The phrase “the whole is
greater than the sum of its
parts” is an uplift ing one,
implying that beauty and
wonder can be achieved
even by the meagre
contributions of a few
dedicated individuals.
This could also be
said about the Austrian
dish “Beuschel”, whose
ingredients include the
lungs and heart of a calf
(with a hint of trachea),
carrots, celery, onion,
sour cream, vinegar and
parsley. Now if that list
doesn’t make your mouth
water, you are not alone.
However, the resulting dish
is — typically for Austria — a
hearty and delicious meal
that’s popular in winter.

The word “Beuschel”
has also become a
slang term for a lung in
Austrian German, leading
to the wonderful word
“Beuscheltelefon”, meaning
“stethoscope”!

FLORENCE SYNDROME
Psychologists often name mental states after the places where they’re identifi ed, but
what does that tell us about the cities themselves?
If you’re going to be diagnosed with something, you could do a lot worse than
“Florence syndrome”. No, absolutely nothing to do with being mad about Florence
Welch of Florence and the Machine fame (above), but a rare condition in which
the sufferer is overwhelmed by the presence of art. Better known as “Stendhal
syndrome”, it was fi rst diagnosed in the 1980s by Italian psychiatrist Graziella
Magherini, who named it after 19th-century novelist Stendhal. After visiting the city
in 1817, 1 the Frenchman wrote: “As I emerged from the porch of Santa Croce, I was
seized sei with a fi erce palpitation of the heart… the well-spring of life was dried up
within wit me, and I walked in constant fear of falling to the ground.”
If you’re already on your way to take a look at Michelangelo’s David or Botticelli’s
The The Birth of Venus, don’t panic – they may be naked, but they’re highly unlikely to
induce ind palpitations. Rather, it’s thought that the jaw-dropping beauty of Florence can
over-stimulate ove
an already troubled mind, bringing previously held anxieties bubbling
