organisch geteeld. We kunnen honderd procent

is een creatief product. Dat vergt veel tijd en energie.

De perfecte blend
We kopen onze specerijen bij kleine, lokale
initiatieven. Veel Indiërs kweken peper en andere
specerijen op een lapje grond bij hun huis, voor eigen
gebruik of om wat bij te verdienen. Het zijn de puurste
producten die wij tegen een faire prijs kopen.
We hebben dagelijks contact met onze telers. En
we reizen een paar keer per jaar naar India om hen
te bezoeken. Zo houden we de vinger aan de pols,
blijven we op de hoogte van nieuwe ontwikkelingen. En
kunnen we ons aanbod voortdurend verfijnen.

Food Travellers verkoopt de beste specerijen uit
India: peper, chili, kurkuma, gember, fenegriek,
nootmuskaat, kardemom, komijn, koriander,
safraan, kruidnagel … alleen de kaneel komt uit Sri
Lanka, en de vanille uit Madagascar. Omdat je daar
nu eenmaal de beste kaneel en vanille vindt.
We maken onze eigen blends: verfijnde kruidenmengelingen
van tien tot twaalf specerijen die
extra diepte geven aan je gerechten. Daarvoor
laten we ons inspireren door de beste chefs: de
grootmoeders op het Indiase platteland. Maar we
geven wel onze eigen toets mee aan de blends.

De Kashmir chili is een pikante peper die behoort tot de familie van de paprika.
Oorspronkelijk komen deze pepers uit de Amerika’s. Ze werden door de Portugese
ontdekkingsreizigers overal ter wereld geïntroduceerd. Via Goa, eeuwenlang een
kolonie van Portugal, vond deze peper ook zijn weg naar India. Vandaag is India
de grootste producent van pepers ter wereld. De meeste pepers worden geoogst
in het zuiden, vooral in de deelstaat Tamil Nadu. Kashmir chili komt dus verrassend
genoeg helemaal niet uit Kashmir. Wel wordt deze peper in de Kashmirikeuken heel
vaak gebruikt in stoofpotjes van vlees en vis.
De Kashmir chili is vrij milde chilipeper. Hij blijft pikant maar heeft een zachtere,
minder hete nasmaak dan bijvoorbeeld India Extra Hot. Kashmir chili is dan ook zeer
geschikt om gerechten een extra pittige dimensie te geven zonder ze al te pikant
te maken. Bovendien geeft de Kashmir chili uw gerechten een mooie, volle, typisch
rode kleur. Kashmir chili is rijk aan vitamine C en is zeer goed voor de spijsvertering.
