How to make
1. Clap the mint in your palms to releases the aromas and place at the bottom of the tall
glass.
2. Chop your half lime into pieces and place on top of the mint.
3. Add your sugar syrup on top of the mint and lime.
4. Muddle gently to release the lime juices.
5. Fill your glass 3/4 full with crushed ice (important to use crushed Ice to ensure maximum
flavour).
6. Pour in Rum and soda water.
7. Stir everything together well and top with further crushed ice and garnish with a mint
sprig.

Coconut Mojito
Ingredients for
50ml. Boracay Coconut Rum
1 Mint Sprig
7 Mint Leaves
2wedge(s) Lime
25ml. Sugar Syrup
1top(s) Soda Water
How to make

2. Add Grand Marnier or Orange Liqueur, Tequila and lime juice to the shaker.
Use a jigger to measure 35ml Grand Marnier or Orange Liqueur, 50ml Tequila and 25ml
lime juice to the shaker.
3. Shake until cold.
Shake until chilled.
4. Strain into a short glass.
Using a cocktail strainer, strain into a short glass
Frozen Margarita
Ingredients for
35ml. Grand Marnier or Orange Liqueur

25ml. Lime Juice
¾ Martini Glass of Crushed Ice
How to make
1. Pour the crushed ice into a blender.
2. Add Grand Marnier or Orange Liqueur, Tequila and lime juice to the blender.
Use a jigger to measure 35ml Grand Marnier or Orange Liqueur, 50ml Tequila and 25ml
lime juice to the blender.

3. Blend until smooth (10 Seconds).
Blend until Mixed.
4. Pour into a Martini glass.

9ml. Peach Schnapps
35ml. Vodka
35ml. Orange Juice

How to make
1. Fill a glass with ice.
Fill a tall glass with ice cubes.
2. Pour Peach Schnapps, Vodka, cranberry juice and orange juice into the glass.

Using a jigger, measure 9ml Peach Schnapps, 35ml Vodka, 35ml cranberry juice and
35ml orange juice into the glass.
Classic Bloody Mary
The ultimate brunch cocktail, the world's favourite savoury drink, the Bloody Mary delivers a
balance of sweet, salt, sour and flavours that is unlike any other.
Ingredients for
50ml. Vodka
100ml. Tomato Juice
1squeeze(s) Lemon
4dash(es) Tabasco Sauce
4dash(es) Worcestershire Sauce
2grind(s) Black Pepper
1leaf Celery
2piece(s) Lemon Wedge
How to make
1. Fill a glass with ice.
Fill a tall glass with ice cubes.

2. Pour Vodka and tomato juice into the glass.
Using a jigger, pour 50ml Vodka and 100ml tomato juice into the glass.
3. Add a squeeze of lemon, dashes of Tabasco and Worcestershire sauce and some black pepper.
Add 4 dashes of Tabasco and Worcestershire sauce, the juice of half a lemon and 2 grinds
of black pepper.
4. Stir thoroughly.
Stir the ingredients together slowly using a bar spoon.
5. Garnish with a celery stalk.
Place a celery stalk in the drink at an angle to garnish your Smirnoff Bloody Mary.
Gin Martini
The classic martini cocktail, a dry blend of great gin such as London Dry Gin, plus vermouth, is
one of the world’s simplest mixed drinks – and probably it’s most famous.

Ingredients for
50ml. London Dry Gin
5ml. Dry Vermouth
How to make
1. Fill a shaker with ice.
Fill a cocktail shaker with ice cubes.
2. Add London Dry Gin and dry vermouth to the shaker.
Using a jigger, measure 50ml London Dry Gin and 5ml dry vermouth into the cocktail
shaker.
3. Stir until cold.
Stir the mixture vigorously until the surface of the cocktail shaker feels chilled.
4. Strain into a martini glass.
Use a cocktail strainer to strain the liquid into a martini glass.
Black Russian
An easy-drinking blend of vodka, coffee cream liqueur, coca cola and ice the Black Russian was
a favourite during the glory days of disco. Today it is a hipster staple once again, along with its
cousin the White Russian.
Ingredients for
50ml.
Vodka
25ml.
Coffee Irish Cream Liqueur, Tia Maria or Kahlua
75ml.
Cola
Ice Cubes
½ slice of fresh lemon
How to make

1. Fill a glass with ice.
Fill an Old Fashioned or tall tumbler glass with ice cubes.
2. Pour Vodka and Coffee Liqueur, such as Tia Maria into the shaker.
Using a jigger, pour 50ml Vodka and 25ml Coffee Irish Cream Liqueur into the shaker,
which is at least half full of ice.
3. Shake until cold.
Shake the mixture vigorously until the surface of the cocktail shaker feels chilled.
4. Pour into a glass.
Pour into the glass.
5. Top up with cola and garnish with the lemon.

