Una mappa indica luoghi che possono<br />
assumere valori diversi in base a ciò che<br />
si ricerca. La <strong>Strada</strong> <strong>dei</strong> vini Etrusco<br />
Romana in Provincia di Terni offre<br />
indicazioni per itinerari insoliti che<br />
vanno oltre la notorietà turistica.<br />
L’individuazione di due tematiche<br />
portanti, i luoghi insoliti e le vie d’acqua possono<br />
sembrare distanti dal turismo del vino ma con una più<br />
attenta lettura si scoprono le profonde connessioni. La<br />
natura del territorio, le sedimentazioni della storia, le<br />
tradizioni culturali, i saperi trasmessi tra generazioni,<br />
hanno dato forma e sostanza alla autenticità di queste<br />
terre.<br />
Queste vie sono tracciate anche grazie all’attività di una<br />
fitta rete di operatori: aziende vitivinicole con etichette<br />
tutte da gustare, produttori di olio pregiato, di salumi<br />
<strong>dei</strong> mastri norcini e di pane sciapo umbro, artigiani<br />
esperti e creativi, strutture ricettive che offrono il calore<br />
dell’accoglienza, ristoranti dove la solida tradizione si<br />
affianca alla ricercata innovazione.<br />
Ogni angolo del territorio è animato da eventi piccoli e<br />
grandi durante tutto l’anno, antichi e nuovi, momenti<br />
di festa vissuti attivamente da chi abita questi luoghi i<br />
quali invitano il visitatore a condividere l‘intensa<br />
esperienza.<br />
E nell’inebriante vagabondare, prima di riprendere la<br />
strada del ritorno, bisogna accettare il bicchiere della<br />
staffa, ultimo e augurale saluto. “Non metterti in<br />
cammino se la bocca non sa di vino.”<br />
Amap shows places with various values<br />
based on the search criteria. The Roman<br />
Etruscan Wine Road, in the province of<br />
Terni offers indications for unusual<br />
itineraries that go beyond tourist interest.<br />
The identification of two important topics,<br />
the unusual places and the waterways, can<br />
seem far from wine tourism, but by reading more carefully<br />
the connections are discovered. The nature of the territory,<br />
sedimentations of history, cultural traditions, knowledge<br />
handed down through generations, have given shape and<br />
substance to the authenticity of this land. These routes are<br />
traced thanks to the work of the dense network of operators:<br />
wine-growing and wine-producing companies with labels<br />
that must be tasted, producers of high quality oil, salamis<br />
from the master pork-butcheries and Umbrian salt-free<br />
bread, expert creative artisans, reception structures offering a<br />
warm welcome, restaurants where solid tradition is<br />
accompanied by refined innovation.<br />
Every corner of the territory is animated by events around the<br />
year, small and large, old and new, moments of festivities<br />
actively participated by the locals who invite the visitor to<br />
share this intense experience.<br />
And in the inebriating wandering, before returning along the<br />
road home, one must accept ‘one for the road’, the last<br />
goodbye greeting. “Don’t start off on the road if your<br />
mouth doesn’t taste of wine.”

Un avvincente percorso<br />
ai confini dell’alto<br />
Orvietano ci porta in<br />
luoghi dove appare con<br />
forza la continuità della<br />
coltura estensiva della<br />
vite. Fra castelli, borghi<br />
e altipiani aleggiano<br />
presenze di papi, che<br />
qui si rifugiavano<br />
accolti dalle potenti<br />
famiglie, o di madonne<br />
che continuano ad<br />
abitare le proprie<br />
dimore. Le cantine <strong>dei</strong><br />
castelli difendono la<br />
qualità <strong>dei</strong> vini con<br />
temperature costanti e<br />
attenti procedimenti,<br />
come nel Castello della<br />
Sala. Gli abitanti di<br />
queste terre, che ancora<br />
presentano i tratti degli<br />
antichi Etruschi, hanno<br />
saputo sfruttare i terreni<br />
argillosi non solo come<br />
terroir fecondo per i<br />
vini, ma anche con la produzione artigianale di mattoni<br />
essiccati al sole e cotti nelle fornaci di Castel Viscardo,<br />
preziosi per i lavori di restauro <strong>dei</strong> monumenti.<br />
La notte di San Lorenzo a Monterubiaglio le stelle<br />
piovono nei calici pieni di quel vino che ha tenuto a<br />
battesimo wine makers di fama internazionale ed ha<br />
potenziato l’economia rurale con moderne imprese.<br />
La Selva di Meana custodisce nel suo bosco incantato le<br />
aeree ed eleganti architetture liberty di Villa Cahen, che si<br />
schiudono alla vista del visitatore paziente e raffinato. Per<br />

A charming route along<br />
the upper borders of the<br />
Orvieto area takes us to<br />
places where the<br />
continuity of extensive<br />
grapevine cultivation<br />
necessarily appears.<br />
Among castles, hamlets<br />
and tablelands hover over<br />
the presences of popes,<br />
who took refuge here,<br />
welcomed by the powerful<br />
families, or noblewomen<br />
who continue living in<br />
their homes. The castle<br />
cellars defend the quality<br />
of wines with constant<br />
temperatures and careful<br />
procedures, as in the Sala<br />
Castle. The people who<br />
live in these areas, still<br />
bearing features of the<br />
ancient Etruscans, knew<br />
how to make the most of<br />
the clayey soils, not just as<br />
a fertile terroir for wines, but also the artisan production of<br />
bricks dried in the sun and baked in the kilns of Castel<br />
Viscardo, precious for the restoration of monuments.<br />
On San Lorenzo’s night (August 10 th ), in Monterubiaglio the<br />
stars shower into goblets full of the wine that baptised<br />
internationally famous wine makers and developed rural<br />
economy with modern companies. Selva di Meana holds in its<br />
enchanted wood the aerial, elegant liberty architectures of Villa<br />
Cahen that open to the visitor’s view, patient and refined. For<br />
those who love nature trails and a day in the open air among<br />
tables and fireplaces, Villalba is the ideal setting: a little lower<br />
down, where the rows of grapevines once again outline the<br />
countryside, the interesting Allerona IGT quality label wines are<br />

