A big ‘thank you’ to the many hundreds of<br />
readers who returned the feedback <strong>for</strong>ms sent<br />
out with the last issue of the <strong>Food</strong> Magazine.<br />
We are working our way through the<br />
feedback <strong>for</strong>ms to see how we can improve the<br />
<strong>Food</strong> Magazine, and develop ideas <strong>for</strong> future<br />
articles, campaigns and product investigations.<br />
<strong>The</strong>y make fascinating reading, and just go to<br />
prove that our readers have an enormous range<br />
of knowledge and experience from right across<br />
the <strong>food</strong> system.<br />
It was also very heartening <strong>for</strong> us to find out<br />
that 99% of the readers who responded to the<br />
survey thought that the content is either<br />
‘excellent’ or ‘good’. Thank you!<br />
We pulled the names of five lucky readers<br />
out of the hat and have sent each of them a<br />
copy of the book Not On <strong>The</strong> Label (Guardian<br />
investigative journalist Felicity Lawrence’s<br />
brilliant exposé of UK <strong>food</strong> production).<br />
Kinsale fines 18th Century water cheats<br />
On a recent visit to Kinsale, in southern Ireland,<br />
we saw this text on an antique poster in the old<br />
courthouse. <strong>The</strong> <strong>Food</strong> Magazine often highlights<br />
the widespread practice of pumping <strong>food</strong> full of<br />
water. It is clear that our ancestors were up to<br />
the same tricks over 300 years ago!<br />

We find and present that whereas we are<br />
credibly in<strong>for</strong>med that some of the<br />
Inhabitants of this town make a practice of<br />
brewing with Gutter Water which it is to be<br />
feared may cause infection or by such nasty<br />
Custom at least bring a filthy Report on the<br />
place: <strong>for</strong> the future every person discovered<br />
so offending to pay two shillings six pence.<br />
Thanks Lucy – you’re quite right that the<br />
adulteration of <strong>food</strong> and drink has been a<br />
problem <strong>for</strong> centuries, as this poster shows.<br />
As <strong>Food</strong> Magazine readers will be aware,<br />
unscrupulous processors can now inject<br />
chicken with beef and pork proteins to make the<br />
meat act like a sponge: the more the weight of<br />
the water, the bigger the profit. At a meeting in<br />
January, to discuss the issue of water<br />
added to chicken, FSA officials<br />
reportedly could see no problem with<br />
describing water-filled meat in<br />
sandwiches as 'chicken', with E-number<br />
emulsifiers to hold the water in place.<br />
Just so long as the sm<strong>all</strong> print listed <strong>all</strong><br />
of the ingredients. If only the FSA would<br />
take such a modern and enlightened<br />
view as the people of 18th-century<br />
Kinsale, and simply fine <strong>food</strong> cheats <strong>for</strong><br />
watering down our <strong>food</strong>!<br />
