We cordially invite you to join us on a trip to the expanse and solitude of the wild<br />
Canadian West. It was the development of the country in previous centuries by its<br />
pioneers, and their discovery of an access from the heartland to the Pacific Ocean, that<br />
opened the way for the fur trade between Canada and East Asia – you could easily say:<br />
early globalization! In our section <strong>CWT</strong> Business we forge a bridge between global<br />
consolidation and company travel programs. In addition, a study has revealed how<br />
companies satisfy today's travelers whilst keeping their expenses in check. Please also<br />
take part in our reader survey (p. <strong>11</strong>); we welcome your contribution towards improving<br />

wir laden Sie ein in die Weite und Einsamkeit des wilden kanadischen Westens. Als die<br />
Pioniere vergangener Jahrhunderte ihn erschlossen und den Zugang vom Landesinneren<br />
zum Pazifik fanden, war der Weg für den Pelzhandel zwischen Kanada und<br />
Ostasien bereitet – eine frühe Form der Globalisierung. In unserer Rubrik <strong>CWT</strong> Business<br />
schlagen wir den Bogen zur globalen Konsolidierung von Firmenreiseprogrammen.<br />
Ausserdem haben wir in einer Studie ermittelt, wie Unternehmen heutige Reisende<br />
zufriedenstellen und dabei ihre Kosten im Griff behalten. Bitte nehmen Sie auch an<br />

decisive role. In its current study – Business Traveler Services:<br />
Finding the Right Fit –the <strong>CWT</strong> Travel Management Institute<br />
answered the most relevant questions surrounding the service<br />

How does the consolidation of a business<br />
travel program actually work at regional or<br />

<strong>CWT</strong> <strong>Connect</strong> Magazine: Mr. Erhard, you manage a team of<br />
Global Program Managers at <strong>CWT</strong> – based on your personal<br />
experience, what benefits do customers have if they consolidate<br />
their business travel program<br />
Andreas Erhard: There are three major benefit aspects: Firstly,<br />
customers receive consistent data from one source when they<br />
organize their regional or global business travel management via a<br />
single provider. This means that they are in a completely different<br />
negotiating position vis-à-vis suppliers. Secondly, customers can<br />
better manage their travel program: they have a central contact<br />
person at their global travel agency partner who is responsible for<br />
the communication within <strong>CWT</strong>. And the third aspect is security: if<br />
a customer is supported on a global level by one travel management<br />
company he can find out – virtually at the press of a button –<br />
whether any travelers are affected in the event of crises.<br />
<strong>CWT</strong> <strong>Connect</strong> Magazine: How can I determine whether<br />
consolidation is worthwhile for a company<br />
Andreas Erhard: We carefully examine the customer's desire for<br />
consolidation on a case-by-case basis. An important criterion in<br />
the decision has to be travel spend. However, we always consider<br />
this in conjunction with the number of countries: If, for example, a<br />
company spends 80 percent of its travel volume in one country<br />
and the balance is distributed over 10 countries with a smaller<br />
turnover, it is difficult to discern optimization potential.<br />
<strong>CWT</strong> <strong>Connect</strong> Magazine: What are the stumbling blocks when<br />
it comes to a global consolidation of a business travel program<br />
Andreas Erhard: Any consolidation project stands or falls with<br />
communication. Every now and then, it does happen that the<br />
advantages are not always immediately obvious within the<br />
customer’s individual company representative offices, especially if<br />
the consolidation requires them to change from their familiar<br />
travel agent partner to a new global travel management company.<br />
The secret here is for <strong>CWT</strong> to do a lot of convincing – jointly with<br />
the customer – and highlight the resultant advantages. This requires<br />
a corresponding communication plan.<br />
<strong>CWT</strong> <strong>Connect</strong> Magazine: What are the typical first steps and<br />
how do you actually approach such a project<br />
Andreas Erhard: One important first step is to establish the status<br />
quo in the relevant countries. That is to say, compile an inventory<br />
of all relevant information: What is the travel spend and what does<br />
it comprise What service configurations are currently in place, what<br />
is the contractual situation, etc. As far as the customer is concerned,<br />
a clear allocation of responsibilities and sufficient resources<br />
must be available on his part. In general, the following applies: The<br />
basis for everything is a sensibly compiled implementation plan.<br />

<strong>CWT</strong> <strong>Connect</strong> Magazine: Herr Erhard, Sie leiten ein Team<br />
von Global Program Managern bei <strong>CWT</strong> – was haben Ihrer<br />
Erfahrung nach Kunden davon, wenn sie ihr Firmenreiseprogramm<br />
konsolidieren<br />
Andreas Erhard: Es gibt drei grosse Nutzenaspekte: Erstens erhalten<br />
Kunden konsistente Daten aus einer Quelle, wenn sie ihr<br />
Geschäftsreisemanagement länderübergreifend oder weltweit<br />
über einen Anbieter organisieren. Damit haben sie eine ganz<br />
andere Verhandlungsposition gegenüber den Leistungsträgern.<br />
Zweitens können Kunden ihr Reiseprogramm besser steuern:<br />
Bei ihrem globalen Reisebüropartner haben sie einen zentralen<br />
Ansprechpartner, der die Kommunikation innerhalb von <strong>CWT</strong><br />
verantwortet. Und der dritte Punkt ist die Sicherheit: Wird der<br />
Kunde global durch einen Geschäftsreiseanbieter betreut, kann er<br />
quasi per Knopfdruck herausfinden, ob bei Krisen eigene Reisende<br />
betroffen sind.<br />
<strong>CWT</strong> <strong>Connect</strong> Magazine: Wie kann ich ermitteln, ob sich die<br />
Konsolidierung für ein Unternehmen lohnt<br />
Andreas Erhard: Wir prüfen den Konsolidierungswunsch eines<br />
Kunden im Einzelfall. Ein wichtiges Entscheidungskriterium ist<br />
sicherlich das Reisevolumen. Allerdings betrachten wir das stets<br />
in Verbindung mit der Anzahl der Länder: Wenn ein Unternehmen<br />
z. B. 80 Prozent seines Reiseumsatzes in einem Land macht und<br />
der Rest sich auf 10 Länder mit geringem Umsatz verteilt, sind<br />
Optimierungspotenziale schwerlich auszumachen.<br />