Allerona, Alviano, Baschi,<br />
Castel Giorgio, Castel<br />
Viscardo, Fabro, Ficulle,<br />
Guardea, Montecchio,<br />
Montegabbione, Monteleone<br />
d’Orvieto, Porano e una<br />
parte del viterbese nel Lazio.<br />
E’ tra i più rappresentativi<br />
vini umbri, conosciuto fin<br />
dall’antichità, e copre il 70%<br />
della produzione a D.O.C.<br />
della provincia di Terni. E’<br />
prodotto con le qualifiche<br />
“Orvieto Classico”, con uve<br />
della zona ristretta della<br />
Valle del Paglia, e “Classico<br />
Superiore”, con 12° e tre<br />
mesi di affinamento.<br />
Il disciplinare prevede uve<br />
Trebbiano Toscano<br />
(Procanico) e Grechetto (min.<br />
60%), e altri vitigni a bacca<br />
bianca, non aromatici,<br />
idonei alla coltivazione<br />
(max. 40%). Un’ulteriore<br />
distinzione riguarda le<br />
varianti secco, abboccato e<br />
dolce, tra i quali l’importante<br />
produzione di “vendemmia<br />
tardiva” e “muffato”.<br />
La produzione del Muffato è<br />
stata recentemente<br />
regolamentata dal<br />
disciplinare della D.O.C<br />
Orvieto, unica ad averlo in<br />
Italia, questo vino è definito<br />
anche muffa nobile in quanto<br />
prodotto con uve lasciate<br />
attaccare da botrytis cinerea<br />
sulla pianta e raccolte ad<br />
autunno inoltrato. I risultato è<br />
un vino dolce di colore giallo<br />
oro tendente all’ambra,<br />
odore profumato e<br />
avvolgente che va degustato<br />
con pecorino stagionato e<br />
miele. Oggi nell’Orvieto<br />
predomina la variante secca,<br />
mentre in passato era più<br />
rinomata la versione<br />
abboccata lodata da papi,<br />
principi e pittori, dal colore<br />
giallo paglierino più o meno<br />
intenso, profumi delicati,<br />
fruttati e gradevoli, e sapore<br />
secco con lieve retrogusto<br />
amarognolo. L’abbinamento<br />
giusto è nell’aperitivo ai<br />
primi piatti senza pomodoro,<br />
adatto anche a secondi di<br />
pesce, bollito o arrosto di<br />
carni bianche.<br />
all’aria aperta tra tavoli e caminetti Villalba è l’ambiente<br />
ideale: poco più sotto, dove i filari di vite ritornano a<br />
disegnare il paesaggio, si producono gli interessanti vini<br />
IGT Allerona.<br />
Il dominio della natura prevale su quello dell’uomo, che<br />
tuttavia ne sfrutta i prodotti: a novembre, il pregiato<br />
tartufo bianco e quello nero diventano protagonisti delle<br />
mense arricchite stagionalmente da funghi, asparagi e<br />
frutti di bosco. I terreni rocciosi e le elevate altimetrie<br />
piuttosto che scoraggiare la viticoltura alimentano gli<br />
impianti di vitigni favoriti dal particolare microclima.<br />
Alla Scarzuola la presenza spirituale di San Francesco,<br />
attirato dalla forza di sorella acqua e sorella terra, ha<br />
trovato la nuova interpretazione dell’architetto Buzzi nella<br />
realizzazione della città ideale, visionaria fusione<br />
scenografica di architetture di varie epoche.<br />
La terra madre racchiude ancora nelle grotte e nei vulcani i<br />
suoi primordiali segreti: le Tane del Diavolo, con le calde<br />
acque termali e i vulcani di San Venanzo, con rocce rare<br />
come la venanzite.<br />
Catini, brocche, pignatte di Ficulle sono terrecotte ancora<br />
prodotte per uso quotidiano insieme alla “panata”, forma<br />
tradizionale per la misura del vino nelle cantine.<br />
Inebriati dalla piacevole discesa fra i gironi <strong>dei</strong> colli a<br />
vigneto ci si sente nell’eden del vino, che ha qui le sue<br />
etichette d’eccellenza: i profumati bianchi Orvieto<br />
Classico superiore, secco, abboccato, muffato e il corposo<br />
Rosso Orvietano D.O.C.<br />
Il vero paradiso del vino lo si trova risalendo sull’altipiano<br />
tufaceo di Orvieto, l’antica Oinarea, “la città dove scorre il<br />
vino”, polo magnetico per tanti percorsi religiosi, artistici e<br />
produttivi.<br />

growing area includes the<br />
more hilly areas of Orvieto,<br />
Allerona, Alviano, Baschi,<br />
Castel Giorgio, Castel<br />
Viscardo, Fabro, Ficulle,<br />

d’Orvieto, Porano and a<br />

It is among the most typical<br />
Umbrian wines, known since<br />
ancient times, and covers<br />
70% of the D.O.C.<br />
production in the province of<br />
Terni. It is made with the<br />
“Orvieto Classico”<br />
qualifications, from grapes<br />
of the restricted area of the<br />
Valle del Paglia, and<br />
“Classico Superiore”, with<br />
12° and three months of<br />

