SISTER SUZZETTE’S RECIPE CORNERHoney Must Dos!Curried Honey Sweet Potato Soup[ 1 T olive oil, 1 onion - diced, 4 medium-sized garlic cloves-peeled, 6 C (48 oz.) chickenor vegetable stock, 1 lb. sweet potatoes-peeled & cut into chunks, 1 medium russet potatopeeled& cut into chunks, 2 tsps. salt, 6 T Orange Blossom honey-divided, 1 medium redbell pepper-seeded & diced, 2 to 3 tsps. curry powder, 1/2 tsp. pepper, 1/2 tsp. groundginger, 1/4 C chopped fresh cilantro-optional ]Heat oil over medium-high heat in a soup pot. Add onion & sautee until translucent, 2 to 3minutes. Add garlic & sautee 1 minute. Add stock, potatoes & salt. Cover & simmer untilpotatoes are tender, about 15 minutes. Puree mixture in batches, put soup back over lowheat & add 5 T of the honey, bell pepper, curry powder, pepper & ginger. Bring to asimmer, taste & adjust seasonings. Microwave remaining 1 T honey for 5 seconds onHigh. Serve soup drizzled with a little warm honey & sprinkled with chopped cilantro, ifdesired. Serves 4 to 6.Grilled Honey-Glazed Pork Tenderloin with Onions[ 1/2 C Buckwheat honey, 1/4 C extra-virgin olive oil, 1/4 C cider vinegar, 1 T mincedgarlic, 2 tsp. Herbes De Provence seasoning mixture, 1 tsp. salt, 1/2 tsp. pepper, 2 lbs.pork tenderloin, 3 medium onions ]Combine honey, oil, vinegar, garlic, herbs, salt & pepper in a shallow pan. Add pork &turn to coat it well. Cover & refrigerate 2 to 4 hours. Turn pork occasionally. Remove panfrom refrigerator 30 minutes before grilling. Prepare grill for a medium-hot fire with anindirect heat area. Slice onions in rounds 1/2 to 3/4-inch thick. Remove pork from marinade& boil marinade 1 minute. Taste & add more salt if needed. Grill pork over indirectheat, covered, until the middle is about 145 degree F, 25 to 30 minutes. Brush pork generouslywith the marinade; turn every 10 minutes to evenly cook. Put onions over direct heat& brush with marinade. Turn frequently, brushing with marinade, until well marked &soft, 8 to 12 minutes. Move onions off direct heat to finish cooking. Let pork rest 5 minutesbefore slicing into 3/4-inch thick slices. Serve with grilled onions.Makes 4 to 6 servings.Fresh Tomato Chutney with Honey (condiment)[ 2 lb. tomatoes, 1 C honey, 1/2 tsp. cloves, 2 tsps. basil, 1/4 tsp. salt or to taste ]Cut tomatoes in half & squeeze to remove most of the seeds & juice. (This may be donequickly on an orange juice reamer.) The juice may be used in sauces or soups. Cut tomatoesinto small pieces & place in medium saucepan with honey, cloves & basil. Cook,uncovered, over low heat until thick, about 40 to 45 minutes. Stir occasionally. Add salt totaste. Chill. It only makes the strainingprocess easier and more effective. After straining, it’s time to bottle, label and distributethe honey to retail outlets.