Ländervertretungen des Kunden, die aufgrund der Konsolidierung<br />
von ihrem vertrauten Reisebüropartner zum neuen globalen<br />
Anbieter wechseln sollen, die Vorteile nicht unmittelbar präsent<br />
sind. Hier gilt es dann für <strong>CWT</strong>, gemeinsam mit dem Kunden<br />
Überzeugungsarbeit zu leisten und die sich ergebenden Vorteile<br />
darzustellen – hierfür ist eine entsprechende Kommunikationsplanung<br />
wichtig.<br />

wie geht man konkret an ein solches Projekt heran<br />
Andreas Erhard: Ein wichtiger erster Schritt ist die Erfassung des<br />
Status quo in den Ländern, also eine Bestandsaufnahme aller<br />
relevanten Informationen: Wie hoch ist das Reisevolumen und<br />
wie setzt es sich zusammen Welche Betreuungsform liegt heute<br />
vor, wie ist die vertragliche Situation etc. Auf Kundenseite müssen<br />
klare Verantwortlichkeiten und ausreichende Ressourcen bestehen.<br />
Generell gilt: Die Basis für alles ist ein vernünftig aufgesetzter<br />
Implementierungsplan.<br />

de ses voyages dans un pays et les 20% restants se divisent sur<br />
10 pays avec des volumes très faibles, il est difficile de déterminer<br />
un potentiel d’optimisation.<br />

Andreas Erhard : Le plus important dans un projet de consolidation<br />
est la communication. Il se peut que dans certaines succursales<br />
du client, obligées de changer de prestataire du fait de la consolidation,<br />
les bénéfices ne soient pas évidents. Dans ce cas <strong>CWT</strong><br />
doit, en collaboration avec le client, faire un travail de conviction et<br />
mettre en valeur les bénéfices de la consolidation. Un bon plan de<br />
communication est alors indispensable.<br />

renforce considérablement leur position lors des négociations avec<br />
les fournisseurs. Deuxièmement la gestion du programme de<br />
voyages devient plus facile : les clients ont un seul interlocuteur qui<br />
se charge de la communication à l’intérieur de <strong>CWT</strong>. Le troisième<br />
point est la sécurité : lorsque tous les voyages d’affaires d’un<br />
client sont gérés par le même prestataire de voyages, un clic suffit<br />
en cas de crise pour savoir quels voyageurs sont affectés par<br />
cette dernière.<br />

Andreas Erhard : Une première étape importante est l’analyse de<br />
la situation dans les pays, c’est-à-dire le rassemblement de toutes<br />
les informations nécessaires : quel est le volume de voyages, et<br />
comment est-il constitué Comment les voyages d’affaires sont-ils<br />
gérés actuellement, quels contrats existe-t-il, etc. Le client doit<br />
attribuer les responsabilités et mettre à disposition suffisamment<br />
de ressources. La règle générale est : un plan de mise en œuvre<br />
raisonnable est à la base de tout.<br />

Wild, wide west<br />
Following in the footsteps<br />
of Canadian pioneers<br />
Canada’s western provinces British Columbia<br />
and Alberta are famous for their<br />
solitary, unique landscapes: the fjords<br />
at the Pacific coastline, the majestic<br />
mountain tops and the turquoise lakes<br />
in the Rocky Mountains. More than 200<br />
years ago, Alexander Mackenzie set off<br />
to find a route leading from the prairies<br />
in the heartland to the Pacific coast and<br />
so became one of the early pioneers of<br />
global trading.<br />
Alexander Mackenzie (1764–1820) was a tireless pioneer and<br />
merchant, who discovered and developed important trade routes<br />
traversing the country. Rivers and streets have been named after<br />
him. His book published in 1793 “First Across the Continent“ is<br />
still read today. All through Western Canada you can find traces<br />
of this fur trader and gold digger: Colonial-style houses and<br />
abandoned ghost towns are reminiscent of pioneer days. Jack<br />
London’s world-famous books also capture these eventful times<br />
and the gold rush, such as Klondike around 1897. And so the myth<br />
of freedom, affluence and adventure came to be fixed in people's<br />
minds and – even today – entices and fascinates Canada’s many<br />
visitors.<br />