Production of “muffato”<br />

also defined a noble mould<br />
since it is made with grapes<br />
left to be attacked by botrytis<br />
cinerea on the vine and<br />
harvested in late autumn.<br />
The result is a sweet wine,<br />
golden yellow tending<br />
towards amber, a perfumed,<br />
enveloping aroma that is to<br />
be tasted with sharp<br />
pecorino cheese and honey.<br />
Today the dry variation is<br />
predominant in the Orvieto<br />
area, whereas in the past the<br />
smooth version praised by<br />
popes, princes and painters<br />
was more famous, its more<br />
or less intense straw-yellow<br />
colour, delicate, fruity and<br />
pleasant aromas, and dry<br />
flavour with a light bitterish<br />
aftertaste. The right match is<br />
with a good aperitif, first<br />
courses without tomatoes,<br />
suitable even for fish<br />
courses, boiled meats or<br />
roast white meats.<br />

Nature prevails over man, who nevertheless takes advantage of<br />
its products: in November the prized white truffle along with the<br />
black truffle have a special place at the table, seasonably enriched<br />
by mushrooms, asparagus and berries. The rocky terrains and<br />
high altitudes feed the grapevines rather than discourage them,<br />
favoured by the special microclimate.<br />
At Scarzuola, the spiritual presence of St. Francis, attracted by<br />
the force of sister water and sister earth, found the new<br />
interpretation of architect Buzzi in creating the ideal city, a<br />
visionary scenographic fusion of architectures from various<br />
epochs. Mother earth still hides her primordial secrets in grottoes<br />
and volcanoes: the Dens of the Devil, with hot springs and San<br />
Venanzo volcanoes, with rare rocks such as “venanzite”.<br />
Ficulle basins, jugs, pots in terracotta still made for daily use<br />
along with the “panata”, a traditional form for measuring wine<br />
in cellars. Intoxicated by the pleasant descent around the circles<br />
of the hills planted with vineyards, you feel like you are in the<br />
Eden of wine, which has its labels of excellence here: the<br />
perfumed white of Orvieto Classico superior, dry, smooth,<br />
“muffato” and the full bodied Rosso Orvietano D.O.C.<br />
The true wine paradise is found by going up to the Orvieto<br />
tufaceous tableland, the ancient Oinarea, “the city where wine<br />
flows”, a magnetic pole for many religious, artistic and<br />
productive routes.<br />
The Etruscans sensed the magic of the grottoes dug in the tuff<br />
and the secrets for pressing, ripening and preserving wine<br />
entrusted to three underground levels, as in the cellars of the San<br />
Giovanni convent, headquarters of the Regional Enotheque, the<br />
only showcase in Umbria of the production of D.O.C.G. ,<br />
D.O.C and I.G.T. wines.<br />
The symbols of vine and grape, constantly present in the<br />
imagination of the artists who worked in this city, unravel like a<br />

pigiatura, la maturazione e la conservazione del vino,<br />
come nelle cantine del Convento di San Giovanni, sede<br />
dell’Enoteca Regionale, unica vetrina in Umbria della<br />
produzione di vini D.O.C.G., D.O.C e I.G.T.<br />
I simboli della vite e dell’uva, presenza costante<br />
nell’immaginario degli artisti che in questa città hanno<br />
operato, si dipanano come un filo negli affreschi, nelle<br />
sculture, negli oggetti di ceramica, fino a ricomporsi nei<br />

Si produce nella stessa area<br />
dell’Orvieto bianco, nel<br />
territorio di San Venanzo<br />
verso la valle del Tevere, in<br />
alcune ristrette aree<br />
dell’Amerino e del Viterbese.<br />
La denominazione “Rosso<br />
Orvietano”o “Orvietano<br />
Rosso” è riservata a diverse<br />
tipologie di vino rosso , con<br />
riferimento ai vitigni primari<br />
da uve: Aleatico, Cabernet<br />
franc, Cabernet Sauvignon,<br />
Canaiolo rosso, Ciliegiolo,<br />
Merlot, Montepulciano, Pinot<br />
Nero e Sangiovese da soli o<br />
congiuntamente per almeno il<br />
70% e inoltre da vitigni<br />
secondari, da soli o nella<br />
misura massima del 30%, di<br />
Barbera, Cesanese comune,<br />
Colorino e Dolcetto.<br />
Invecchiamento: fino a 2-3<br />
anni.<br />
Il disciplinare, nello stabilire<br />
le caratteristiche al consumo<br />
indica per il “Rosso<br />
Orvietano” un colore rosso<br />
rubino vivace intenso, talvolta<br />
con riflessi violacei, profumo<br />
vinoso intenso , talvolta<br />
erbaceo, sapore morbido,<br />
elegante e vellutato.<br />
Questo vino si abbina a<br />
piatti di carne saporiti<br />
arrosto, cacciaggione e<br />
formaggi stagionati e può<br />
essere consumato fino a 4<br />
anni dalla vendemmia.<br />

