• Line a baking tray with baking paper.<br />
• In a mixing bowl combine flour, butter(80g) and salt.<br />
• Use your finger tips to rub the butter into the flour until the mixture resembles<br />
bread crumbs.<br />
• Add the water to the flour mixture and use a butter knife in a cutting motion to just<br />
mix ingredients together, add 1-2 more table spoons of extra water if the mixture is<br />
a little dry. Use your hands to bring the mixture together.<br />
• Mix the flour mixture with the warrigal greens and sweet potato.<br />
• Turn the mixture out onto a lightly floured bench and knead gently for 1 minute<br />
until smooth.<br />
• Divide the dough into 3 and shape into a disc shape. ( at home make one large 18cm<br />
disc) Place onto the tray.<br />
• Mark 8 wedges of top using a sharp knife that has been dipped in flour.<br />
• Bake for 20minutes or until damper is cooked through and sounds hollow when<br />
tapped on the base. (40minutes for one large damper)<br />
• Transfer to a rack and allow to cool for 5 minutes.<br />
• Serve warm with butter.<br />
Notes: <strong>Warrigal</strong> <strong>Greens</strong> are a leafy vegetable like spinach. They grow naturally along the<br />
gold coast beaches and creeks.<br />