Freedom and expanse<br />
Canada’s population density is among the lowest in the world.<br />
There are hardly any villages or towns outside the cities – a mere<br />
30 minutes outside Vancouver and you already find yourself in the<br />
wild. Usually just a few houses are grouped around the only gas<br />
station near and far. Out here in the wild people live a quiet and<br />
isolated life surrounded by nature; their houses spread over large<br />
properties far apart from each other. Alberta still has boreal forests<br />
completely uninfluenced by humans. Anybody wanting to enjoy<br />
that “pure nature“ feeling will – to a large extent – have to do<br />

without hotel comforts. The ideal way to travel here is<br />
to rent one of the luxuriantly equipped campers. Camping<br />
sites are well maintained and usually situated at the<br />
most beautiful places in the middle of the nature park.<br />
The experience of Canadian solitude is never as intense<br />
as at night when, under the impressive starry sky, the<br />
glowing embers slowly die out, coyotes howl and the<br />
silhouette of a Grizzly can be distinguished at the lake<br />
shore nearby.<br />
Wilderness and adventure<br />
Each longer tour in the wilderness has to be prepared<br />
and you will need at least semi-professional equipment<br />
including a backpack, outdoor clothing, food, tools, first<br />
aid kit, a compass and a map. Remember, it is not only<br />
city-tired trippers who feel at home in the untouched<br />
nature, but also predators such as pumas, Grizzlies and<br />
bald eagles. This is definitely something you should<br />
anticipate! Be sure to observe the recommended rules<br />
of behavior at all costs. This also applies, for example, if<br />
you are touring the West Canada Bike Trail. Although the<br />
name implies traveling on beaten tracks, in fact the tour<br />
mostly leads over abandoned railways – a sporty option<br />
of following in Mackenzie's footsteps from the prairies to<br />
the Pacific Ocean. But, here too, you may well not<br />
encounter another living soul for days.<br />

Zeiten und den Goldrausch wie in Klondike um 1897 verewigte<br />
auch Jack London in seinen weltberühmten Büchern. So verfestigte<br />
sich ein Mythos von Freiheit, Wohlstand und Abenteuer, der bis<br />
heute viele Besucher nach Kanada lockt und fasziniert.<br />

Goldgräber sind allgegenwärtig.<br />
Freiheit und Weite<br />
Kanadas Bevölkerungsdichte ist eine der niedrigsten der Welt. Jenseits<br />
der Städte gibt es kaum Ortschaften – nur eine halbe Stunde<br />
hinter Vancouver beginnt die Wildnis. Meist gruppieren sich einige<br />
Häuser um die einzige Tankstelle weit und breit. Die Menschen<br />
hier draussen leben ruhig und abgeschieden, ihre Häuser verteilen<br />
sich auf grosse, weit auseinanderliegende Grundstücke. Alberta<br />
besitzt noch boreale Urwälder, die nie von Menschen beeinflusst<br />
wurden. Wer hier Natur pur erleben will, muss auf Hotelkomfort<br />
weitgehend verzichten. Am besten mietet man eines der üppig<br />
ausgestatteten Wohnmobile. Die Campingplätze sind gepflegt und<br />
liegen oft an den schönsten Plätzen mitten im Naturpark. Wenn<br />
nachts unterm gewaltigen Sternenhimmel die Glut in der Feuerstelle<br />
langsam verglimmt, Kojoten heulen und sich am nahe<br />
ge legenen Seeufer die Silhouette eines Grizzlys abzeichnet, dann<br />
ist man mittendrin in der kanadischen Einsamkeit.<br />
Wildnis und Abenteuer<br />
Jede längere Tour in die Wildnis muss vorbereitet werden, man<br />
braucht eine mindestens semiprofessionelle Ausrüstung mit<br />
Rucksack, fester Kleidung, Nahrungsmitteln, Werkzeug, Erste-Hilfe-<br />
Pack, Kompass und Karte. Denn in der unberührten Natur fühlen<br />
sich nicht nur stadtmüde Ausflügler wohl, sondern auch Raubtiere<br />
wie Pumas, Grizzlys und Weisskopfadler. Eine Begegnung sollte<br />
man durchaus einkalkulieren und die empfohlenen Verhaltensregeln<br />
beachten. Das gilt auch z. B. für eine Tour auf dem West<br />
Canada Bike Trail, obwohl dieser Name so klingt, als bewege man<br />
sich auf ausgetretenen Pfaden: Er führt grösstenteils über stillgelegte<br />
Bahntrassen – eine sportliche Variante, auf Mackenzies<br />
Spuren von den Prärien zur Pazifikküste zu gelangen. Doch auch<br />
hier kann es passieren, dass man tagelang keinem Menschen<br />
begegnet.<br />

Alexander Mackenzie (1764–1820), un pionnier et commerçant<br />
inlassable, découvrit et viabilisa des voies commerciales importantes<br />
à travers le pays. Des rivières et des rues portent son nom, et<br />
son livre « Exploration du Grand <strong>No</strong>rd Canadien, voyage en canoë<br />
d'écorce », publié en 1793, est lu encore aujourd’hui. Les traces<br />
des marchands de fourrure et des chercheurs d’or sont omniprésentes<br />
dans l’Ouest canadien : les maisons de style colonial et les<br />
villes fantômes témoignent de l’époque des pionniers. Cette<br />
époque agitée et les ruées vers l’or, comme au Klondike aux alentours<br />
de 1897, sont le sujet de nombreux romans célèbres de Jack<br />
London. Ainsi fut créé le mythe de liberté, prospérité et aventure<br />

