average Munro-bagger, having sailed the<br />

Atlantic and ski-trekked across the Alps<br />

in the past few years.<br />

won Pop Idol, during<br />

which time she has<br />

carved a successful<br />

career from the show.<br />

She has also shed an<br />

incredible ten stone in weight. This year<br />

saw a well-received run of Discotivity, a<br />

musical based on the nativity story, at<br />

the Edinburgh Festival. She has also<br />

bought a record label, presented her<br />

own show on BBC Radio Scotland and<br />

released a single from her new album.<br />

And if that weren’t enough, she’s thinking<br />

about opening a chain of juice bars.<br />

Trust, where she travels the length and<br />

breadth of Scotland, training reserve<br />

managers and keeping tabs on all the<br />

flora and fauna. She’s not one to sit still<br />

– you might also find her trekking in<br />

Peru, cycling around the Uists or<br />

boogying to live music (she’s a regular<br />

festival-goer).<br />

rebranding of the<br />

family dairy business, now the largest<br />

independent dairy in Scotland. A farmer’s<br />

daughter, Carol can lamb sheep and milk<br />

cows but prefers to spend her spare time<br />

cycling, running up hills or skiing.<br />

Design. Having gone back to her roots,<br />

she thrives on creating beautiful,<br />

sustainable gardens. Her unfaltering<br />

passion for plants continues in her<br />

writing and photography. Plants aside,<br />

you’ll find her enjoying a good hill-walk<br />
