• Testing during production has several components that must be assessed:<br />
• Assess other like-products being produced as the “tested lot” of<br />
primal products may implicate other products.<br />
• Products that were part of the sampled lot <strong>and</strong> were subsequently<br />
rejected for quality or other reasons, must be tracked <strong>and</strong><br />
controlled. This includes leakers, damaged boxes, held product for<br />
specification review, etc.<br />
• Reconciliation of sampled boxes in inventory must occur. Boxes must be<br />
100% reconciled in inventory before samples are analyzed to ensure all<br />
product is under establishment control <strong>and</strong> no product is shipped prior to<br />
receipt of test results.<br />
VII. Bench Trim<br />
• Lot<br />
o All source material for bench trim must be tracked.<br />
o The lot should be linked to a production period.<br />
o If a sub-primal is made into a non-intact product the sub-primal should be held<br />
until bench trim results are received unless the sub-primals (post trimming, pretenderization,<br />
cubing or enhancement) are treated with an antimicrobial after<br />
trimming <strong>and</strong> prior to making non-intact product.<br />
o When sampling <strong>and</strong> testing bench trim from non-intact product you must take into<br />
account the non-intact sub-primals as part of the lot.<br />
o Bench trim produced after a sub-primal has been processed into non-intact should<br />
NOT be used in raw ground product.<br />
• <strong>Sampling</strong>:<br />
o <strong>Sampling</strong> should be performed exactly as described above in combo section. This<br />
would mean a minimum of 60 pieces, selected to maximize external surface area.<br />
If more than 60 pieces are sampled, it is permissible to reduce the length of the<br />
piece of trim to ensure maximum surface area <strong>and</strong> not exceed the 375 gram<br />
sample st<strong>and</strong>ard.<br />