White Russian
An easy-drinking blend of vodka, coffee liqueur and cream, the White Russian was a favourite

6. Fill a glass with ice.

Using a jigger, pour 50ml Vodka and 25ml Coffee Irish Cream Liqueur into the shaker.
8. Shake until cold.
Shake the mixture vigorously until the surface of the cocktail shaker feels chilled.
9. Pour into a glass.
Pour into a short glass.
10. Garnish with cream and a sprinkle of chocolate shavings.
Gently top up with 50ml cream and garnish with a sprinkle of chocolate shavings.

Long Island Iced Tea
An unusual blend of vodka, gin, tequila, rum and orange liqueur with cola, the Long Island Iced
Tea flavours of vanilla and lightly tannic wood make it taste a little like tea, but in fact they come
from a mix of quality aged spirits.
Ingredients for
17.5ml. Rum
17.5ml. Vodka
17.5ml. London Dry Gin
17.5ml. Tequila
17.5ml. Orange Liqueur
17.5ml. Sugar Syrup
17.5ml. Lemon Juice
17.5ml. Lime Juice
1top(s) Cola
1slice(s) Lemon
How to make

1. Fill a shaker with ice.
Fill a cocktail shaker with ice cubes.
2. Add Rum, Vodka, and London Dry Gin, orange liqueur, Tequila, sugar syrup, lemon juice and lime
juice to the shaker.
Using a jigger measure 17.5mlRum, 17.5ml Vodka, 17.5ml London Dry Gin, 17.5ml
orange liqueur, 17.5ml Tequila, 17.5ml sugar syrup, 15ml lemon juice and 17.5ml lime
juice into a shaker.
3. Shake until cold.
Shake the mixture vigorously until the surface of the cocktail shaker feels chilled.
4. Strain into a glass filled with ice.
Use a cocktail strainer to strain the liquid into a Highball glass filled with cubes of ice.
5. Top up with cola.
Pour cola into the drink to fill to the top of the glass.
6. Garnish with a lemon slice.
Cut a slice of lemon with a sharp knife on a chopping board and place in the drink to
garnish.
Cosmopolitan
There are some – a very few – cocktails that define a decade. And the Cosmopolitan, a hot pink,
pleasantly sharp cocktail served in the iconic martini glass, was the essence of the 1990s.

Ingredients for
35ml. Vodka
10ml. Orange Liqueur
10ml. Lime Juice
45ml. Cranberry Juice
1twist(s) Lime
How to make
1. Fill a shaker with ice.
Fill a cocktail shaker with crushed ice.
2. Add Vodka, Orange Liqueur, cranberry juice and lime juice into the shaker.
Using a jigger, measure 35ml Vodka, 10ml Grand Marnier or Orange Liqueur, 45ml
cranberry juice and 10ml of lime juice into the shaker.
3. Shake until cold.
Shake vigorously using a cocktail shaker until the surface of the shaker feels chilled.
4. Strain into a martini glass.
Using a cocktail strainer, strain the liquid into a martini glass.
5. Garnish with a twist of lime peel.
Using a sharp knife and a chopping board, cut a piece of lime peel and twist the peel onto
the rim of the glass to garnish.
Tequila Sunrise
This cocktail originated at the Arizona Biltmore Hotel in the 1930s. A fruity and refreshing
tequila concoction, its best enjoyed with great company on a warm, summer afternoon.

Ingredients for
50ml. Tequila
150ml. Fresh Orange Juice
12ml. Grenadine
1wedge(s) Orange
How to make
1. Fill a tall glass with cubed ice.
2. Pour in the Tequila and orange juice over the ice.
3. Drizzle the grenadine over the top to create the sunrise.
4. To serve, garnish with a wedge of orange.
Strawberry Daiquiri
Alongside the Cuba Libre and the Mojito, the Daiquiri is one of the three great Cuban cocktails,
and by adding strawberries it gains texture and taste.

50ml. Rum
25ml. Fresh Lime Juice
25ml. Sugar Syrup
3piece(s) Fresh Chopped Strawberries

Simple, delicious and so much more than just a rum and cola, the Cuba Libre probably dates
back to 1900, a few months after a new-fangled drink called cola arrived in Cuba.

How to make
1. Fill a tall glass with Ice.
2. Pour in the Rum and cola.
3. To serve, squeeze the lime over the drink and drop in.
Espresso Martini
A blend of fresh-brewed espresso coffee, honey and Irish Cream, the Espresso martini is a very
modern drink based on an old classic, with a clean clear delivery of vodka, rich creamy flavours
and a touch of delicious bitterness.

Ingredients for
25ml. Vodka or Coffee Vodka
25ml. Coffee Irish Cream Liqueur
25ml. Espresso
10ml. Honey
3piece(s) Coffee Bean
How to make
1. Fill a shaker with ice.
Fill a cocktail shaker with ice cubes.
2. Add Vodka, Baileys, espresso coffee and honey to the shaker.
Using a jigger, measure 25ml Vodka, 25ml Baileys, 25ml espresso coffee and 10ml
honey into the shaker.
3. Strain into a glass.
Using a cocktail strainer, strain into a large martini glass.
4. Garnish with coffee beans.
Add 3 coffee beans to the top of the drink to garnish.

