Hotel Mrak has always been known for its excellent traditional Slovenian cuisine. Thisphotograph of the Culinary School was taken in the hotel’s garden approximately 100years ago.
In the old hotel cookbooks, we found a handwritten recipe for a traditional Slovenian dishthat is still as popular today as it was a century ago. Here is a hundred-year-old recipefor Barley Soup by Hotel Mrak. You can make it yourself and share your experience ofcooking this traditional Slovenian dish on our social media.Barley Soup1 kg barley1 kg dried meat150 g beans2 carrots2 parsley roots with green leavesa slice of celery1 leeka few cabbage leavesa slice of kohlrabi1 oniona few cloves of garlic3-4 tomatoes1/2 kg of potatoes1 pepper, bay leaf, salt and pepperCook soaked barley and beans in a large pot,then add the meat. After one hour of slow boilingmix all the vegetables and spices. Half an hourbefore the dish is cooked, add diced potatoes.The salt is added just before the dish is finishedbecause of the salinity of the meat.Pick the vegetables out of the dish just beforeserving or, if you prefer the dish with vegetables,cut the raw vegetables into small pieces,cook it and then leave it in the dish. Cut the meatinto slices and serve aside the berley or cut intobite-size pieces and serve it mixed with barley andvegetables on the same plate.You can also offer sauerkraut or turnip with barley.
