You are what you eat? That's what my doctor says and
there's a lot of truth to that! During the holidays we love
to embellish in our favorite dishes. When incorporating
fruits and vegetables into your diet, it's good to have a
variety from the colors of the "rainbow" and know how
they benefit your health.
Yellow and Orange
Let's begin with our yellows and oranges. Carotenoids
provide the color in these fruits and vegetables. Citrus
fruits such as mangoes, pineapple, carrots, and yellow
squash help boost your immune system and visual properties.
Oranges have antioxidants that help reduce heart
disease and certain types of cancer.
Red, blue, and purple
Red, blue, and purple fruits such as strawberries, blueberries,
and grapes contain antioxidants that reduce cell
damage, cardiovascular disease and age-associated memory
loss. Lycopene provides the red color in tomatoes,
watermelon, and red grapefruit. They, too, can reduce
the risk of many cancers, especially prostate cancer.
Green
Never run from your broccoli, spinach, and green beans!
The chlorophyll that give them their deep green color
helps the skin and helps eliminate toxins from the body.
White
Onions, garlic, potatoes, bananas, and mushrooms are
power packed and can help lower blood pressure and
cholesterol.
As you can see, many fruits and vegetables have overlapping
benefits such as reducing cardiovascular disease and
the risk of developing certain types of cancer. There are
many other benefits of eating foods with various colors
and they also make your meal look very appealing. Be
sure to incorporate these foods into your diet on a daily
basis so that your body can get the vitamins, minerals,
and nutrients needed.
So next time you’re at the farmers market or in the produce
section at your local supermarket, be sure to "taste
the rainbow" and your body will thank you for it!