Caipirinha
A delicious take on the classic Brazilian cocktail, this drink blends the rich, full flavour of rum
with zinging lime and sugar. Evoking tropical getaways and the spirit of celebration, Caipirinha
is one of the great party drinks.
Ingredients for
50ml. rum
1tsp Sugar
3piece(s) Lime
How to make
1. Cut lime wedges.
Using a knife and chopping board, cut a lime into 4 wedges.
2. Add the lime wedges and sugar to a glass.
Place the lime wedges and 1tsp sugar into a tumbler.
3. Muddle the lime and sugar.

Press down on the lime wedges and sugar in a highball glass using a muddler to extract
juices and flavour.
4. Fill the glass with ice.
Top up the glass with ice cubes.
5. Pour rum into the glass.
Using a jigger, measure 50ml rum into the glass.
6. Stir thoroughly.
Stir using a bar spoon until the mixture is well combined to complete your Caipirinha.
Tropical Coconut Caipirinha
A delicious take on the classic Brazilian cocktail, this drink blends the rich, full flavour of rum
with zinging lime and sugar. Evoking tropical getaways and the spirit of celebration, Caipirinha
is one of the great party drinks.

Ingredients for

007 Vodka Martini
Bone-dry, crystal clear and icy cold, the martini cocktail is the ultimate classic cocktail, enjoyed
by everyone from Clark Gable and Bette Davis to Audrey Hepburn and the Rat Pack and most
famously of all, 007 James Bond.

Ingredients for
50ml. Vodka
12ml. Vermouth
1sprinkle(s) Lemon Zest
1piece(s) Large Thin Lemon Zest
How to make
1. Fill your shaker 3/4 full with cubed ice.
2. Pour Vodka and Vermouth over the ice into the shaker.
3. Shake vigorously for 10 seconds until cold.

Pomegranate and Ginger Ale combine with the classic lemon and sugar mix to create a timeless,
delicious long drink that commemorates the passing of actress Shirley Temple.

Ingredients for
40ml. Ginger Ale
40ml. Pomegranate Juice
1.5tsp Sugar
1wedge(s) Lemon
How to make
1. Extract the juice from a pomegranate.
Remove seeds from a whole pomegranate and place in a sieve. Press down with the back
of a spoon to extract the juice.
2. Measure into a glass.
Using a jigger, measure 40ml of the freshly sieved pomegranate juice into a tall glass
3. Add sugar.
Add 1.5tsp sugar to the glass.
4. Stir until well combined.
Stir with a bar spoon until the mixture is well combined.

5. Add ice to the glass.
Add ice cubes to the glass.
6. Top up with Ginger Ale.
Top up the drink with Ginger Ale.
7. Garnish with a lemon wedge.
Using a sharp knife, cut a wedge of fresh lemon on a chopping board, squeeze and place
into the glass
Simple Syrup for Cocktails
Ingredients
1/2 cup Water
1/2 cup White sugar*
How to make
Add water and sugar to a small saucepan over medium heat. Stir until sugar is dissolved. Strain
into a jar and seal tightly with a lid. The syrup will keep, refrigerated, for about a month.
*Use Demerara sugar for a richer flavor
Vermillion

Ingredients
1 oz Grapefruit juice
.5 oz Lime juice
.5 oz Sour Orange Sherbet*
.5 oz Date molasses syrup (one part date molasses, one part water)
.25 oz Thai Chile Syrup**
Club soda
Garnish: Lime wheel
Glass: Highball
How to make
Add all the ingredients except the club soda to a shaker and fill with ice. Shake, and strain into a
highball glass filled with fresh ice. Fill with club soda and garnish with a lime wheel.
*Sour Orange Sherbet
Ingredients
3 Lemons
1 Orange
8 oz (just over 1 cup) Sugar

How to Make
Carefully peel the lemons and orange, leaving as little white pith on the peels as possible. Add the peels
and sugar to a bowl, and let stand for several hours to let the oils leach out. Juice the lemons and orange
and add to the mixture. Stir until the sugar dissolves completely and strain before using.
**Thai Chile Syrup
Ingredients
4 oz Water
.5 cup Sugar
3 or 4 Thai chilli peppers
How to Make
Stir together the water and sugar until the sugar dissolves. Add the mixture to a blender with the chilli
peppers and puree until smooth. Strain before using
Strawberry Crush
Ingredients

3 to 4 Fresh strawberries, cut in half
3 Fresh mint sprigs
Juice of half a lime
1 oz Simple syrup (one part sugar, one part water)
Ginger beer
Garnish: Strawberry and mint sprig
Glass: Collins
How to make
In a shaker, muddle the strawberries, mint, lime juice and simple syrup to a juicy pulp. Pour (unstrained)
into a tall Collins glass. Fill with crushed ice and top with ginger beer. Garnish with an additional
strawberry and mint sprig.