Liberté et étendue<br />
La densité de population du Canada est l’une des plus basses au<br />
monde. Au-delà des villes il n’existe guère de localités – les terres<br />
sauvages commencent à une demi-heure de Vancouver. Les<br />
quelques maisons que l’on trouve se regroupent souvent autour<br />
de la seule station-service de la région. Les habitants de ces régions<br />
vivent une vie tranquille et isolée au milieu de la nature, leurs<br />
maisons se trouvant sur des terrains vastes et espacés. L’Alberta<br />
possède encore des forêts boréales intactes n’ayant subi aucune<br />
intervention humaine. Pour découvrir cette nature vierge, il faut<br />
renoncer au confort hôtelier. La meilleure solution est de louer un<br />
camping-car bien équipé. Les campings sont bien entretenus et se<br />
trouvent souvent aux plus beaux endroits au cœur du parc naturel.<br />
Lorsque les braises commencent à s’éteindre sous la magnifique<br />
voûte étoilée, que les coyotes hurlent et la silhouette d’un grizzly<br />
se dessine sur le bord du lac voisin, on ressent la nature dans son<br />
plus pur état.<br />
Terres sauvages et aventure<br />
Toute excursion prolongée dans les terres sauvages doit être bien<br />
préparée : il faut un équipement au moins semi-professionnel,<br />
comprenant un sac à dos, des vêtements appropriés, de la nourriture,<br />
des outils, un kit de premiers secours, une boussole et une<br />
carte. La nature vierge attire non seulement les excursionnistes en<br />
quête d’aventure, mais également les animaux prédateurs comme<br />
les pumas, les grizzlys et les pygargues à tête blanche. Il faut donc<br />
s’attendre à une rencontre avec eux et respecter strictement les<br />
consignes de comportement. Cela s’applique également aux<br />
excursions sur le West Canada Bike Trail, même si son nom laisse<br />
croire qu’il s’agit d’un sentier battu. Il suit pour la plupart des tracés<br />
de chemin de fer abandonnés : un moyen sportif de rejoindre la<br />
côte pacifique sur les traces de Mackenzie. Mais même sur ce<br />
chemin il est possible de ne pas rencontrer âme qui vive pendant<br />
plusieurs jours.<br />

A magnificent firework sparkles and<br />
descends as a brilliant bouquet or<br />
glittering fountains in cascades and<br />
comet-like hail. Many, many thousands<br />
of tourists and locals are on<br />
foot in Vancouver’s West End looking<br />
up at the colorfully lit night sky.<br />
The “Celebration of Light“, an annual international fireworks<br />
display competition, is nearing its loud and multi-colored climax.<br />
A fascinating spectacle takes its course over English Bay.<br />
Carnival atmosphere: Asia greets with fireworks<br />
I was fortunate to be able to watch the spectacle from a special<br />
place: Every year, the Canadian liberal party member, William<br />
Graham, invites good friends, companions and international guests<br />
on his roof balcony allowing an exclusive view of the show of lights;<br />
a festival originally introduced by pyrotechnicians of Chinese descent.<br />
Tolerance and a mild political climate complement each other<br />
against weather conditions in this immigrant city.<br />
Architectural and natural diversity<br />
After the last fireworks have been set off, we move from the West<br />
End to the city center. Cars are hopelessly out of place here; the<br />
Beach Avenue towards Davie Village is completely overcrowded.<br />
Houses in British Art <strong>No</strong>uveau style line the beach promenade<br />
before the first skyscrapers appear behind the lively shopping and<br />
entertainment areas of Robson and Hornby Street. It is the architectural<br />
diversity which makes Vancouver a very popular film set for<br />
Hollywood’s Dream Factory. And nature also offers its own stunning<br />
backdrop: The Pacific Ocean opens up behind the picturesque<br />
Vancouver Island. The mountains of the Blackcomb Region rise up<br />
inland; here lies the famous ski resort Whistler, home to the 2010<br />
Winter Olympics.<br />
We join the happy excited crowd and leave the sumptuous nature<br />
of Stanley Park behind us. Totem poles remind us of the “First<br />
Nations“, <strong>No</strong>rth America’s first inhabitants. They rest quietly between<br />
the forests – just a few hundred meters from the bustle of<br />
modernity. Meanwhile, gentle summer winds disperse the last<br />
clouds of smoke left over from the tremendous firework display.<br />
<strong>No</strong>w only the sparkling stars light up the heavens.<br />

internationale Gäste auf seine Dachterrasse mit exklusivem Blick<br />

La « Celebration of Light », la compétition annuelle internationale<br />
de feux d’artifice, s’approche de son apogée bruyante et haute en<br />
couleurs. Un spectacle fascinant se déroule au-dessus de la Baie<br />

Fête populaire : un spectacle d’origine asiatique<br />
J’ai la chance de pouvoir admirer ce spectacle depuis un endroit<br />
particulier : le politicien libéral canadien William Graham a, comme<br />
tous les ans, invité des amis, compagnons et invités internationaux<br />
à le rejoindre sur sa terrasse de toit avec vue exclusive sur le spectacle<br />
de lumière, issu d’une compétition entre les pyrotechniciens<br />
d’origine chinoise. Dans cette ville d’immigrants tolérante, le climat<br />
politique est aussi doux que le climat réel.<br />

