Six-pint Salsa<br />

INGREDIENTS<br />
5 lbs of tomatoes<br />
1 lb onions<br />
1 lb sweet peppers<br />
¾ cup or less of vinegar<br />
2 tbsp sugar<br />
1 to 2 tbsp pickling spice<br />
1 tin of tomato paste<br />
2-6 hot peppers<br />
2 garlic cloves<br />
¼ cup or less or chopped cilantro<br />
or parsley<br />
INTO THE POT: Once Neil has finished<br />
chopping all the ingredients, everything<br />
goes into the pot.<br />
METHOD<br />
Bring to a boil.<br />
Drain, reduce liquid.<br />
Can and process for 15 minutes.<br />

Kay and Neil do three batches of salsa.<br />
“The whole process takes about four<br />
hours,” she says “but we do take breaks<br />
in between.”<br />
And they have fun, too!<br />
