected following.

寫 照 , 據 說 旺 季 時 , 預 訂 需 要 提 前 一 至 二 個 月 。
然 而 , 儘 管 生 意 如 此 紅 火 , 林 先 生 也 沒 以 大 廚
自 居 , 他 強 調 自 己 不 是 專 業 的 廚 師 , 當 初 開 始

found it necessary to feed his guests — ultimately
nourishing both mind and stomach with dishes he
creatively assembled using locally-sourced ingredients
— many grown and harvested right on the
property. Coming from a clear mind as he cooked,
his meals were not only delicious, but also beautiful.
His reputation grew, and with each season, he
would set more places
at his table.
After two decades of
welcoming an international
following of
foodies, day-trippers,
dignitaries and world
travellers — who now
reserve their place
at least two months
ahead, it’s uncanny
that Pin-Hui humbly
professes he’s not a
chef.
“I’m not running a restaurant. I just share my lifestyle
with others,” says Pin-Hui as we cross a small
bridge and approach the two-storey villa nestled
further afoot in the forest. “I’m not good at using
knives, and I don’t stir-fry. In the eyes of an experienced
chef, one would wonder how my dishes can
be regarded as cuisine.”

do yoga or spa — a place void of ostentatious ornaments
and decorations, colours earthy, furniture simple
and natural, and a peaceful ambiance to reflect,
relax and ponder life over a cup of oolong tea. I don’t
practice Buddhism, yet I find immediate comfort in
this minimalistic aesthetic, inspiring my own journey
to improve my life,
to remove distractions,
be mindful and build
better life habits.

“I don’t let guests order
dishes because I want them to experience the
flavourful and visual rhythm represented in what I
decide in that moment to prepare,” says Pin-Hui,
who changes the 10-course menu constantly. “Besides,
it gives them unexpected surprises!”

to converse and practise mindful eating
— appreciating the presentation, colours, aromas,
and chewing slowly to taste attentively, whether
savouring a dish of pineapple juice with a splash of

Fast food is a foreign language here, as dinner
slowly transpires over three hours. The creative
cuisine is a reinterpretation of traditional food,
taking inspiration from Japan and mainland
China, yet prepared with Western cooking
techniques.
“Our dishes are like Eastern people dressed in a
suit,” says Pin-Hui. “Each ingredient is essentially
Eastern, yet we adapt Western cooking methods
to maintain the original tastes of individual ingredients
and add our homemade sauces. The combination
of sauces and ingredients and the order

Plated simply, yet with the fine proportion
and composition of a skilled architect, in minimalism
there is space to experience the true
essence of each ingredient — a realization that
came to Pin-Hui when he became a vegetarian.
He began to eat less food, but better quality
and more flavourful.
Service is attentive; waiters clearing the table
completely before the next dish is served,
creating an unhurried and novel epicurean experience.
Admittedly, I often eat on the run,
thinking of food simply in terms of calories,
nutrients and basic sustenance. It’s a challenge
to maintain a meditative quality of mind
throughout a meal, yet at this moment the
smooth silky steamed eggs have my full attention,
infused with the aroma of fried scallops.
Soon that empty plate is whisked from the

做 提 點 。 但 是 從 醬 料 調 配 到 醬 料 與 各 個 食 材 間 的 相 互 搭

In succession, there are two more vegetarian
dishes: fried sticky-rice cake stuffed with mullet
roe, followed by asparagus and mushrooms, and
finally the star attraction — lotus chicken stew,
served intentionally last for its symbolism of spiritual
enlightenment. Life’s seasons from bud to
blossom are represented in this dish, highlighted
when a dried lotus bud is placed in the warm
pottery urn and slowly opens to reveal its hidden
beauty, like artistic time-lapse photography. The
floral fragrance simultaneously blends with the
soup, creating harmonious flavour that has become
a patron favourite.
Pin-Hui plans to keep refining his vision toward
a cultural and culinary nirvana that lives in harmony
with the surrounding mountains and forests. His
goals may be lofty, but they’re filled with wisdom
— healthy nourishment for the body and most
sincerely, a place where travellers like me can find
food for the soul.