Nachdem die letzten Feuerwerkskörper gezündet sind, gehen wir<br />
vom West End ins Stadtzentrum. Autos haben keine Chance, zu<br />
überlaufen ist die Beach Avenue in Richtung Davie Village. Häuser<br />
im britisch geprägten Jugendstil säumen die Uferpromenade,<br />
bevor die ersten Wolkenkratzer hinter den quirligen Einkaufs- und<br />
Ausgehmeilen der Robson und Hornby Street auftauchen. Die<br />
architektonische Vielfalt macht Vancouver zu einem beliebten Film-<br />
Set der Traumfabrik Hollywood. Und die Natur bietet ebenfalls eine<br />
grossartige Kulisse: Hinter der malerischen Vancouver Island öffnet<br />
sich das weite Meer. Landeinwärts erhebt sich das Gebirge der<br />
Blackcomb-Region mit dem berühmten Ski-Ort Whistler, wo 2010<br />
die Olympischen Winterspiele stattfanden.<br />
Wir schliessen uns der freudig aufgeputschten Menge an und<br />
lassen die üppige Natur des Stanley Park hinter uns. An die „First<br />
Nations“, die ersten Einwohner <strong>No</strong>rdamerikas, erinnern Totempfähle.<br />
Nur wenige hundert Meter vom Trubel der Moderne entfernt<br />
ruhen sie dort zwischen Wäldern. Lauer Sommerwind<br />
vertreibt derweil die letzen Rauchschwaden des gewaltigen Feuerwerks.<br />
Jetzt glitzern oben am Firmament allein die Sterne. <br />
Diversité architecturale et naturelle<br />
Après l’explosion des dernières pièces d’artifice, nous rejoignons le<br />
centre-ville. Les voitures n’ont aucune chance, la Beach Avenue est<br />
beaucoup trop peuplée. Des maisons Art <strong>No</strong>uveau d’inspiration britannique<br />
longent le quai avant que les premiers gratte-ciel fassent<br />
leur apparition derrière les quartiers animés des Robson et Hornby<br />
Street. Sa diversité architecturale fait de Vancouver un lieu de<br />
tournage prisé de l’industrie hollywoodienne. La nature offre, elle<br />
aussi, un décor magnifique : derrière la pittoresque île de Vancouver<br />
s’étend l’océan immense. Vers l’intérieur du pays on aperçoit les<br />
montagnes de la région de Blackcomb avec la célèbre station de<br />
ski de Whistler, lieu de déroulement des Jeux Olympiques d’hiver<br />

Since December 2010, Air France has gradually<br />
been introducing a “full sleep seat“ in<br />
its new Business Class cabin. The seat is<br />
longer, wider and more spacious and has<br />
been totally redesigned to optimize travel<br />
experience. Air France has been working<br />
with ergonomists and customers to provide<br />
additional comfort while preserving the<br />
overall dimensions (over 2 metres making<br />
it one of the most spacious seat-beds on<br />
the market).<br />
Other new features have also caught customer’s<br />
attention:<br />
– its ease of use,<br />
– its different relaxation positions<br />
(including during take-off and landing),<br />
– improved storage space.<br />
Inaugurated between Paris-Charles de<br />
Gaulle and New York-Newark, the new<br />
long-haul Business Class seats will be installed<br />
in 26 aircraft by summer 20<strong>11</strong>. Air<br />
France has decided to accelerate the implementation<br />
of the new seats by equipping<br />
63 aircraft by summer 2012. The new<br />
Business Class seats are available on flights<br />

International technique, regional growing area<br />
Today, not only indigenous but recently also exotic herbs and spices<br />
are being planted in Canada’s western area. In particular, preparation<br />
techniques from other parts of the world – Japan, China, and<br />
Europe – are being carefully copied. And so, a modern and diverse<br />
cuisine was developed. Naturally, the biodiversity of the region and<br />
an awareness of organic nutrition are also contributing factors. In<br />
addition to fish and seafood, traditional components can also be<br />
found on the menu of fine restaurants. Today, no guest has to go<br />
without enjoying a bison steak served with maple syrup – Canada's<br />
symbol – both originating from the “First Nations“, the original<br />
inhabitants of Canada. The Canadians are proud of their culinary<br />
heritage and modify it with great care.<br />
Bison Rib Eye (or Beef Entrecôte) with sweet potatoes and<br />
seasoned butter<br />
For centuries, the bison characterized the <strong>No</strong>rth American landscape.<br />
Today, its meat is a delicacy as the bison cannot be domesticated.<br />
Bisons live – as they have always lived – in the wild, eating<br />
only the various types of and herbs that give their meat a special<br />
flavor. If you ever have the opportunity to buy bison steak, don't<br />
hesitate – buy it! However, for this aromatic dish, you can also use<br />
a well-matured entrecôte supplied by your own trusted butcher.<br />
Preparation: Wash the meat and gently pat it dry, reserve and allow<br />
to warm up. Use the hand mixer to blend the butter with the<br />
cranberries, parsley and maple syrup. Add salt, lemon juice and chili<br />
powder to taste. Roll the mixture in clear film and allow it to slightly<br />

freeze in the deep freezer. Preheat the oven to 200°C. Finely chop<br />
the herbs. Place the sweet potatoes in a dish, mix them with olive<br />
oil, garlic and half of the coriander. Line a baking tray with baking<br />
paper and distribute the sweet potatoes evenly. Bake in the oven<br />
for about 40 minutes. The sweet potatoes should be slightly crisp.<br />
Mix in the remaining coriander leaves just before the end of the<br />
cooking time and salt the potatoes. Heat butter and oil in a<br />
sufficiently large pan until the butter foams. Add the steaks and fry<br />
3–4 minutes on each side; then wrap them in aluminum foil and<br />
allow them to rest for at least 5 minutes. Serve the sweet potatoes<br />
on the plate together with the meat. Cut the prepared herb butter<br />
in slices and place on the steaks – serve immediately! <br />

