The short, coolgrowing season limits the scope of what is possiblein terms of style. 80% of all German wine is white, and most of that is very pleasant, straightforward, inexpensive, slightly sweet table wine. All of thewines, regardless of quality or grape variety, aredelightfully low in alcohol -- 7-10%, making themrefreshing and easy to drink. The slight sweetnessof most of German wine is balanced by livelyacidity, which keeps the wine from cloying as wellas making them enjoyable to drink with food. Thebest German wines are made from a single grapevariety, Riesling. Riesling produces a wine with abouquet of mingled fruit scents and steely, zesty, vibrant natural fruit flavors. The best wines (lookfor QmP, or Qualitatswein mit Prdikat -- "qualitywine with special attributes") are further identifiedby the terms "Kabinett", "Spatlese," and "Auslese."Like any other wine region, the reputation of theindividual producer is at least as important as anyother information provided by the label.Kabinett (Kah-bee-NETT) - a light, semi-dry(slightly sweet) wine.Spatlese (SHPATE-lay-zuh) - (late harvest) sweeterthan Kabinett, a late harvest wine.