L’elegante gestualità del fanciullo etrusco, logo della strada<br />
<strong>dei</strong> vini tratto dagli affreschi della tomba Golini,<br />
ripropone la ritualità pagana del convivio in cui il vino<br />
rappresenta l’elemento di coesione sociale e culturale.<br />
Nella scintillante cattedrale è custodita la prova del<br />
mistero del vino che si fa sangue di Cristo, il corporale del<br />
miracolo di Bolsena: qui è l’origine dell’istituzione della<br />
Festa del Corpus Domini, celebrata dai cattolici di tutto il<br />
mondo e ricordata dalla preziosa reliquia portata in<br />
processione il giorno della celebrazione.<br />
Per i pittori rinascimentali il vino ha avuto anche valore di<br />
moneta sonante: Luca Signorelli che nel contratto per gli<br />
affreschi della Cappella di San Brizio in Duomo fece<br />
includere “che gli desse di quel vino orvietano quanto ne<br />
volesse”.<br />
LE CURIOSE GASTRONOMIE<br />
DELL’ORVIETANO<br />
La semplicità della cucina che ripete gesti antichi è una<br />
eredità da custodire, generata da pochi e fondamentali<br />
prodotti. Cibi poveri ma ricchi di sapori fatti talvolta<br />
anche con ingredienti di scarto ma preparati con abilità e<br />
fantasia. Un susseguirsi di originali forme e gusti: le<br />
lumachelle, usate dai contadini per la colazione, le<br />
ciambelline con l’anice lessate alla maniera medioevale, il<br />
baffo, guanciale di maiale cotto con salvia e aceto, gli<br />
umbrichelli all’arrabbiata rossi di pomodoro e<br />
peperoncino, il pecorino cenerieno, la gallina ‘ubriaca che<br />
recupera la sua tenerezza con il vino, la sandra in<br />
porchetta, pesce ripieno di finocchio selvatico e tartufo, la<br />
bistecca del curato ricoperta di una salsa di erbe segreta, le<br />
frittelle dolci di riso per la festa di San Giuseppe e, a<br />
Pasqua la Pucciarella, per il divertimento <strong>dei</strong> bambini, i<br />
maccheroni dolci per la vigilia di Natale e l’immancabile<br />
ciambellone con il vino. La tradizionale norcineria<br />
trasformata dalla fantasia diventa quasi arte e allora la<br />
Sella di San Venanzo, il salame accannato, le mazzafegate<br />
dolci e la porchetta. Un riconoscimento IGP per la carne<br />
chianina, il gigante bianco dell’Appennino, dalle carni<br />
magre e saporite e di grande pregio.<br />
Insomma un’intrigante cercare tra ristoranti, norcinerie,<br />
panetterie e pasticcerie.

Here is the origin of the institution of the Corpus Domini feast<br />
day, celebrated by Catholics all over the world and remembered<br />
by the precious relic taken in procession on the day of celebration.<br />

It is produced in the same<br />
area as Orvieto Bianco, in<br />
the San Venanzo territory<br />
towards the Tiber valley, in<br />
restricted Amerino and<br />
Viterbo areas.<br />

This wine is a good<br />
complement to tasty roasts,<br />
game and mature cheeses<br />
and can be drunk up to 4<br />

GASTRONOMIC CURIOSITIES<br />
OF THE ORVIETO AREA<br />
The simplicity of cuisine that repeats age-old gestures is an<br />
inheritance to be treasured, generated by products that are few<br />
and fundamental. Poor foods but rich in flavours, at times even<br />
with leftover ingredients prepared with skill and imagination.<br />
Original shapes and tastes follow each other: the “lumachelle”<br />
(spiral shaped bun with cheese, bacon and pepper) used by<br />
farmers for breakfast; the anise pretzels boiled as was done in the<br />
middle ages; the “baffo” lard from the pig’s cheek, cooked with<br />
sage and vinegar; umbrichelli pasta “all’arrabbiata”, tomato and<br />
chili peppers; pecorino cenerino cheese; the ”drunken hen” that<br />
becomes tender when cooked in wine; the ”sandra” (zander) in<br />
roast suckling pig, fish stuffed with wild fennel and truffles; the<br />
curate’s steak covered with a secret sauce of herbs; the sweet rice<br />
cakes fried for the St. Joseph’s feast day, and at Easter the<br />
“Pucciarella”, so children can have fun; sweet macaroni for<br />
Christmas Eve, and the usual ring cake with wine. The<br />
traditional pork processing that is imaginatively transformed<br />
becomes almost art, and then the ”Sella di San Venanzo”, the<br />
”accannato” salami, the sweet liver sausages and roast suckling<br />
pig. An IGP recognition for Chianina meat, the white Appenine<br />
giant, with tasty lean meat, highly prized.<br />
So it is intriguing to search among restaurants, pork butchers,<br />
bakeries and pastry shops.<br />

leggeri e piatti a base di<br />
uova. Il Rosso si accompagna<br />
a salumi freschi, primi piatti<br />
con sughi di pomodoro, carni<br />
bianche grigliate o arrosto,<br />
formaggi poco stagionati.<br />
A breve un nuovo disciplinare<br />
cambierà le varie tipologie <strong>dei</strong><br />

Le pietre di Narni, fanno da fondale alla ricostruzione di<br />
un medioevo che rivive nella Festa dell’Anello , quando<br />
le cantine diventano taverne e ci si passa il bicchiere<br />
colmo di vino al ritmo di “Filumé!Filumè! voglio stare<br />
insieme a te ...” in una gara di gioiosa resistenza al<br />
sopraggiungere dell’ebbrezza.<br />
Alla base della Loggia <strong>dei</strong> Priori le forme di una figura<br />
umana impresse sulla pietra testimoniano la punizione<br />
della gogna sulla pubblica piazza.<br />
Insolite tracce della presenza umana le ritroviamo nei<br />
graffiti <strong>dei</strong> sotterranei di S. Domenico, prigione del<br />
tribunale dell’inquisizione, o nelle grotte eremitiche nei<br />
pressi dell’ Abbazia di San Cassiano.<br />
I canti gregoriani, miniati nei preziosi corali di<br />
Stroncone, echeggiano nei conventi nascosti in queste<br />
terre di confine, in cui si può ritrovare se stessi nello<br />
spirito francescano del remoto Speco di Sant’Urbano.<br />
Le montagne evocano tempi di frequentazione di luoghi<br />
da sempre considerati sacri: sulla montagna di S.Erasmo<br />
Eolo ha trovato la propria dimora nelle grotte meta di<br />
appassionati speleologi.<br />
L’oblio del tempo non è riuscito a far dimenticare<br />
Carsulae: camminando sul basolato romano sembra<br />
ancora di sentire il brusio della vita della città ricordata<br />
da Plinio per la particolare abilità degli abitanti nella<br />
potatura della vite.<br />

un’insolita tela raffigura il mistero della trasformazione

The mountains evoke the days when places always considered<br />
holy were visited: on the St. Erasmus mountain, Aeolus found<br />
his home in the caves, the destination of enthusiastic<br />
speleologists.<br />
The oblivion of time didn’t succeed in letting Carsulae be<br />
forgotten: walking on the large Roman paving stones we still<br />
seem to hear the buzzing of city life remembered by Plinio for<br />
the particular ability of the inhabitants in pruning grapevines.<br />
In the silence of the Clarissa Convent in Montecastrilli, an<br />
unusual painting depicts the mystery of the transformation of<br />
Christ’s blood into wine, while not far away, in Dunarobba,<br />
nature has kept in her clay womb the logs of the three<br />
thousand year old Fossil Forest.<br />
In the shelter of vigorous chestnut groves, the village of Santa<br />
Restituta offers a living example of the medieval communities,<br />

