Grilled Fish<br />

in Aluminum Foil<br />

Walleye, perch, or other fish fillets<br />

Butter<br />

Juice from a lemon or lemon concentrate<br />

Your favorite spices such as lemon pepper, cajun<br />

seasoning, dill, parsley, etc.<br />

Aluminum foil; sheets large enough to wrap each fillet<br />

to make a pouch<br />

Aluminum foil and a grill provide a convenient,<br />

no-fuss way to prepare dinner with your catch <strong>of</strong> the<br />

day while at the cottage, campground, or at home.<br />

The potato recipe provides an easy to prepare, tasty<br />

side dish.<br />

Place each fillet on sheet <strong>of</strong> aluminum foil. Spread<br />

butter on top <strong>of</strong> fillets. Sprinkle on spices and drizzle with<br />

lemon juice. Flip fillets and repeat with butter, spices, and<br />

lemon juice. Wrap fillets in foil, folding top and ends to make<br />

a pouch. Grill four to five minutes per side. The amount <strong>of</strong><br />

cooking time will vary with thickness <strong>of</strong> fillets, but they are<br />

done when fillets f<strong>lake</strong> easily.<br />

Cheesy Potatoes<br />

5 medium potatoes, peeled and thinly sliced<br />

1 medium onion, sliced<br />

6 tablespoons butter or margarine<br />

⅓ cup shredded cheddar cheese<br />

2 tablespoons parsley<br />

1 tablespoon Worcestershire sauce<br />

salt and pepper to taste<br />

⅓ cup chicken broth<br />

Aluminum foil, about 20 inches by 20 inches<br />

Place potatoes and onions on foil sheet; dot with butter.<br />

Combine cheese, parsley, Worcestershire sauce, salt and<br />

pepper; sprinkle over potatoes. Fold foil up around potatoes<br />

and add broth. Seal edges <strong>of</strong> foil tightly. Grill over medium<br />

coals for 35-40 minutes or until potatoes are tender. (Serves<br />

4 to 6.)<br />
