LENTIL, FETA &<br />
BULGUR WHEAT SALAD<br />
Looking for a quick potluck dish to share or a simple picnic salad? This <strong>recipe</strong> is<br />
a great, healthy option that can be pulled together in less than 10 minutes and is<br />
loved by kids and adults alike. Bulgur is also a wonderful whole grain used in this<br />
simple, light side salad.<br />
THIS RECIPE SERVES 6 PEOPLE<br />
INGREDIENTS<br />
Heat the olive oil in a 3-4 quart pot over<br />
medium heat. Add the onions and sauté until<br />
they turn golden (about 5 minutes).<br />
Add the stock, lentils, bulgur, cinnamon, cumin<br />
and paprika. Increase the heat to high, and<br />
bring to a boil.<br />
Reduce heat to medium-low, cover and<br />
simmer for 10 minutes.<br />
Place the lidded pot in the Wonderbag<br />
for a minimum of 1 hour 15 minutes to<br />
finish cooking.<br />
3 Tbsp olive oil<br />
½ cup onions, diced<br />
4 cups vegetable stock<br />
1 cup dried green lentils<br />
1 cup bulgur wheat<br />
¾ tsp cinnamon<br />
½ tsp cumin<br />
½ tsp paprika<br />
Cilantro and feta as topping<br />
Lime wedges<br />
To serve: Stir in feta, cilantro and squeeze fresh<br />
lime over the whole salad. Add salt to taste.<br />
