Great things take love and time. Affinage is a French word that<br />
comes from the Latin ad finis, meaning “towards the limit.”<br />
Affinage is the art of aging <strong>cheese</strong>, with proper conditions,<br />
time, and care, to coax each wheel towards ultimate<br />
delectability.<br />
For centuries, caves—cool in temperature and high and steady<br />
in humidity—have provided optimal aging conditions for<br />
<strong>cheese</strong>. For many years, we cared for <strong>cheese</strong> in caves in the<br />
basement of our Bleecker Street shop. In 2013, we opened<br />
state-of-the-art <strong>cheese</strong> caves in Long Island City.<br />
Our caves maintain and enhance the quality of our products,<br />
but that’s just the start. They are a representation of our<br />
commitment to honoring the craft of each and every<br />
<strong>cheese</strong>maker we work with. We’ve designed each cave to<br />
ensure every wheel matures in its ideal environment. We<br />
control and monitor temperature, humidity and microbial<br />
activity with great precision. We partner with <strong>cheese</strong>makers<br />
to craft exclusive creations—cajoling baby <strong>cheese</strong>s into fully<br />
realized treasures. We wash, flip, brush, and spritz wheels<br />
to create the most perfect final result. And we taste a lot of<br />
<strong>cheese</strong>. For strictly professional purposes, of course.<br />
It’s a lot of work, but the result is worth it—every <strong>cheese</strong> you<br />
taste from Murray’s is at its absolute best and tastiest.