He picks up an object — different sized and
shaped rectangular spaces, connected by
their sides, hinting at what could become his next
award-winning piece of furniture.
“This is something that I’m working on right
now that has zero function,” says acclaimed Israeli
artist-designer Ron Gilad. “Many times it stops
there and it’s a sculpture that’s going to be shown
in an art gallery. Sometimes it has potential and
evolves into a function.”
Gilad’s intuitive, formless approach has taken
substantial form, however, as his works grace the
permanent collections of the Metropolitan Museum
of Art, the Museum of Arts and Design in
New York and the Tel Aviv Museum of Art. “I’m
juggling between the art world and the design
world,” he says.
The ability to balance his own artistic quest with
a commercial one has led to a fruitful partnership
with Italian luxury furniture maker Molteni&C
Dada, where he recently hosted its launch of a
new showroom in Vancouver’s premier European
furniture store Livingspace.
“I’m trying to develop my own language and
to write my own story while also respecting the
partner that I work with,” he says. His Grado°
Collection featured at Livingspace embodies his
beautifully simple yet elegantly unique design
style, a reinvention of common tables, containers
and shelves.
Gilad’s disarming, raw honesty (which is also
quite amusing) reflects a personal integrity that
surely impacts his art. For his widely embraced
Grado° Collection, he says, “I don’t see myself
having the talent to use colours in a very elaborate
way — that’s why I used primary colours. I’m not
trying to pretend to do something that I cannot.”
His inborn authenticity blended with personal
experiences and tastes of other cultures seem to be
another partnership working in his favour. “Japanese
culture is something that always strikes me — appreciating
the spirituality in such small detail or perfection
of movement.”
With his mastery of minimalism, the Asian
proverb comes to mind — “A simple way is most
profound.” Gilad’s designs say the same.

When a French businessman asked Jennifer
Carter, CEO and president of Hermès
Canada, if she’d consider donating her handbag
to his museum, she gave him a definitive,
“No.” But when he enquired if he could take
a look inside, she graciously conceded. He was
not just any businessman, he was Jean-Louis
Dumas, the chairman and fifth-generation of
the Hermès family, and hers was no ordinary
handbag — it was a rare black crocodile Kelly
originally owned by her mother.
“In 1963 my father was heading to Paris
on business and my mother on a whim asked
him to get her one of those Kelly bags,” reminisces
Carter.
As though it were yesterday, Carter recalls
her mother’s expression as her father returned
and she opened the iconic orange box. “My
mother almost fell off her chair!”
Fast-forward a couple decades and on Carter’s
33rd birthday, and on the eve of embarking
on a new career at Hermès, her mother
gave her that Kelly. Today the treasured heirloom
beautifully illustrates Hermès’ tradition
of “spirit-infused craftsmanship.”
Amidst keys, coins and perhaps a stray
mint or two, Dumas found exactly what he
was searching for inside that Kelly — a subtle
signature mark.
Dumas led Carter through the building
and upstairs to the atelier where the leather
craftspeople were hard at work.
“I was then introduced to the gentleman
who had made my mother’s bag many years
ago,” says Carter. “His signature stamp was
there inside my bag, and as fate would have
it, he was retiring the next week and his son
would be taking over for him.”

The Kelly bag, like all Hermès’ leather goods,
is created by highly skilled craftspeople. A single
artisan laboriously works on one handbag at
a time — each Birkin, Kelly or Constance taking
about 14 to 16 hours to create employing the
same Old World techniques and tools that built
the maison’s reputation since 1837 including
the traditional two-needle saddle-stitch using
linen thread coated in beeswax.
Hermès at Work, a travelling exhibition that
lands in Vancouver September 21–25, gives
consumers a rare opportunity to unbridle their
curiosities and get up close and personal with
10 of the French maison’s artisans as they
demonstrate their daily routines in gem-setting,
tailoring, silkscreening, watchmaking,
porcelain hand-painting and of course, saddle
and handbag making.
The artisans will be stepping away from their
workshops in France and trading their intimate
surroundings for a mountain and Vancouver
harbour backdrop at Jack Poole Plaza, before the
travelling exhibit moves on to visit 18 countries.
“We felt this event would unlock the poetic
and unique craftsmanship that are the essence of
the house,” says Carter, who anticipates the free
event will attract art students, those with a personal
connection to the brand, and others who
may have never set foot in an Hermès boutique.
“To hear how things are made is one thing,
but to see and experience the screening process
of an Hermès scarf is amazing. It’s about
craft, it’s about storytelling, it’s about poetry.
There’s always a story behind each object —
it’s a very moving brand.”
At a time when fashion is increasingly
mass-manufactured, Carter’s own endearing
tale demonstrates the real value and interest in
handmade luxury products made with authenticity.
An exhibition of this calibre clearly plays
to Hermès strengths.
Hermès at Work is fully open to the public
from 11 a.m. to 7 p.m., and sheltered in a
custom enclosure at Jack Poole Plaza adjacent
to the Vancouver Convention Centre at 1055
Canada Place.

