250g spinach<br />
250g tofu<br />
2 tbsp extra virgin olive oil, plus extra for brushing<br />
50g pine nuts, toasted<br />
generous grating nutmeg<br />
2 fat garlic cloves, crushed<br />
2 lemons, zested<br />
1 small pack dill, ¾ leaves chopped, ¼ fronds<br />
reserved for decorating<br />
1 tbsp sour cherries<br />
½ tbsp dried cranberries, plus a few extra<br />
flour, for rolling<br />
500g Athens Fillo Dough<br />
Almond milk, for brushing<br />
Vegan Christmas Wreath<br />

Preparation<br />
Bake our vegan Christmas wreath with spinach, pine nuts and tofu<br />
as a centrepiece for a meat-free Christmas Day.<br />
Adorn with festive cranberries and dill<br />
1- Put the spinach in a colander, then pour over a kettle of boiling water and leave to wilt. Once cool, wring out the excess<br />
moisture using a clean tea towel, then chop the spinach and put in a large bowl. Stir in the tofu, oil, pine nuts, nutmeg, garlic,<br />
lemon zest, chopped dill and fruit until well combined, season generously and set aside.<br />
2- On a well-floured surface, roll the pastry out into a 60 x 20cm rectangle. Leaving a 1cm border, spoon the spinach mixture<br />
along the length of the pastry, leaving a 2cm gap at both short ends. Fold in the two short ends to stop any of the filling<br />
coming out, then roll the pastry away from you to enclose the filling and create a long sausage shape. Join the two ends together<br />
to create a wreath shape and stick together with a little almond milk. Transfer the wreath to a baking tray lined with<br />
baking parchment and chill for 20 mins. Can be made up to this point a day in advance and kept covered in the fridge.<br />
3 Heat oven to 200C/180C fan/gas 6. Using a sharp knife, cut slashes across the top of the wreath. Mix a little almond milk<br />
with some olive oil (this will help the pastry colour) and brush all over the wreath. Bake for 40-45 mins until golden brown.<br />
Leave to cool for 5 mins, then transfer to a board and decorate with the reserved dill fronds and some dried cranberries.

Coconut truffles with Nutella<br />

A truffle is something rare and delicious, and even more so with with<br />
Nutella hazelnut spread. Small, refined coconut spheres with a soft heart.<br />
No forks and no dishes needed for the dessert, just your fingers.<br />
Ingredients<br />
1 egg<br />
1/4 cup granulated sugar<br />
2 cups dried coconut flakes<br />
1 cup Nutella® hazelnut spread
Preparation<br />
STEP 1<br />
Preheat the oven to 350°F and place the oven rack in the<br />
middle position.<br />
Mix the egg, with the sugar and 1 1/4 cup dried coconut<br />
flakes.<br />
Form 20 1-tbsp balls, each the size of a walnut, and transfer<br />
them onto a baking tray lined with parchment paper.<br />
Bake for about 4 minutes, then remove from the oven and<br />
leave on the tray to cool, about 10 minutes.<br />
STEP 2<br />
Carefully cut each ball in half with a small knife.<br />
Gently push thumb in the flat side of each half to make a<br />
small crater.<br />
Using a piping bag fitted with a small nozzle (about 1/8<br />
inch), fill each crater with 1/2 tsp of Nutella® hazelnut<br />
spread and press the two halves together.<br />
STEP 3<br />
Warm 1/2 cup of Nutella® hazelnut spread in a small glass<br />
or metal bowl set over a saucepan of boiling water.<br />
Using 2 forks, dip each truffle into the Nutella® hazelnut<br />
spread and arrange them on a plate.<br />
Roll each truffle in the remaining dried coconut flakes and<br />
place on a plate. Refrigerate for 30 minutes.<br />
Drizzle with the remaining softened Nutella® hazelnut<br />
spread.

1 cup pineapple juice<br />
½ cup blue curacao<br />
½ cup vodka or light rum<br />
½ cup cream of coconut<br />
(not coconut milk)<br />
10 to 12 ice cubes<br />
Shredded coconut, for garnish<br />
Rim glasses with shredded coconut.<br />
Mix together the juice, liquors, cream of coconut and ice<br />
Strain into martini glasses.<br />
Make 4 drinks.<br />
TO RIM GLASSES<br />
Combine two parts sugar and one part water in a saucepan and stir well.<br />
Bring sugar mixture to a boil, and cook 1 minute or until the sugar dissolves,<br />
strirring constantly. Let the syrop coll down.<br />
Apply to the outside of the rim with a Q-tip or paper towel and then roll the<br />
outside of the glass in shredded coconut.<br />
Try to keep the coconut on the outside of the rim so it doesn’t fall into the drink.<br />
