Volume II - Antidotes & Remedies

Welcome to Dr Gimlette.
In this menu we have curated cocktails
with holistic antidotes & remedies in mind,
particularly those which came about during
times of plague.
The Bubonic Plague (A.K.A. The Black Death)
saw to the birth of the plague doctor.
These doctors were hired physicians who would
treat those infected with the plague with little
to no knowledge on what the disease was or how to
treat it. This led to a range of holistic remedies
performed by these “doctors” dressed in long
leather overcoats & beaked masks filled with
herbs, spices, flowers, & other aromatics to
protect from “evil smells” & infection.
Please enjoy our Antidotes & Remedies..

Part I
Fruit Floral Citrus

CLASSIC GIMLET
Tanqueray Gin - House Lime Cordial
Rear-Admiral John Thomas Gimlette is said to have first added
lime cordial to the daily gin tot of the men in the Royal Navy
to help combat the ravages of scurvy on long voyages.
This combination of gin and lime cordial was later adapted
and served as a cocktail now known as the Gimlet.

BATHED IN A BOUQUET
Tanqueray Gin - Rosé Cordial
Rosa Frambrosa Tea - Lime
During the plague, hygiene played a big role in preventing the
spread of the plague. Bathing was strongly recommended, often,
& with a combination of both rosewater & vinegar.
.

SCARLET STAINS
Fords Gin - Antica Formula
Spiced Apple & Rhubarb - Lemon
“The scarlet stains upon the body and especially upon the face
of the victim, were the pest ban which shut him out from aid
and from the sympathy of his fellow-men.”
Masque of the Red Death, Edgar Allen Poe (1850)

POCKETFUL OF POSIE
Ketel One Citroen - Fino Sherry
Blueberry Wine - Lactic Acid
“Ring around a rosie, a pocketful of posie”
The fatalism of this rhyme is brutal: the roses are a euphemism
for deadly rashes, the posies a supposed preventative measure;
the a-tishoos pertain to sneezing symptoms, and the implication
of everyone falling down is, well, death.

ZEALOT’S FLAIL
Pampero Blanco & Anejo - Coconut
Green Tea & Purple Pineapple Soda
Religious zealots called Flagellants believed the plague was an act
of God. These Flagellants would walk through the streets
whipping themselves with flails to atone for sins.

HIPPOCRATIC OATH
Johnnie Walker Black Label - Salers Gentian
Pomme Verte - Yuzu Honey - Lemon
The Hippocratic Oath is an oath of ethics historically
taken by physicians. It is one of the most widely known
Greek medical texts. In its original form, it requires a
new physician to swear, by a number of healing gods,
to uphold specific ethical standards.

TALE OF TWO
Pampero Anejo - Hibiscus Fino
Dry Curacao - Grapefruit & Lime Oleo
The rum ration (also called the tot) was a daily amount
of rum given to sailors on Royal Navy ships. It was
abolished in 1970 after concerns that the intake
of strong alcohol would lead to unsteady hands
when working machinery.

EARLY APPOINTMENT
Brookie’s Dry Gin - Creme De Mure
Boysenberry Jam - Citrus
A riff on a classic gin cocktail the Breakfast Martini, skip the toast,
go for the jam & Imbibe.

TAKE A BREATH
Tanqueray - Amaro Montenegro
Eucalyptus - Chamomile Agave - FIRE !
Sniff gently, sip slowly
Enjoy the breath of fresh air that will soon follow.

DARK DISTANCE
Woodford Reserve Rye - White Cacao
Drambuie - Berry Sherry - Citrus
The Black Death was a plague pandemic which devastated
medieval Europe from 1347 to 1352 CE, killing an estimated
25-30 million people. The disease originated in central Asia and
travelled to the Crimea by Mongol warriors and traders. The plague
then entered Europe via Italy, carried by rats on Genoese
trading ships sailing from the Black Sea.

HELL & HORSEBACK
Ciroc Vodka - Ketel One Citroen - Dry Vermouth
Preserved Lemon - Pepperberry
The Black Death, as its name suggests, was given a personification
for people to help understand what was happening to them.
This was depicted in art as the Grim Reaper, a skeleton
on horseback whose scythe indiscriminately cut down people
in their prime.

