SALIR COMER EN EL MERCADO, UNA TENDENCIA EN BOGA Los viejos mercados de barrio se han reconvertido en espacios comerciales a los que no solo se va a comprar alimentos. Llenar la cesta de la compra se compagina ahora con excelentes propuestas gastronómicas TEXTOS: CARLOS MARIBONA No es algo nuevo, pero sí una tendencia que se extiende con fuerza: comer en el mercado. Tradicionalmente, los mercados, además de sus variados puestos de productos de alimentación, albergaban algunos pequeños bares o modestos restaurantes en los que se preparaban tapas, raciones o platos elaborados con ingredientes comprados allí mismo. Cualquier viajero que haya visitado los países de Iberoamérica, especialmente México o Perú, habrá podido encontrar estos puestos de comida popular, siempre muy frecuentados. En Tokio, el impresionante mercado central de pescado, Tsukiji, el más grande del mundo, tiene a su entrada algunos puestos donde se puede comer buen sushi a precios asequibles. Eso sí, por señas, porque los carteles están en japonés y los cocineros no hablan más idioma que el suyo. Pescado y marisco bien fresco, cortado con habilidad, buen arroz, una reconfortante sopa con la que los japoneses empiezan siempre sus comidas, y para beber, té verde. También en Europa es práctica habitual comer en el mercado. Por ejemplo, el coqueto Les Halles, en el centro de Lyon, alterna sus puestos de productos gourmet con una serie de restaurantitos y bares donde sirven, sobre todo, una amplia variedad de ostras y otras delicias del mar que se pueden regar con una copa de vino blanco o de champán. Una práctica habitual también en los mercados de París. En España, esta tradición de comer entre puestos ha tenido siempre su máximo exponente en el mercado barcelonés de La Boquería, con algunos establecimientos populares, conocidos como «paradas», que aprovechan al máximo la proximidad a las mejores materias primas para elaborar platos sencillos que congregan, frente a su pequeña barra, a los mejores gourmets. El más conocido de todos es Pinotxo, siempre abarrotado, con algunas mesas altas en la calle y un espacio mínimo en el interior, en el que se sirven los platos del día, desde unos garbanzos con butifarra o un guiso de chipirones con habas hasta unas 01. Pionero. El Mercado de San Miguel fue el primero en fusionar la compra de productos frescos con la degustación gastronómica. 02. Mercado de San Antón. Ubicado en el barrio madrileño de Chueca, conserva una estructura más tradicional. 01 costillitas de cordero, siempre en función de la temporada. Allí puede verse a intelectuales, artistas, políticos, conocidos cocineros, turistas y todo tipo de gente a la que le gusta comer bien. Lo que hasta ahora ha sido una tradición ligada a lugares muy concretos se ha convertido en los últimos años en una tendencia imparable. Ayudada por los nuevos hábitos sociales que imponen una mayor informalidad y precios más asequibles a la hora de comer, se impone la moda de recuperar los viejos mercados de barrio y convertirlos en espacios gastronómicos donde se puede comprar desde el producto más básico hasta la más refinada delicatessen, con lugares específicos también para comer allí mismo. El público de hoy en día rompe con la rigidez de una sala, con la formalidad que esta impone, y en muchas ocasiones prefiere otro estilo, alejado de una carta que casi obliga a elegir una entrada, un plato principal y un postre. Y es esa informalidad la que lleva hacia este nuevo modelo de mercados gastronómicos. Espacios comerciales a los que la gente ya no va solo a comprar alimentos para su casa.