Dunarobba, la natura ha mantenuto nel suo grembo di<br />
argilla i tronchi della trimillenaria Foresta Fossile.<br />
Al riparo <strong>dei</strong> vigorosi castagneti, il borgo di Santa<br />
Restituta offre un esempio ancora vivo delle<br />
comunanze medioevali, proprietà collettiva di genti che<br />
con continuità hanno coniugato la cura della castagna e<br />
del legno alla produzione tradizionale di scale o botti.<br />
Sulla cima più alta la chioma maestosa del grande<br />
Acerone, patrimonio dell ‘Unesco, incorona il manto<br />
<strong>dei</strong> boschi.<br />
Nei silenzi di questi luoghi, gli affreschi rinascimentali<br />
di Pier Matteo d’Amelia e le moderne composizioni<br />
musicali del Centro Europeo di Toscolano, sono<br />
espressioni artistiche che, attraverso i tempi,<br />
interpretano la ricerca essenziale della bellezza.<br />
Un’attenta fitoterapia, unita ai principi della tradizione<br />
erboristica umbra, permette di ritrovare equilibrio del<br />
corpo con la mente nel centro benessere di Torre<br />
Errighi. Al valico della montagna lo sguardo si estende<br />
oltre i confini della regione, scoprendo un orizzonte<br />
quasi marino. Sul poggio di Civitella del Lago, il museo<br />
dell’Ovo Pinto, offre una letterale sorpresa con le uova<br />
decorate provenienti da tutta Italia. Tutto da scovare,<br />
poco sotto in un angolo incantato, l’Eremo della<br />
Pasquarella dove ogni anno si ripete la rituale<br />
processione a ricordo del battesimo collettivo del Lunedì<br />
in Albis.<br />
LE CURIOSE GASTRONOMIE<br />
DELL’AMERINO<br />
Un primordiale impasto di acqua e farina sono<br />
l’essenza <strong>dei</strong> manfricoli conditi con il “sugo pacio “,<br />
pomodoro e odori, o con funghi o asparagi e<br />
della”acciaccata“di Fornole, pizza bianca cotta a legna.<br />
Questa terra agreste dona ancora i suoi frutti migliori<br />
con la selvaggina: il cinghiale accompagna la polenta e i<br />
Palombacci all’Amerina sono arricchiti dalla “leccarda”,<br />
tipica salsa aromatica di intenso sapore. L’autunno<br />
regala il pane al mosto, una ripetuta tradizione per<br />
onorare la vendemmia; quando le foglie ingialliscono i<br />
castagni lasciano cadere il frutto con cui si preparano<br />
dolci e minestre, fino ad arrivare a Natale per gustare il<br />
baccalà con le prugne e il Torciglione, dolce<br />
propiziatorio per il nuovo anno, a forma di serpente.<br />
Una fama più che meritata che viene dal passato per i<br />
Fichi di Amelia, ripieni di frutta secca, che non hanno<br />
ancora finito di stupire il palato, accanto alle più<br />
semplici pastarelle, o alle ciambelline al vino.Un<br />
salvataggio dall’oblio per la Fava cottora, oggi presidio<br />
Slow Food, senza dimenticare cicerchie e lenticchie da<br />
gustare con il pane sciapo e l’olio DOP colli Amerino.<br />

Matteo d’Amelia and the modern musical compositions of the<br />
Toscolano European Centre are artistic expressions that,<br />
throughout time, interpret the basic search for beauty.<br />
Careful phytotherapy along with the principles of the Umbrian<br />
herbal tradition enable us to regain the body’s balance with<br />
the mind in the wellbeing centre of Torre Errighi. At the<br />
mountain pass, the view goes beyond the confines of the<br />
region, discovering a nearly marine horizon.<br />
On the knoll of Civitella del Lago, the Ovo Pinto museum<br />
offers a surprise with decorated eggs coming from all over<br />
Italy. More to be discovered, a little below in an enchanted<br />
corner is the Pasquarella Hermitage where every year they<br />
repeat the ritual procession in memory of the collective<br />
baptism of the Monday in Albis.<br />

CURIOSITIES IN AMERINO<br />
A primordial mixture of water and flour is the essence of the<br />
“manfricoli” (hand-rolled spaghetti) with “pacio sauce”,<br />
tomatoes and herbs or with mushrooms or asparagus and the<br />
Fornole “acciaccata” (squashed) white pizza baked in a<br />
wood-fired oven. This farmland still yields best with game:<br />
wild boar accompanies polenta and the Amerina game<br />
pigeons are enriched with the “leccarda”, a typical aromatic<br />
sauce with a strong medieval flavour. Autumn brings<br />
“maritozzi” (sweet currant buns) with must, a repeated<br />
tradition to honour the harvest; when the leaves turn yellow<br />
the chestnuts let their fruit fall, to make sweets and soups,<br />
until we come to Christmas to taste dried salt-cured cod with<br />
plums and the Torciglione, a snake-shaped propitiatory sweet<br />
for the new year. A well deserved fame that comes from the<br />
past for the Amelia figs, stuffed with nuts, that still amaze<br />
the palate, along with the simplest pastries, or wine pretzels.<br />
Rescued from oblivion is the “fava cottora” (a type of broad<br />
bean), today a Slow Food Presidium, without forgetting<br />
cicerchie and lentils with the salt-free bread and DOP oil of<br />
the Amerino hills.<br />

