Brusletto knives are made of stainless, hardened, carbon steel throughout.
The same quality of steel is used for all models regardless of whether they have a gloss or matte finish.
The difference between the two is achieved by polishing. The steel used in these knives is Sandvik 12c27, hardened to 57-58
Rockwell C. Most Brusletto knives have handles made of curly birch, a distinctive wood species renowned for its unique,
ornamental grain patterns. The handle is impregnated with linseed oil and polished so it requires little or no maintenance.