Bison Rib Eye with sweet potatoes and seasoned<br />
butter<br />
Ingredients – serves 4: 4 steaks à 200 g,<br />
1 kg sweet potatoes, peeled in pieces, 3<br />
cloves of garlic, peeled and finely chopped,<br />
10 stalks coriander, 5 stalks parsley<br />
(the smooth kind), 100 g soft butter,<br />
25 g maple syrup, 1 pinch of chili powder,<br />
1 tbsp dried cranberries, chopped, 3 tbsp<br />
olive oil, a little butter and oil for the<br />
frying pan, possibly a little lemon juice,<br />
salt/pepper<br />
Bison Rib Eye (ersatzweise Entrecôte vom Rind)<br />

Bisons prägten über Jahrhunderte die Landschaft <strong>No</strong>rdamerikas.<br />
Heute ist ihr Fleisch eine Delikatesse, da Bisons nicht domestiziert<br />
werden können. Sie leben wie eh und je in freier Wildbahn, ernähren<br />
sich ausschliesslich von Gräsern und Kräutern, was ihrem<br />
Fleisch einen besonderen Geschmack verleiht. Sollten Sie die<br />
Möglichkeit haben, Bisonsteaks zu erstehen, dann sollten Sie<br />
nicht zögern, sondern zugreifen! Ersatzweise verwenden Sie für<br />
dieses aromatische Gericht ein gut abgehangenes Entrecôte vom<br />
Metzger Ihres Vertrauens.<br />
Zubereitung: Das Fleisch waschen und sorgfältig trocken tupfen,<br />
zur Seite stellen und Temperatur gewinnen lassen. Die Butter zusammen<br />
mit den Cranberries, der Petersilie und dem Ahornsirup<br />
mit dem Handrührer aufschlagen. Mit Salz, Zitrone und Chilipulver<br />
abschmecken. In Klarsichtfolie gerollt im Gefrierfach anfrieren<br />
lassen. Den Ofen auf 200 Grad vorheizen. Die Kräuter fein hacken.<br />
Die Süsskartoffeln in eine Schüssel geben, mit dem Olivenöl, dem<br />
Knoblauch und der Hälfte des Korianders mischen. Ein Backblech<br />
mit Backpapier auslegen und die Süsskartoffeln darauf verteilen.<br />
In den Ofen schieben und ca. 40 Minuten lang backen. Die Süsskartoffeln<br />
sollen anschliessend leicht kross sein. Kurz vor Ende der<br />
Bison Rib Eye mit Süsskartoffeln und gewürzter<br />
Butter<br />
Zutaten für 4 Personen:, 4 Steaks á 200 g, 1 kg<br />
Süsskartoffeln, geschält in Stücken, 3 Knoblauchzehen,<br />
geschält und fein gehackt, 10 Stängel<br />
Koriander, 5 Stängel glatte Petersilie, 100 g<br />
weiche Butter, 25 g Ahornsirup, 1 Msp. Chilipulver,<br />
1 El getrocknete Cranberries, gehackt, 3 El<br />
Olivenöl, etwas Butter und Öl für die Pfanne,<br />

Les bisons ont marqué les paysages d’Amérique du <strong>No</strong>rd pendant<br />
des siècles. De nos jours leur viande est une délicatesse, car les<br />
bisons ne peuvent pas être domestiqués. Ils vivent encore en liberté<br />
et se nourrissent exclusivement d’herbes, ce qui confère à leur<br />
viande un goût très particulier. Si vous avez la possibilité d’acheter<br />
des steaks de bison, n’hésitez pas à saisir l’occasion ! Alternativement<br />
vous pouvez préparer ce plat aromatique avec des entrecôtes<br />
de bœuf de bonne qualité.<br />
Préparation : Laver et essuyer soigneusement la viande, puis la<br />
mettre de côté afin de la porter à température ambiante. Mélanger<br />
le beurre, les canneberges, le persil et le sirop d’érable avec un<br />
batteur à main. Assaisonner de sel, citron et poudre de chili.<br />
Envelopper de film transparent et mettre au congélateur. Préchauffer<br />
le four à 200 degrés. Hacher finement les herbes. Mettre les<br />
patates douces dans un bol et les mélanger avec l’huile d’olive,<br />
l’ail et la moitié de la coriandre. Poser du papier cuisson sur une<br />
plaque à four et étaler les patates douces dessus. Laisser cuire au<br />
four pendant env. 40 minutes. Les patates devraient devenir<br />
légèrement croustillantes. Peu avant la fin de la cuisson ajouter le<br />
reste de la coriandre et saler les patates. Faire chauffer l’huile et le<br />
beurre dans une poêle suffisamment grande jusqu’à ce que le<br />
beurre mousse. Ajouter les steaks et faire dorer 3-4 minutes de<br />
chaque côté, puis les envelopper d’aluminium et laisser reposer<br />
pendant au moins 5 minutes. Poser les patates douces et la viande<br />
sur des assiettes. Couper le beurre assaisonné en tranches et le<br />
poser sur les steaks, puis servir immédiatement.<br />

C’est ainsi que la « <strong>No</strong>rthwest Coast Cuisine », qui est devenue un<br />
véritable produit de marque, s’est établie dans l’Ouest canadien.<br />

