Au fil des pages, nous voulons vous faire partager, notre enthousiasme pour <strong>le</strong> travail de nos<br />
confrères japonais, membres de <strong>Relais</strong> <strong>Desserts</strong>. Au delà des frontières, des cultures, c'est<br />
la passion du travail bien fait qui nous guidera tout au long de ces reportages. A la <strong>le</strong>cture de<br />
ces pages, vous comprendrez que <strong>le</strong> but de <strong>Relais</strong> <strong>Desserts</strong> n'est pas d'uniformiser la pâtisserie<br />

It has already been 5 years since our annual <strong>Relais</strong> <strong>Desserts</strong> seminary took us to Japan.<br />
As you read on, we hope you will get a feeling for our enthusiasm for the work of our Japanese<br />
col<strong>le</strong>agues and members of <strong>Relais</strong> <strong>Desserts</strong>. Beyond borders and cultures, it is this passion for<br />
perfection that is the guiding theme in these artic<strong>le</strong>s. On reading them, you will understand<br />
that the aim of <strong>Relais</strong> <strong>Desserts</strong> is not to standardise patisserie, but to find a glorious source of<br />
inspiration in each country. As far away and different as they may be.<br />
