Marketing
As noted on page 10, you will need to decide what type of operation you are
going to manage.
One of the biggest decisions a bison producer must make in their operation
is how to market their bison. Unlike the cattle industry, the marketing
options for bison are endless and limited only by the producer’s imagination
and energies.
Although bison have been in North America for centuries, the bison meat
industry is very new. Producers, Meat marketers and National and State/
Regional Associations have worked diligently, and will continue to work, in
recent years to promote bison meat and to familiarize the consumer on bison
meat’s nutritional benefits blended with the knowledge of its fabulous flavor.
It is essential prior to proceeding with any marketing that an
operator investigates all regulations and legal restrictions enforced
by their local and state agencies as well as federal regulations.