Dans l’Ouest canadien l’on cultive non seulement les plantes<br />
indigènes, mais également des herbes et des épices jusqu’à<br />
récemment exotiques. Les techniques de préparation sont cependant<br />
importées d’autres parties du monde : Japon, Chine et Europe.<br />
Une cuisine moderne et variée a ainsi pris naissance. La biodiversité<br />
de la région et l’intérêt pour l’alimentation biologique y ont bien<br />

One of the most beautiful spots in Vancouver is the Promenade<br />
on the Banks of the English Bay – and not only because of the<br />
spectacular sunsets. This is where people meet for sports and fun,<br />
enjoy excellent cuisine in the many eateries or in even better sushi<br />
restaurants. By the way, the most important sport in Vancouver is<br />
ice hockey. This summer the Vancouver Canucks finally made it to<br />
the finals in the Stanley Cup again but sadly lost out to Boston.<br />
A place with real flair is Vancouver’s Granville Island. A cultural<br />
and gourmet quarter with its many restaurants, night clubs and<br />
Vaudeville shows established itself in the harbor district. The main<br />
attraction is the city’s market with its overwhelming selection of<br />
flowers, fruit, meat, vegetables, game and much more.<br />
Vancouver Island is a place not to be missed – here, Tofino at the<br />
Pacific Coast is particularly beautiful. This trip is a “nature-pure“<br />
experience with whales, bears and rain forest. The ferry takes<br />
about two hours and then another two hours to Tofino.<br />
Vancouver is multi-cultural, lively and liberal. For me it is, and will<br />
most probably always be, the most beautiful city in the world! <br />

Nicht verpassen sollte man Vancouver Island, besonders schön ist<br />
Tofino an der Pazifikseite. Dieser Ausflug ist Natur pur, mit Walen,<br />
Bären und Regenwald. Etwa zwei Stunden braucht die Fähre, bis<br />
nach Tofino sind es noch einmal rund zwei Stunden.<br />

dans des restaurants excellents ou dans des bars de sushi encore<br />
meilleurs. Le plus important sport à Vancouver est le hockey sur<br />
glace. Cet été les Vancouver Canucks ont enfin participé à nouveau<br />
à la Coupe Stanley, mais ils ont perdu contre Boston.<br />
Granville Island possède un charme particulier : l’ancienne zone<br />
portuaire fut transformée en un quartier culturel et gastronomique<br />
avec des restaurants, des clubs et des spectacles. Son attraction<br />
principale est son marché, proposant un choix immense de fleurs,<br />
fruits, viandes, poissons, gibier et beaucoup plus.<br />
Il faut absolument visiter l’île de Vancouver, notamment Tofino du<br />
côté de l’océan Pacifique. On y trouve la nature pure : baleines,<br />
ours et forêt vierge. Il faut compter environ deux heures pour le<br />
trajet en ferry, puis encore deux heures pour arriver à Tofino.<br />
Vancouver est une ville multiculturelle, animée et libérale. Pour moi<br />
c’est la plus belle ville au monde !<br />

Western Canada’s economy is an example<br />

trade. The entire sea trade with Asia is<br />
handled via both the Pacific ports of<br />
Vancouver and Prince Rupert.<br />
Established in 1783 in Montreal, the <strong>No</strong>rth West Company (NWC)<br />
laid the foundation for trade in the west. The company dealt in<br />
furs and was in competition to the British Hudson’s Bay Company<br />
already founded in 1670. In 1821, after mutual attacks on trading<br />
posts and hostile disputes, the government forced a merger under<br />
the umbrella of the Hudson’s Bay Company, one of oldest companies<br />
still in existence today.<br />
Founded on fur trade and gold rush<br />
Western Canada’s economy was initially based on four trade products:<br />
fish, fur (beaver pelts), wood and grain (wheat). From 1858,<br />
gold prospectors streamed to the Fraser River. Most settlements<br />
developed as a result of the fur trade or the gold rush: Victoria,<br />
today’s provincial capital of British Columbia, was founded in 1853<br />
as a trading post for the Hudson’s Bay Company. Vancouver owes<br />
its growth to a wave of immigrants following the Fraser gold rush<br />
and then experienced a further burst of development when it<br />
became the station for the Canadian Pacific Railway (CPR).<br />
There’s a lot in the ground<br />
Today, the west has an efficient economy in agriculture and forestry<br />
as well as a plentiful supply of raw materials. The multinational timber<br />
companies in British Columbia are among the world’s largest<br />
exporters of timber; the timber industry also benefits in particular<br />
from its trade with China. Almost a quarter of Canada’s agricultural<br />
output is produced in Alberta – with focus on grain, fruit and<br />
vegetables. Many ranches in the prairies are once again keeping<br />
bison. The multi-billion oil sand industry in the province of Alberta<br />
is one of Canada’s most dynamic economic sectors. However,<br />
processing oil sand not only requires high energy and water consumption<br />
but also produces pollutants. Therefore, the industry is<br />
now planning large investments in the field of environmental<br />
protection. In addition, Alberta also promotes biomass facilities and,<br />
after Ontario and Quebec, is Canada’s third largest location for wind<br />
power stations. With its enormous hydroelectric and thermal power<br />
stations, Western Canada is among the world’s leading energy<br />

