RUM BALLS<br />

8 crushed Weetbix<br />

1 tin condensed milk<br />

2 tablespoon coconut<br />

2 tablespoons cocoa<br />

1 cup mixed fruit<br />

2 tablespoons rum essence<br />

1. Mix all dry ingredients in a<br />

large bowl.<br />

2. Place in refrigerator for 20<br />

minutes<br />

3. Add rum essence and knead<br />

through with hands.<br />

4. Roll into balls and toss in<br />

coconut.<br />

5. Place in the refrigerator.<br />

COCONUT ICE<br />

500g icing sugar<br />

¼ teaspoon cream of tartar<br />

1 egg white<br />

3 tablespoons condensed milk<br />

1 cup desiccated coconut<br />

Pink food colouring<br />

1. Sift icing sugar and cream of tartar into a mixing bowl.<br />

2. Make a well in centre.<br />

3. Lightly beat the egg white and add to bowl with<br />

condensed milk.<br />

4. Stir in half the coconut. Add the other half and knead to<br />

combine.<br />

5. Divide mixture in half. Tint one half pink with food dye.<br />

6. Press the pink half over base of a paper­lined tray. Top<br />

with the white half and press down lightly.<br />

7. Chill in the refrigerator and cut into squares.
