said about the Austrian<br />

dish “Beuschel”, whose<br />

ingredients include the<br />

lungs and heart of a calf<br />

(with a hint of trachea),<br />

carrots, celery, onion,<br />

sour cream, vinegar and<br />

parsley. Now if that list<br />

doesn’t make your mouth<br />

water, you are not alone.<br />

However, the resulting dish<br />

is — typically for Austria — a<br />

hearty and delicious meal<br />

that’s popular in winter.<br />

FLORENCE SYNDROME<br />

Psychologists often name mental states after the places where they’re identifi ed, but<br />

what does that tell us about the cities themselves?<br />

If you’re going to be diagnosed with something, you could do a lot worse than<br />

“Florence syndrome”. No, absolutely nothing to do with being mad about Florence<br />

Welch of Florence and the Machine fame (above), but a rare condition in which<br />

the sufferer is overwhelmed by the presence of art. Better known as “Stendhal<br />

syndrome”, it was fi rst diagnosed in the 1980s by Italian psychiatrist Graziella<br />

Magherini, who named it after 19th-century novelist Stendhal. After visiting the city<br />

in 1817, 1 the Frenchman wrote: “As I emerged from the porch of Santa Croce, I was<br />

seized sei with a fi erce palpitation of the heart… the well-spring of life was dried up<br />

within wit me, and I walked in constant fear of falling to the ground.”<br />