Den Grundstein für den Handel im Westen legte die 1783 in<br />

Es steckt viel im Boden<br />
Heute hat der Westen eine leistungsfähige Land- und Forstwirtschaft<br />
und reiche Rohstoffvorkommen. Die multinationalen<br />
Holzfirmen in British Columbia gehören zu den weltgrössten Holzexporteuren,<br />
und auch die Holzwirtschaft profitiert insbesondere<br />
vom Handel mit China. In Alberta wird knapp ein Viertel des landwirtschaftlichen<br />
Outputs Gesamt-Kanadas produziert – schwerpunktmässig<br />
Getreide, Obst und Gemüse. Viele Ranches in den<br />
Prärien halten wieder Bisons. Die milliardenschwere Ölsandindustrie<br />
in der Provinz Alberta ist einer der dynamischsten Wirtschaftszweige<br />
Kanadas. Die Verarbeitung von Ölsand verbraucht<br />
allerdings viel Energie und Wasser und produziert Schadstoffe. Die<br />
Industrie plant daher nun hohe Investitionen in den Umweltschutz.<br />
Zusätzlich fördert Alberta Biomasse-Anlagen und ist, nach Ontario<br />
und Quebec, Kanadas drittgrösster Standort für Windkraftanlagen.<br />
Mit seinen riesigen Wasser- und Wärmekraftwerken zählt Westkanada<br />

Un sol riche<br />
De nos jours l’Ouest canadien possède des industries agricole et<br />

multinationales du bois en Colombie-Britannique font partie des<br />
plus grands exportateurs de bois au monde, et l’industrie forestière<br />
profite notamment du commerce avec la Chine. Près d’un quart<br />
de la production agricole du Canada provient de l’Alberta, en première<br />
ligne des céréales, des fruits et des légumes. De nombreux<br />
ranchs dans les prairies tiennent à nouveau des bisons. L’industrie<br />
milliardaire des sables bitumineux dans l’Alberta est l’un des secteurs<br />
économiques les plus dynamiques du Canada. L’exploitation<br />
des sables bitumineux nécessite cependant beaucoup d’énergie et<br />

friends are just as far away as families. Everything is different: the<br />
job, the employer, day-to-day life. And the more areas of life that<br />

Get advice!<br />
Experienced emigrants therefore advise: Try to change as little as<br />
possible. If you are going to emigrate at all, then at least stay true<br />
to your job or your industry. After having previously only worked in<br />
insurance, opening up a speciality restaurant is not really a good<br />
idea. It is also advisable to get some advice from a job coach. He<br />
will support you and help you to adapt to your new country and<br />
the unfamiliar environment – both from a professional as well as a<br />

professional networks are also good opportunities to apply oneself<br />
and at the same time get to know people.<br />
Of course: This is time-consuming and involves effort. And the<br />
first thing you will have to do is to lose your reserve. But, it is<br />
worthwhile. It is the only way to actually “arrive“ in the country of<br />
your choice.<br />

mémorisez les noms et les visages. Il est très important de savoir<br />
ce qui préoccupe les gens qui vous entourent. Quels sont leurs<br />

Dealing with bears made easy<br />
The good news first: If you do ever find yourself face to face with a<br />
bear whilst wandering through the Canadian wild in most cases he<br />
will not attack you. Recommended behaviour: Keep calm, speak in<br />
a normal tone of voice and move your arms up and down. Retreat<br />
slowly and never turn your back on him. If he nevertheless attacks<br />
you, then you must defend yourself with all possible means, e.g.<br />
a bear-repellent spray. The spray is based on Cayenne pepper<br />
and causes severe burning when coming into contact with the<br />
mucous membranes or the eyes. As most airlines refuse to<br />
transport such sprays, you should buy one locally for example at<br />
Mountain Equipment Co-op’s outdoor shops.<br />

Redesigned and renovated<br />
All summer long, craftsmen have been hard at work at the<br />
Radisson Blu Scandinavia Hotel in Duesseldorf. All of the four-star<br />
business hotel’s 309 rooms were redesigned and renovated, floor<br />
by floor, and supplemented by five brand new guest rooms. Wholly<br />
in keeping with Scandinavian-style furnishings, the designers<br />
developed a clear concept: fresh colours, high-quality materials and<br />
clean lines. And the state-of-the art rooms come with matching<br />
technology: it goes without saying that flat screens and complimentary<br />
high-speed wireless Internet are available throughout the<br />
hotel. The lobby also got a facelift and now presents itself in bright<br />
colors, premium building materials and modern straight lines<br />
replacing the existing interior design. The rearranged reception and<br />
business areas and a stylish bar and lounge – complete with large<br />
fireplace and seating areas that are great for relaxing in real comfort<br />
– all serve to make guests feel “at home“. As from September, the<br />
restaurants and health and beauty areas will be positively aglow<br />
with their warmth and friendliness.<br />

Pendant tout l'été, des équipes ont travaillé pour transformer<br />
l’hôtel Radisson Blu Scandinavia à Düsseldorf. Les 309 chambres<br />
de cet hôtel d'affaires quatre étoiles ont été rénovées et réaménagées,<br />
étage par étage, et cinq nouvelles chambres ont été créées.<br />
Les décorateurs ont travaillé à partir d'un concept clair, dans le<br />
respect total du style scandinave : des couleurs fraîches, des<br />
matériaux de qualité et des lignes épurées. Et ces chambres totalement<br />
repensées sont équipées d'une technologie de pointe : bien<br />
entendu, des écrans plats et l'accès Internet sans fil haut débit<br />
sont disponibles partout dans l'hôtel. L'entrée a elle aussi été<br />
relookée, avec des couleurs vives, des matériaux haut de gamme<br />
et des lignes modernes et pures pour remplacer l'ancienne décoration.<br />

bar salon élégant, avec grande cheminée et sièges confortables<br />