Umbria preserves the<br />
traces of the sea at the<br />
foot of its hills, once<br />
islands. Here greenery<br />
shows a vital explosion of<br />
nuances, fed by the waters<br />
that wind in and around<br />
the underground, gurgle<br />
from the springs and<br />
disappear in the grottoes.<br />
The primitive inhabitants<br />
chose these hills and<br />
plateaus, protected by the<br />
natural limits of rivers or<br />
torrents, once routes of<br />
communication and<br />
sources of energy.<br />
The countryside was<br />
designed by man’s work,<br />
with crops coming even<br />
from across the sea, such<br />
as the grapevine. Over the<br />
centuries viticulture has<br />
encountered various<br />
challenges, from ancient<br />
wisdom to modern<br />
technology, to obtain<br />
production that has been<br />
ever more refined.<br />
The Tiber river, natural boundary between the Umbrians and<br />
the Etruscans, has furrowed the Karst rock between Todi and<br />
Orvieto to the point of carving a bitter but attractive gorge<br />
between the pink limestone and the intense green of the holm<br />
oaks: the “Forello”.<br />

Sulle coste assolate, alla tradizionale coltivazione <strong>dei</strong><br />
vitigni del bianco D.O.C. Orvieto sono stati affiancati altri<br />
vigneti a bacca rossa che danno un vino corposo D.O.C.<br />
Lago di Corbara. La presenza del lago ha mutato il<br />
microclima stimolando una ricerca enologica per prodotti<br />
di qualità, frutto di esperienza e di ricercati processi<br />
produttivi che hanno la loro massima espressione nelle<br />
fine bollicine di spumante di sapore pieno ed elegante.<br />
Le nebbie autunnali che avvolgono questi scenari pieni di<br />
sorprese creano nelle uve una muffa essenziale per la<br />
produzione di un vino dolcissimo e nobile riconosciuto<br />
con una nuova D.O.C.<br />
La storia si è fermata sulle rocce e nelle gole, tra gli alberi e<br />
i verdi silenzi di boschi che nascondono eremi e luoghi di<br />
culto, riti sacri e memorie archeologiche.<br />
Lungo il percorso fluviale si sono sviluppate nuove attività<br />
sportive, come la pesca, il canottaggio, il trekking, che<br />
hanno accompagnato lo sviluppo di imprese della<br />
ricettività e della ristorazione.<br />
L’accoglienza rispecchia l’abbraccio emozionante del<br />
paesaggio dove ogni luogo parla di storia, e di arte<br />
culinaria le cui radici, di solida tradizione familiare, sono<br />
state reinterpretate dai nuovi maestri della cucina famosi<br />
oltre il livello regionale.<br />

THE TIBER PARK AND ITS LAKES<br />
Orvieto<br />
shadows accompanies us until we come to the calm mirror of<br />
the Corbara lake, an artificial lake, where the force of water<br />
produces renewable energy.<br />
Other red grapevines have been planted alongside the<br />
traditional cultivation of the Orvieto D.O.C. vines on the<br />
sundrenched slopes that give a full bodied Lago di Corbara<br />
D.O.C. wine. The presence of the lake has changed the<br />
microclimate, stimulating an oenological search for quality<br />
products, the fruit of experience and refined productive<br />
processes with their maximum expression in the fine bubbles of<br />
a full, elegantly flavoured ‘spumante’.<br />
The autumn fog that covers these landscapes full of surprises,<br />
creates a mould in grapes that is essential for the production of<br />
a very sweet, noble wine, recognised with a new D.O.C .<br />
It’s history stopped on the rocks and in the gorges, among the<br />
trees and the green silence of woods that hide hermitages and<br />
places of worship, sacred rites and archaeological memories.<br />
New sports have developed along the river trail, such as fishing,<br />
canoeing and trekking that have accompanied the development<br />
of companies involved in hotel and restaurant services.<br />
Reception reflects the exciting embrace of the countryside where<br />
every place speaks of history and culinary art whose roots,<br />
embedded in a solid family tradition, have been reinvented by<br />
new master chefs, famous beyond the regional level.<br />
Beyond the imposing dam, we find the archaeological remains<br />
of Pagliano, the last port on the Tiber when it was still<br />
navigable, at its confluence with the Paglia river. Accompanied<br />
by orderly rows of vines, we climb until we see emerging, like<br />

alla confluenza con il Paglia. Accompagnati da ordinati<br />
filari di viti si risale fino a vedere emergere, come<br />
un’isola nella valle, Orvieto, la città alta e strana. Una<br />
profonda contraddizione apparente, l’acqua in una, terra<br />
di fuoco: qui l’uomo si è industriato a trovare, scavando<br />
nel tufo, l’elemento della sua sopravvivenza.<br />
“Quod natura munimento inviderat industria adiecit”<br />
così è scritto sul Pozzo di San Patrizio fatto costruire dal<br />
Papa, contemporaneamente al Pozzo della Cava, per<br />
rifornire d’acqua la città in caso di assedio. Un<br />
inesauribile intreccio tra la cultura dell’acqua e del vino<br />
ha segnato la città, la storia si è stratificata nei pozzi,<br />
nelle cisterne e nei silos etruschi, nelle cantine, usate<br />
ancora oggi, dal microclima ideale per il vino, nei<br />
monumenti dove l’arte ha impresso i simboli dell’uva e<br />
della vite.<br />
“I buchi” di Baschi, un piccolo mondo antico quello del<br />
borgo medioevale, vicoli, case, porte e finestre mignon e<br />
ancora la misteriosa e enigmatica scultura della Marroca.<br />
Come in una cartolina Montecchio emerge dal colle<br />
coperto da olivi secolari che fanno da sfondo al piccolo<br />
Museo dell’Olio, un percorso di cultura e storia che<br />
comprende anche il gusto per l’assaggio, sulla<br />
bruschetta, del delicato olio DOP Umbria Colli<br />
Orvietani.<br />
Il corso del Tevere si adagia poi nella pianura protetta<br />
dai colli e difesa dai castelli, come nella Rocca di<br />
Bartolomeo d’Alviano dove le gesta del condottiero e la<br />
raccolta degli strumenti della civiltà contadina parlano<br />
alle nuove generazioni del coraggio e della fatica del<br />
vivere. La quiete delle acque, fermate di nuovo per<br />
sfruttarne l’energia, ha favorito lo sviluppo di una<br />
palude: qui gli uccelli migratori e gli animali acquatici<br />
hanno trovato un nuovo habitat naturale nell’ Oasi di<br />
Alviano dove il WWF gestisce un centro visite per il<br />
birdwatching nei mesi di passo <strong>dei</strong> migratori e per le<br />
attività didattiche e di studio delle zone umide.<br />
Dal castello del Poggio di Guardea la difesa del<br />
territorio ha assunto la funzione di salvaguardia <strong>dei</strong><br />
valori fondanti dell’umanità e le pietre dell’Arco della<br />
Coscienza arrivate da tutte le città del mondo, sono la<br />
testimonianza dell’impegno per la costruzione del Terzo<br />
Millennio come “Millennio di Pace”.<br />

