Preparing excellent ribs is laborious, and that’s one good<br />
reason to leave it to the experts. At Ribs & Rock in the heart<br />
of Riga, the staff treats ribs at a state-of-the-art level.<br />

Being the only restaurant in Latvia<br />
to specialise in lamb, beef and<br />
pork ribs, Ribs & Rock knows how<br />
to make its customers’ mouths<br />
water right from the start. Sometimes the<br />
aroma emanating into the dining hall is so<br />
irresistible that it’s easy to overestimate<br />
one’s hunger when choosing from an order<br />
of either 400 or 800 grams of ribs. For<br />
those who fancy something else, the menu<br />
also offers appetisers, soups, salads, pastas<br />
and fish as well as wide range of steaks.<br />
Although Ribs & Rock belongs to<br />
the same people who founded three<br />
other popular Riga restaurant chains –<br />
Steiku Haoss, KID* and MUUSU – it carries<br />
a different message than its kin, being<br />
an American-style establishment with a<br />
Latvian heart and staff. Before Ribs & Rock<br />
opened to the public, its chefs transformed<br />
the kitchen into a laboratory, seeking new<br />
methods of achieving tender and juicy<br />
meat – and the outcome is remarkable.<br />
The restaurant’s special place on Riga’s<br />
gourmet map is the work of its head chef,<br />
Juris Latišenoks. Highly talented and already<br />
gaining renown, Latišenoks was famed chef<br />
Kaspars Jansons’ right hand man and has<br />
worked at some of Riga’s finest restaurants.<br />
Latišenoks is only 23 years old and still full<br />
of the unbridled enthusiasm and creativity<br />
of youth. That’s reflected in the menu<br />
as well. The young chef is not afraid to<br />
experiment, and the reaction so far suggests<br />
that his boldness is being appreciated.<br />
With Latišenoks’ arrival in the<br />
restaurant’s kitchen, Ribs & Rock has<br />
become the place to go in the Latvian<br />
capital for a barbecue meal. This is reflected<br />
in the new autumn menu, which has<br />
been modified to reflect the bounty of<br />
the season.<br />
“My goal is to ensure that Ribs & Rock becomes the<br />
undisputed barbecue and grill restaurant king in Riga.<br />
The new menu reflects several cultures, featuring<br />
American barbecue-style pork ribs as well as Thai-style<br />
barbecue beef,” says the chef.<br />
Latišenoks recommends trying the autumn menu’s<br />
Black Sabbath black-coloured burger, which consists<br />
of a juicy pork rib, black bread, black currant barbecue<br />
sauce and seared fries. The restaurant also has a wide<br />
choice of appetisers that go very well together with<br />
beer, including chicken legs, pork skins, homemade<br />
onion rings and traditional Latvian garlic croutons. In<br />
the dessert section, the chef is particularly proud of his<br />
cacao egg with beet powder, which is presented in a very<br />
creative manner.<br />
The typical diner at Ribs & Rock is someone who<br />
values not only great food, but also classic rock. At<br />
Ribs & Rock you will hear old-school favourites like<br />
Jimi Hendrix and Led Zeppelin as well as newer classics<br />
by REM and U2, for example. On weekend nights, the<br />
restaurant provides live music by local bands.<br />
“We are particularly happy when our guests<br />
tell us that they appreciate the harmonious mix<br />
of excellent food, a pleasant interior and great<br />
music,” says Latišonoks, who can be seen personally<br />
serving meals to the restaurant’s guests on Fridays<br />
and Saturdays.<br />
Those who are looking for a tasty midday<br />
meal will love the lunch specials at Ribs & Rock –<br />
7.90 euros will get you two delicious dishes. Aside<br />
from a diverse range of classic meat and fish plates,<br />
there are also vegetarian soups and salads to<br />
choose from.<br />
While enjoying a nice afternoon or evening meal<br />
this autumn at Ribs & Rock, be sure to pair a wine<br />
