2 cooked smoked mackerel fillets<br />
3 slices wholewheat bread<br />
4 cherry tomatoes, halved<br />
1 h watercress<br />
dressing:<br />
2 T crème fraiche<br />
½ t lemon zest, grated<br />
½ t lemon juice<br />
1 t black pepper<br />
Mix the dressing in a bowl. Refrigerate for 2 hours. Flake the mackerel on a slice of bread, top<br />
with tomatoes and watercress, then add the other slice. Grill for 2-3 minutes. Sprinkle the<br />
dressing over the food.<br />
