expression response to diet to be identified and
understood, leading to the production of foods
that cater to the nutritional requirements of each
individual 58 . By having a specific methodology,
involving the use of molecular tools, the way
in which organisms use their genomes in the
expression of specific genes, in a variety of situations
or environments, can even be examined.
Therefore, the results from such studies will have
implications for the food industry, concerning the
design of food products to fulfil the nutritional
requirements of determined individuals 60 .
a padecer diversas enfermedades asociadas
con la dieta.
2) saber cómo influirá la genética en la
eficacia de los procesos metabólicos y de
qué manera repercutirá este hecho en los
requerimientos nutritivos.
It is also believed that knowledge of a person’s
genomic sequence may be considered as the start
of a new area of research within the sphere of
food production, particularly in the area of disease
prevention and the enhancement of health
in the general population. Consequently, more
in depth research on the functioning of human
genes is expected to allow the design of food
products. By incorporating specific functional
ingredients, customised diets could be created
for specific individuals 61 . In this way, not only
will foods have the capacity to satisfy a person’s
nutritional requirements, but beneficial effects on
health, derived from added biologically active