for the 12th year of western
North America’s biggest design
fair — Interior Design Show
Vancouver (IDS Vancouver) — boasting
over 250 exhibits of products and services. Slightly
rebranded (from IDS West) to honour the green,
innovative city’s heritage, IDS Vancouver celebrates
the West Coast’s persona and design philosophy, embracing
a connection to nature and lifestyle-inspiring
beauty, inside and out.
To meet Vancouver’s demand for the world’s best
design and craftsmanship, this year’s fair has attracted
international visionaries sure to get your creative juices
flowing. The Trade Day keynote speaker is the legendary
industrial designer Tom Dixon, whose iconic
furniture, accessories and lighting now reside in the
permanent collections of the Victoria and Albert
Museum and the Museum of Modern Art. Known
for reflective surfaces, seemingly molten metallics,
sleek wood and luxurious upholstery expressing
both function and form, Dixon’s designs won’t be
out of reach, as a pop-up with Inform Interiors will
let patrons buy them on impulse.
Dixon will also be tantalizing the patrons’ design (and
literal) tastebuds with his elemental Fire Kitchen,
a mega hit from Milan Design Week. Smoked and
seared cuisine will be passed around while guests are
enchanted by his red-hot design, featuring Caesarstone
basalt surfaces with touches of gold and copper.
High-end furniture showroom Switzer Cult Creative
from the Armory District will debut collections that
also return to the most basic elements — creativity
and craft. Curated by award-winning designer Alda
Pereira, the Zanat collection embodies beautiful
labour-intensive handicraft in solid European hardwoods,
as well as a mission to preserve such dying
arts. Zanat cofounder Orhan Niksic says that both
the Unna chair and Tara shelves (which you’ll find at
the fair) “were named after Bosnian rivers, for their
fluid, elegant and clear forms. The fluid soft lines
communicate comfort and softness.”
Of course, IDS Vancouver wouldn’t be complete
without Canada’s best. The 100-percent-Canadian
custom lighting and metalwork manufacturer Karice
will be sparking interest with its Electron Wall Sconce,
which won silver at the 2016 A’ Design awards in Italy
(beating 56,000 other entries). Karice’s project manager
and designer Jordan Dery says, “We also have a
very special piece that is going to blow everyone out of
the water!” From coast to coast, continent to continent,
this year’s IDS Vancouver already sounds historic.

Anticipation is one of the pleasures of visiting
Lisa and Robert Bailey’s waterfront home
near the Canadian border in Washington State.
Through antique gates, the private driveway
winds its way through 66 acres of park-like
property alongside a pond stocked with rainbow
trout, past an orchard where Asian pears ripen in
the summer sun. Stone maidens inspired by the
16th-century Italian painter Giuseppe Arcimboldo
suggest that this peaceful path, perfumed
with lavender, is leading to something magnificent.
Heralded by a tiered Italian fountain, a baronial
estate of ambitious proportions is before us,
amplified by a backdrop of the Georgia Strait.
Faced in granite and limestone, the almost
12,000-square-foot home exudes the strength
of an English Tudor, embellished with copper
downspouts and an English knot garden imparting
rare beauty.
“My inspiration came from Versailles and the
Catherine Palace near St. Petersburg,” says Lisa
Bailey, a self-taught designer with a penchant
for touring 17th-century European castles.
Even the Vatican in Rome was a catalyst to igniting
her creative spirit, giving her perspective
as she designed her Renaissance-style garden
with a labyrinth as its crucial element. Formal
in design with blocks of geometric patterns,
Bailey strategically planted perennials for an
all-season display of colour.

“As I tour castles, I take mental notes
and copy them in my own house,”
she says, moving indoors between the
Corinthian columns. Decorative parquet
flooring in a herringbone pattern
echoes that found in the entrance to the
Palace of Versailles, suggesting we’re in
the company of kings and queens.
The Renaissance-themed interiors
imbue a European grace, furnished
with curated antiques that once lived
in Italian castles or formal homes of
French nobility. Getting these relics
into place was no easy feat. It took
a crane and six workers to lift the
200-year-old Carrara fireplace into the
upstairs guestroom, where its intricate

