The Cowboys were so-so, Nebraska and OU dominated the old Big 8 Conference. Lewis Stadium was a rust bucket and Eskimo Joe's was just getting started. Friday nights before game days in 1982, Robert and Eskimo Joe’s owner, Stan Clark, would host patty-pressing, baked bean cooking parties at Stan’s house to prepare for the next day’s flow of orange clad fans. The sight of the smoke and the smell of burgers cooking on the grill attracted fans from both sides and the idea of Joe’s as a restaurant was born. famous cheese fries, Forty-two years after Eskimo Joe’s opened, the Cowboys are perennial conference contenders, vying for national championships and tailgating has become an art form. Eskimo Joe’s cheese fries have been recognized by U.S. Presidents and burgers are still grilling, while fun is served up in heaping helpings. And yes, Robert is still at it. Now Director of Restaurant Operations, he works on everything from menus to marketing to plumbing. Eskimo Joe’s kitchen opened in 1984, and every now and then, he still flips a burger or two!