“The holes“ of Baschi, a small ancient world in a medieval<br />
hamlet, alleyways, houses, tiny doors and windows and still the<br />
mysterious, enigmatic Marroca sculpture. Like a postcard,<br />
Montecchio stands out on the hill covered with centuries-old<br />
olive trees that are the background to the small Museo dell’Olio<br />
(Oil Museum), a journey through culture and history that<br />
includes enjoying a taste of the delicate DOP Umbria Colli<br />
Orvietani oil on a piece of toasted bread.<br />
The course of the Tiber river slows on the plain protected by the<br />
hills and defended by the castles, such as the Bartolomeo<br />
d’Alviano Fortress where the deeds of the leader of mercenaries<br />
and the collection of the tools of farm civilisation speak to the<br />
new generations of courage and fatigue.<br />
The calm of the waters, stopped again to take advantage of<br />
their energy, encouraged the development of a swamp: the<br />
migratory birds and the aquatic animals found a new natural<br />
habitat in the Alviano oasis where the WWF manages a<br />
visitors’ centre for bird watching during the months when the<br />
migratory birds pass by and for education and study of the<br />
swampy areas.<br />
From the Poggio di Guardea castle, defence of the territory has<br />
taken on the function of safeguarding the founding values of<br />
humanity, and the stones that have been sent from all the cities<br />
of the world, included in the Arc of Planetary Awareness, bear<br />
witness to the commitment for building the Third Millennium<br />
as the “Millennium of Peace”.<br />

Sul colle calcareo che gli Umbri avevano scelto per<br />
fondare Amelia, difesa dalla doppia cinta di mura<br />
poligonali, l’acqua, indispensabile al vivere quotidiano,<br />
ha sempre giocato il suo ruolo aggregante e simbolico.<br />
Nel II sec. d.C. i Romani s’ingegnarono raccoglierla<br />
dalle gronde <strong>dei</strong> tetti nelle grandi cisterne, oggi<br />
interessante luogo di visita sotterraneo. L’imponente<br />
statua bronzea di Germanico approdata ad Amelia del I<br />
sec. d.C. narra ancora la gloria della civiltà romana<br />
ripresa nel logo della strada <strong>dei</strong> vini.<br />
Verso i declivi di Narni il sapiente lavoro dell’uomo ha<br />
sottratto il terreno al dominio del bosco creando zone<br />
per la coltura vitivinicola che genera vini rosati e<br />
l’interessante monovitigno del Ciliegiolo I.G.T. Narni.<br />
Sotto il colle dove sorge la città del condiottero di<br />
ventura, il Gattamelata, il Nera , prima di pacificarsi<br />
nell’abbraccio con il Tevere verso Otricoli, scorre<br />
tortuoso fra le gole scavate nella roccia e assume una<br />
particolare colorazione azzurra nei pressi di Stifone.<br />
Passeggiando tra gli scavi della città di Otricoli si arriva<br />
al Porto dell’Olio da dove la VI regione augustea,<br />
l’Umbria, inoltrava anfore di pregiato olio ed altre<br />
provviste per rifornire le mense della capitale. In questo<br />
angolo verde la pastorizia offre l’opportunità di gustare<br />
ricotte e pecorini dolci e piccanti.<br />

Terni cascata delle Marmore<br />

wine and sun-dried fruit, called “siccume”, such as the Amelia<br />
figs.<br />
In the oak woods, in a kaleidoscope of colours, you can search<br />
for mushrooms, truffles, asparagus and berries that, along with<br />
the chestnuts of the mountain areas, enrich the table the year<br />
around.<br />
On the calcareous hill that the Umbrians chose for building<br />
Amelia, defended by the double ring of polygonal walls, water,<br />
which was indispensable for daily life, always played its<br />
aggregating, symbolic role. In the 2 nd century AD, the Romans<br />
found a way to collect it from the eaves of the roofs in the large<br />
cisterns, today an interesting underground place to visit. The<br />
impressive bronze statue of Germanico which came to Amelia<br />
in the 1 st century AD, still tells of the glory of Roman<br />
civilisation, depicted in the logo of the wine road.<br />
Towards the Narni descent, man wisely worked to take the<br />
terrain from the dominium of the forest, creating areas for<br />
growing grapes that generate rosé wines and the interesting<br />
Ciliegiolo I.G.T. single vine species in Narni.<br />
Below the hill where stands the city of the leader of<br />
mercenaries, Gattamelata, the Nera river winds its way<br />
through the gorges carved in the rock and takes on a special<br />
blue colour near Stifone, before making peace with the Tiber<br />
towards Otricoli.<br />
Strolling among the archaeological excavations of the city of<br />
Otricoli we come to the Oil Port, from which the VI Augustan<br />
region – Umbria – sent out amphorae of high quality oil and<br />