The owner’s vision for bespoke, fitted joinery
came to life thanks to Lyle Dueck of Westwerk
Built-Interiors in Vancouver. From the impressive
chef ’s kitchen, made of American cherry, to
the solid crotch and burled mahogany that line
the walls of the home theatre, exotic wood was
artistically purposed overseas, then shipped to
Canada and assembled onsite by a local carpenter.
Most striking in the home is a set of elaborately
hand-carved caryatids (sculpted ladies
that serve as an architectural support), reclaimed

the Titanic, and now framing the entrance to the
billiards room.
“Every piece she has in her home is a piece of history,”
says Bianca Fusco Zanatta, one of Bailey’s dear friends.
“The home was built around these antiques so that when
you’re in the basement, you actually feel like you’re in a
ship — the height of the ceilings, the lustrous walnut
carvings and Italian leather all adding to the grandeur.”
The ladies met for the first time on a plane to Palm
Springs — two strangers seated next to each other, leaving
as lifelong friends after discovering a mutual affinity for
the patina of Old World decor. As Bailey began the adventure
of building her first home, Fusco Zanatta, a seasoned
home designer, joined in Bailey’s excitement at discovering
things like rare French silk to be sewn into curtains
and charming 17th-century beds with Wedgwood cameos
echoed in Rococo-style lighting for an upstairs bedroom.
For over a decade, guests and family have been swept
away by the air of a bygone century. The estate has been
a fully immersive experience, a place where friends are
well taken care of, dreaming of the time they will return.

As we walk up the mirrored staircase where Coco
Chanel once sat to observe her own shows, here, at
Rue Cambon, Paris, we’re about to get as close to Mademoiselle
Coco as possible, entering her secluded world.
With a flagship Chanel boutique newly opened
in Vancouver, evoking the legendary residence, we had
the privilege of seeing where it all began. As the door to
the apartment opens, the beauty is almost overwhelming.
Exquisite objects are everywhere: Chinese screens, a
legacy of Coco’s partner, Arthur “Boy” Capel; the crystal
chandelier; and an amazing collection of books, to
name a few. There is a hint of the eclectic, too — albeit
in organized symmetry. The couturiere, we’re told, was
highly superstitious, surrounding herself with favoured
elements: stars; lions, for her Leo sign; wheat. All found a
place in her home and within her collections.
Chanel mythic symbols inspire to this day. At the
brand’s ateliers, we see diamond camelia stalks woven into
precious metals, and the new Monsieur de CHANEL
watch. Both are part of the House’s latest exceptionally

It may not quite rival a trip to Paris, but setting foot in Vancouver’s
newly re-opened flagship Chanel boutique is a treat all on
its own. Beyond the lacquered screens embossed with gold camellias,
the 470-square-metre space filled with richly diverse styles,

For thousands of years, the moon’s mystical nature has captivated
our spirits — serenaded in art and poetry, a symbol
of romance and a certain yearning for the unknown. A constant
presence in time, the lunar cycle has naturally found a place in
fine horlogerie. Today, despite the claim that a moon-phase display
has little day-to-day practicality, the world’s best watchmakers
continue to spare no effort designing this function into their
most eloquent creations. And upon a closer look, the watch and
our nearest celestial body are more closely connected than you
may think.
Its continuous motion first recorded by the lunar calendars of
ancient China, the moon can be said to be man’s earliest timepiece.
Locked in eternal rotation, the sun, the moon, and the Earth
mirror the complex movement of gears at the heart of a watch.
Contrasted against the cool metal dial, the moon’s delicate silhouette
brings romantic softness to a modern sleek form. But
aesthetics aside, the moon-phase indicator is a testament to a
watchmaker’s time-honed expertise. The lunar cycle is not a neat
and tidy number — it’s 28 days, 12 hours, 44 minutes and 2.9 seconds
long. Its precise yet irregular nature is a craftsman’s technological
challenge, one that world-class houses such as Vacheron
Constantin and Jaeger-LeCoultre have met spectacularly, creating
watches and clocks with moon phases that need no correction
for hundreds, even thousands, of years.
Trends in wearable technologies may wax and wane, but our
love affair with the Earth’s orbiting satellite endures through the
ages — and so does the timeless appeal of these romantic moonphase