Part II
Earth Herb Leaf

THERIAC’S REMEDY
Fords Gin - Amontillado - Dry Curacao
Mandarin - Rocket Leaf - Citrus
Theriac is considered the most popular cure-all multi-ingredient
medicine and has been used for more than two millennia.
It has also been used as one of the most important
anti-epidemic drugs up to the 19th c., treated as an emergency
medicine in case of bubonic plague.

FOUR THIEVES
Herradura Plata & Reposado
Four Thieves Vinegar - Strawberry - Pastis
Four Thieves vinegar, a folkloric elixir thought to protect against
the Black Death. A concoction of vinegar, herbs, & spices were
steeped & rubbed all over the body. The vinegar was used by
thieves to rummage the homes of those who succumbed
to the plague.

SERPENT’S TOUCH
Ketel One Vodka - Mango - White Chocolate
Peach Aperetif - Light Carbonation
Another attempt at a cure was to find and kill a snake, chop it into
pieces, and rub the various parts over swollen buboes.
The snake, a symbol synonymous with Satan, was thought to
draw the disease out of the body as evil would be drawn to evil.

TWENTY-TWENTY
Fords Gin - Pisco
Honey Carrot Cream - Ginger - Egg Whites
Carrots contain vitamin A, or retinol, and this is required for your
body to synthesise rhodopsin, which is the pigment in your eyes
that operates in low-light conditions. If you have a vitamin A
deficiency, you will develop nyctalopia or night blindness.
Eating carrots would correct this and improve your night vision,
but only to the point of a typically healthy person –
it won’t ever let you see in complete darkness.

QUARANTANA
Tanqueray Ten - Herbed Olive Vermouth
Wakame - Dill
The practice of quarantine as we know it, began during the 14th
century. Ships arriving in venice from infected ports were required
to sit at anchor for 40 days before landing. This practice called
quarantine, was derived from the Italian words, quarantana
giorini, which means 40 days.

Part III
Wood Spice Smoke

TRIUMPH OF DEATH
Johnnie Walker Black Label - Fino Sherry
Pine Needle Smoked Mandarin - Bitters
The Renaissance was a cultural movement that occured as a result
of the Back Death. It seeped into every aspect of society such
as art, architecure & philosophy. It was mostly a move into more
secular thought & the birth of science as the reliance on
God & the church weakened. One of the most iconic pieces of
art to come out of this was The Triumph of Death
an oil painting by - Peter Bruegel

SILK ROAD
Talisker 10y
Fenugreek & Pear Caramel - Bitters
The medieval Silk Road brought a wealth of goods, spices, &
new ideas from China and Central Asia to Europe. In 1346,
the trade also likely carried the deadly bubonic plague that
killed as many as half of all Europeans within 7 years.

CURE FOR KINGS
Pure Scott Whiskey - White Cacao
Emerald Peppermint - Tonka Bean
The rich who had access to emeralds would grind down thier
precious stones in a mortar & pestle, mix it with water, then
consume it. The less fortunate would consume arsenic or
mercury, which killed them faster than the plague.

DEATH RATTLE
Lark Symphony No. 1 - Ginger - Tumeric
Toasted Coconut & Pandan - FIRE !
A death rattle is a sound produced when the patient is near-death
and is too weak or hypersomnolent to clear or swallow pharyngeal
secretions; even small volumes of secretions will produce sounds
in the resonant pharyngeal space. The death rattle usually
becomes audible 24 to 48 hours before death.

BY THE GRAVE
Bladnoch Vinaya - Coffee - Cacao
Pear & Hazelnut
A plague pit is the informal term used to refer to mass graves
where victims of the Black Death were buried. The term is most
often used to describe pits located in Great Britain, but can be
applied to any place where bubonic plague victims were buried.

GOLDEN AMULET
Johnnie Walker Blue Label
Smoked Sherry Honey - Bitters
From the ancient world to the present, people have turned to
powerful words, symbols and images as magical shields against
bad luck, evil spirits, debilitating illness and sudden death.
In medieval and early modern Europe, textual amulets on
parchment and paper were often inserted in sacks or suspension
capsules that could be worn around the neck and over the heart.