Rafting sul Nera<br />
da parte delle popolazioni preitaliche di “Interamna”,<br />
città tra i fiumi. Nel giorno di San Valentino Terni è<br />
invasa da coppie di innamorati che qui rinnovano le<br />
loro promesse d’amore davanti al santo protettore<br />
celebrato nella sua basilica.<br />
Al matrimonio naturale delle acque l’ingegno umano<br />
ha aggiunto la confluenza artificiale del Velino nel<br />
Nera, creando la spettacolare Cascata delle Marmore,<br />
meta di tanti visitatori già dall’epoca del Grand Tour.<br />
Sulla spinta delle cascate l’acqua a valle diventa<br />
vorticosa formando entusiasmanti rapide, ideali per<br />
sport acquatici come rafting, canoa e torrentismo.<br />
In un percorso inverso si risale verso Papigno, dove i<br />
siti industriali sono diventati set cinematografici, per<br />
arrivare a scoprire la corona di monti che si specchia<br />

Le tranquille acque lacustri ospitano non solo l’attività<br />
di pesca del salmerino e dell’anguilla ma anche l’attività<br />
remiera, con annuali regate di interesse internazionale e<br />
la tradizionale festa delle acque. Verso la Forca d’Arrone<br />
si arriva al parco di Villa Lago dove la sosta per un picnic<br />
è l’occasione per una panoramica visione.<br />
Nelle fertili vallate delle Terre Arnolfe, San Gemini deve<br />
la sua fama all’acqua leggera e pura tanto da essere<br />
indicata come la prima acqua per i bambini, che<br />
possono trovare un luogo ameno nel Parco della Fonte.<br />
Le fonti dell’Amerino ad Acquasparta furono<br />
apprezzate da S. Francesco, che fece costruire nei pressi<br />
un convento, e da Galileo Galilei, ospite nel palazzo,<br />
Federico Cesi, fondatore <strong>dei</strong> Lincei e infine citate da<br />
D’Annunzio per le virtù terapeutiche.<br />
LE CURIOSE GASTRONOMIE<br />
DEL TERNANO<br />
Una singolare forma di protesta “la guerra del sale”<br />
contro il papa, che voleva alzarne il prezzo, è all’<br />
origine del pane sciapo di Terni, cotto nei forni a legna,<br />
che esalta il gusto della raffinata norcineria. I prodotti<br />
del sottobosco, funghi asparagi e tartufi sono il<br />
condimento ideale delle ciriole alla ternana; la salsiccia<br />
e i fagioli esaltano gli gnocchetti alla collescipolana,<br />
fatti con farina e pangrattato. Dai freschi corsi d’acqua i<br />
carbonaretti, pesce persico alla griglia e la trota<br />
aromatizzata con spezie e tartufo arricchiscono la<br />
mensa. La vera magia si può trovare nel pampepato,<br />
un’alleanza tra dolce, amaro e piccante di ben 16<br />
ingredienti per allietare le feste natalizie. E’ dell’inizio<br />
del secolo scorso che la pasticceria offre dolci di<br />
raffinata fattura e bontà in un tripudio di golosità come<br />
il p anpolenta, il panfrutto e le pizze dolci o al<br />
formaggio della tradizione pasquale senza dimenticare<br />
la pizza con gli sfriccioli.

When the Nera river joined the Serra river it favoured the<br />
foundation by the pre-Italic peoples of “Interamnia”, a city<br />
between rivers. On St. Valentine’s day, Terni is invaded by<br />
couples in love who renew their promises of love before the<br />
holy protector, celebrated in its basilica.<br />
At the natural joining of the waters, human engineering<br />
added the artificial confluence of the Velino river into the<br />
Nera river, creating the spectacular Marmore Waterfalls, the<br />
destination of many visitors as early as the Grand Tour period.<br />
From the thrust of the waterfalls, the water whirls downhill,<br />
creating incredible rapids, ideal for water sports such as<br />
rafting, canoeing and canyoning.<br />
A reverse route goes back up towards Papigno, where the<br />
industrial sites have become movie sets, and we discover the<br />
crown of mounts reflecting in the calm waters of Lake<br />
Piediluco.<br />
The calm lake waters host not only traditional fishing for lake<br />
trout and eel, but also rowing, with annual regattas at an<br />
international level, and the traditional water festival. In the<br />
Forca d’Arrone direction you come to the Villa Lago park<br />
where stopping for a picnic lunch is a chance for a panoramic<br />
view.<br />
In the fertile valleys of the Arnolfe lands, San Gemini owes its<br />
fame to the light, pure water recommended for babies, who<br />
can find a calm place in the Spring Park.<br />
The Amerino springs at Acquasparta were appreciated by<br />
Saint Francis, who had a convent built nearby; and by Galileo<br />
Galilei, guest in the palace; Federico Cesi, founder of the<br />
Lincei and lastly recommended by D’Annunzio for their<br />
therapeutic virtues.<br />
GASTRONOMIC CURIOSITIES<br />
OF THE TERNI AREA<br />
A singular form of protest: “the salt war” against the pope<br />

bread, baked in a wood-fired oven that exalts the taste of<br />
refined pork-butchering. Forest produce such as mushrooms,<br />

an alliance of 16 sweet, bitter and sharp ingredients to<br />
enliven the Christmas table. Since the beginning of the last<br />
century pastry chefs have offered refined sweets, in a<br />
jubilation of delicacies such as the “panpolenta”, the<br />
“panfrutto” and pizza cake either sweet or with cheese in the<br />
Easter tradition, without forgetting pizza with “sfriccioli”<br />
(fried pork cubes).<br />