Classically simple yet carefully crafted and detailed, the
movement of this new ladies’ moon-phase watch was
developed entirely by Parmigiani, unveiled at SIHH
2016. Glowing against the blue dial, the moon’s copper
light highlights craters formed by the lunar seas, created
through the extremely complex technique of layer tracing.
At the centre blossoms a lotus flower, symbol of femininity,
composed of two mother-of-pearl layers. Date and small
second hand at 6 o’clock, 2 series-coupled barrels, power

cycle’s elegance. The moon reflects the light of the sun as it
rotates clockwise around the earth, and the Classico Luna depicts
its angle of illumination with a moon rotating around
the centre of the timepiece. The colour of the moon phase disc
changes, increasing and decreasing in saturation as the moon
wanes or waxes. The moon phase is set over a corrector at the

showcase a meticulously treated, polished, and decorated stainless
steel case. Now Audemars Piguet makes a return to yellow
gold, with 18k Octangle cases displaying “Grande Tapisserie”
decorated dials — a subtle pattern of three-dimensional squares.
Four equal large apertures show week, month, date, and accurate
moon phase. Craters on the surface of the moon are made visible
through fine layers. Stars scattered on a dark blue background

Biting into a crusty loaf of bread, inhaling
the verdant aroma of wild
herbs, raising a glass of wine with friends
— when it comes to food and life, the
beauty found in the simplest of offerings
cannot be denied. And nowhere are these
simple delights quite as appreciated as in
Italy, a land where food is celebrated for
the exceptional quality it’s rooted in.
Long before the slow-food movement
gained modern momentum, Italians have
been nurturing their unhurried relationship
with food, earth, and nature for
generations. The Mediterranean’s divine
meals are uncomplicated, based on the
best of simply prepared ingredients in
their purest form: grown, nourished, and
procured with utmost care. They are social
occasions: easy, satisfying food shared
over hours of conversation and laughter.
With only two main ingredients, this
minimalistic recipe takes its cue from the
fertile region: be sure to use the freshest
ricotta and the best olive oil you can get
your hands on. The Tuscan olive oil used
here is known for its sharp, distinctive
flavour profile. Pressed from olives grown
in the inland hills of Tuscany and picked
early in maturation, it takes on a characteristic
green hue, with a raw vegetal nose
reminiscent of fennel and a spicy bite that
complements the herbal zing of rosemary.
Drizzled over delicate milky ricotta, it needs
nothing else for a true taste of the dolce vita.
Rosemary on Ricotta
Ingredients:
Ricotta cheese
A pinch of sea salt
A few drops of olive oil from the Tuscany
region
A pinch of pepper
A pinch of fresh rosemary leaves
Place ricotta on a plate and break it up
with a fork. Drizzle a few drops of olive
oil over the ricotta, season with a pinch of
salt and fresh cracked pepper, and scatter
fresh rosemary leaves over the top. Serve
with crusty Italian country bread.

A thousand years after Christ, Edward the Confessor,
then the King of England, was riding his horse in front
a church in Essex when he came across an old man begging
for alms. Having no money in his possession, the
king removed a large ring from his finger and handed it to

A most profitable heist
In the summer of 1671, one of the most
daring robberies in the history of England
took place at the Tower of London. An
Irishman named Colonel Blood disguised
himself as a priest, convinced the Jewel
House keeper to hand over his pistols,
then forced his way into the Jewel House
to steal the Crown Jewels of England.
Blood flattened St. Edward’s Crown with
a mallet to better conceal it, though he
was stopped at the gate and arrested. King
Charles II was so impressed with the audacity
of Blood’s robbery that instead of
executing him, he restored his estates in
Ireland and even made him a member of
the court, complete with a royal pension.
I’ve personally always wanted to be a
royal court member, though I doubt if the
queen would feel the same way as Charles
II if I were to borrow her crown for the day.

The talking tree
King George III, who ruled England from 1760 until 1801, was one
of the country’s longest reigning monarchs. He was also rumored to
have been a bit insane, earning the nickname “Mad King George.”
In one legend, King George was seen speaking to a tree for hours,
thinking it was the King of Prussia. Towards the end of his life, the
king was deemed unfit to rule and lived in seclusion at Windsor
Castle. It’s not clear if the King-of-Prussia tree was on the grounds
of Windsor Castle, and it’s a shame I couldn’t find it on my visit because
it deserves heartfelt thanks for possibly being responsible for giving the
poor tactical advice that eventually led to my American heritage.

