Keeping an Eye on Nutrition About 21 million older adults worldwide have some of their sight stolen by adult macular degeneration (AMD). The disease occurs when the macula, the part of the retina responsible for sharp vision, is damaged or its light-sensitive cells break down over time. Now, a new study of more than 2,000 adults older than age 55 published in the Archives of Ophthalmology identifies four key nutrients that reduce risk by as much as one-third — even for people prone to the disease. Start eating eye-friendly now to postpone or prevent vision problems later in life. Eye-Friendly Nutrient 1: Zinc The government advises women get 8 mg and men get 11 mg of zinc each day. People in the study who got a little more than 11 mg of this mineral were at lower risk for AMD than those who took in 7.5 mg. To get that amount, eat one of the following: • About one medium oyster • ¾ cup of a breakfast cereal fortified with zinc • 11 ounces of almonds Peter Pumpkin Squares Eye-Friendly Nutrient 2: Beta-Carotene There’s no government recommendation for this A vitamin, which gives fruits and veggies their red, orange, and yellow colors. Study participants at the lowest risk for AMD got between 5.5 and 6 mg a day. That’s the amount in each one of the following: • A little more than ½ cup of raw carrots • About ¹⁄³ cup of canned pumpkin • ½ cup of cooked kale Eye-Friendly Nutrient 3: Lutein/Zeaxanthin Most Western diets are low in these nutrients, which are plentiful in green leafy vegetables. Get your 3.25 mg, the average daily amount that cut risk in the study, by eating just one of these options: • 1 cup of raw spinach • 1 ½ cups of canned peas • 2 cups of cooked broccoli Eye-Friendly Nutrient 4: Omega-3 Fatty Acids These polyunsaturated fatty acids may help your heart as well as your eyes. Find them in fatty fish and vegetable oils. In a medium bowl, stir together the pumpkin, brown sugar, eggs, and oil. Mix well. In a large bowl, mix the flour, oats, cinnamon, baking powder, and baking soda. Add the pumpkin mix to the flour mix. Stir well. Grease a 9-by-13-inch baking pan with cooking spray. Pour the batter into the greased baking pan. Bake for 30 minutes.
