SCONES This recipe comes from our Viking chefs, who bake batches of these on board our ocean ships for afternoon tea in the Wintergarden. One of our longtime favorites, these quick breads with just a touch of sweetness are baked until gently crisped—perfect with clotted cream and jam or lemon curd. SERVES 16 3¼ C (400 g) flour ¼ C (45 g) sugar 1¾ tbsp (20 g) baking powder ½ tsp (2.5 g) salt 1⅔ C (375 ml) heavy cream 3 tbsp (42 ml) honey 1 large egg yolk, beaten 1‌Preheat oven to 400°F (210°C). Line or spray a baking sheet and set aside. 2‌Stir together flour, sugar, baking powder and salt in a large bowl. 3‌In a medium bowl, whisk together cream and honey; pour into dry ingredients and stir until just combined (mixture will be a little crumbly). 4‌Turn onto a lightly floured work surface; roll out to 1-inch (2.5 cm) thickness and cut into 2-inch (5 cm) circles. 5‌Transfer to baking sheet, brush tops with egg yolk and bake until golden brown, about 18 minutes. A beautifully light and airy space, the Wintergarden is a serene spot in which Viking guests can enjoy a complimentary afternoon tea while cruising the high seas. The Scandinavian design ethos celebrates the Nordic landscape with elegant wooden trees branching out across the ceiling. And to complete the experience, the daily afternoon tea service is accompanied by classical music performed by the Viking Resident Musicians. As the music plays softly in the background, the stage is set for Viking staff to display the pastry chef’s prodigious talents. Freshly made finger sandwiches, delectable tartlets, richly textured scones and decadent macarons are presented on bountiful tiered cake stands. The star of the show is the extensive range of delicious teas from around the world, including Chinese oolong, Bombay chai and Lapsang souchong.