first came
across the
sport of polo
at the aptly
named Polo
Bar of the
Rambagh
Palace in Jaipur,
India. I
was unaware
at the time
how close I
was sitting to where the modern sport began. Trophies,
mallets, artwork, and tournament photos adorned the
walls of this lavish, tented cocktail oasis. We asked about
the memorabilia as we sipped gin martinis.
The centrepiece of their collection was a painting depicting
a team of British polo players cowering on their
horses as the Indians opposed them on giant, regal elephants.
The bar man beamed as he described the decisive
victory of the Indian team over the British in the late
1800’s that made it seem as if the Indians were riding elephants
opposing the British on diminutive horses. This
work speaks not only of the long history of the sport,
but also of its popularity and rivalry, which remain today.
Although the sport originated two and a half thousand
years ago in Persia as a cavalry training exercise, the modern
sport was established in nearby Manipur, in the north
of India in the 19th century. British soldiers found the
sport there and spread polo across the world, to England,
Malta, Ireland, Australia, the United States, and most famously,
to the Argentine Pampas, where the soul of the
sport remains. Polo thundered across the globe quickly,
and it was even an Olympic sport until 1936.
The aim of the sport is simple. Mounted players, 3 or
4 to a team, depending on surface, use mallets to propel
a cylindrical ball through the opponent’s goal. There are
multiple periods in a polo match, called chukkas, which
typically last 7 minutes. Play is fast as balls can travel at up
to 110 miles per hour, so ideally, matches should be viewed
from slightly above to observe the pattern of the horses

they’re referred to
as “ponies,” polo horses are
typically full-sized (14.2–
16 hands at the withers),
and players must maintain
a string of mounts for every
match, to change them
frequently during play.
Today the popularity of
polo is on the rise again.
There are outdoor, beach,
and snow tournaments
played all over the world
for eager spectators, sponsored by ultra-luxury brands.
Players have become famous, drawing the younger set into
the game, and the sport itself is once again reminiscent of
its glory days. You can even find polo ponies thundering
across the snow in Tianjin, China, and St. Moritz, Switzerland,
and on the beaches of Miami, Dubai, Croatia,
Singapore, and in September: Chicago.

I recently spoke with Gustavo Bilbao, a preeminent
professional from Buenos Aires, Argentina, who’s
putting on the 2016 Qatar Airways Chicago Beach
Polo Cup this September on North Avenue Beach in
downtown Chicago.
What drew you to polo? What about the sport most
appeals to you?
I was born into a polo family in Buenos Aires Argentina.
My family raises thoroughbred horses and cattle and the
early exposure to horses led me to the sport. The contact
with horses and nature are the most appealing aspects of
polo, also the adrenaline and the camaraderie it creates.
I’ve never seen anything like it in any other sport.
What is it like for a player in the modern game? How
are matches and tournaments put together? Are most
of you full-time players on standing teams?
High-goal polo is where the top professional players
play, and they have standing teams for which they play

The United States once dominated polo. From 1909–
1950, the American teams were the ones to beat in
international and Olympic competitions. During the
world wars, 1,200 players from the U.S. Army played
to improve their horsemanship, and even president
Theodore Roosevelt was known to participate.

tournaments, like the US Gold Cup, the
Queen’s Cup or the Argentine Open in Palermo.
Then you have the mid-goal polo, where I play. As
a mid-goal professional polo player, you are “guns for
hire.” You play for any team that needs a professional
player, and the way these teams are put together is normally
by a patron, an amateur player who wants to play
with the professionals and is willing to afford all the
bills. The professional in mid-goal polo organizes the
team, enrolls them in tournaments, and looks after the
structure — horses, grooms, vets, farriers, transportation,
shirts and all the other logistics — on behalf of
the patron. The mid-goal professional is also in charge
of training the horses, coming up with the team’s
strategy, and also training or teaching the patron.

What drew you to Chicago as a venue for the 2016
Qatar Airways Chicago Beach Polo Cup, and why
beach polo?
At one point, Chicago was the epicentre of polo in
North America, and as young boy in Argentina, I used
to hear all about the epic matches that took place at
Oakbrook — the event the British Royal Family used
to come play here. Sadly, those days are over, and I
have taken it upon myself to put Chicago back on the
world’s polo map where it belongs. My main goal as a
professional player is to make polo a more widespread
sport, bring awareness to people in order to grow it.

During the 1830s in India, anyone with a pony
could join the sport of polo. In modern times, it
is often cost-prohibitive, with prized ponies selling
for between $5,000 and $200,000, with a string
needed to play a typical match.

This painting, The Letter, is a rich and moody
portrait of unrequited love. The letter itself,
often a powerful symbol in Victorian works,
lies torn to pieces at the subject’s feet, suggesting
the bitter end of an affair. A servant looks on,
evidently aware of the drama. Drawn from a reallife
scandal, the painting is a brilliant study in
melancholy and the fleeting nature of love.
