Look through the wine lists of many
top restaurants and inevitably there
will be a large selection of wines
from Bordeaux. But is this simply
because of the strong French
influence on restaurant cuisine, or
are the flavours and aromas of
Bordeaux wines just made to go
with food? We invited 12 lucky
Wine Club members to join us for
dinner at a smart London gastropub
to find out for ourselves.
We all met at The White Horse
Pub in west London where Jilly
Goolden had personally selected
a special taster menu of 6 small
courses, including two starters, two
mains, a cheese course and a
dessert. To accompany the meal,
Jilly had chosen eight different
wines from the Tesco Bordeaux
range, ranging in price from £5.60
to over £20.00.
The evening started with Jilly
explaining why it’s important to
smell a wine before tasting it.
“Our sense of smell is so much
more powerful than our sense of
taste. It’s how you pick up all the
nuances, all the differences, all the
light and shade in your wine.”
With that Jilly went on to advise us
to “swirl the wine around, get your
nose in have a really good sniff!”
The first wine to receive this
treatment was the Calvet Limited
Release 2007, a white Bordeaux
made from 100% Sauvignon Blanc,
chosen to accompany a small
portion of watercress soup served
in an espresso cup. This was a great
start to the dinner as most people
agreed that the two went extremely
well together. Richard Webster was
particularly impressed, saying that,
“The richness of the watercress
soup was beautifully offset by the
crispness of the wine.”
The next course was more of a
surprise. To accompany quail egg
Florentine, Jilly had chosen Château
Tronquoy Lalande 2003, a red
Bordeaux. As Despina Smith said,
“I wouldn’t have thought a red wine
would go with eggs but it did.
The wine tasted even nicer and
more mellow.”
As the two main courses of beef
and lamb were served, there was
plenty of scope for discussion as Jilly
had chosen two different red wines
to accompany each course. It soon
became apparent that there was no
right or wrong answer as everyone
had their own personal favourite.
One great eye-opener of the
evening was Jilly’s questioning of
whether red wines are always the
best match for cheese. With a
choice of a red, white and sweet
Sauternes to accompany the cheese
‘Our sense
of smell is
more powerful
than our sense
of taste’
course, she was proved right when
most people voted for the
combination of Sauternes and
Roquefort as the best match of
the evening.
The overall verdict? Bordeaux
wines really do shine when enjoyed
with food, either complementing
the flavours or providing a delicious
contrast. As Robert Smith said,
“It’s been a fabulous evening.
It’s really given me the confidence
to match different wines with
different foods.”
Bordeaux Banquet
Calvet Limited Release Sauvignon
Blanc, 2007, France, 11.5%
“I’m surprised how well the
Sauvignon Blanc went with the
watercress soup. It’s crisp and
refreshing but it didn’t overpower
the flavour of the soup.”
BEATEN
SPAINTRACK!
With more area under vine than any other
country, Spain is the perfect destination if you
like discovering delicious wines in out-of-theway
places. The ancient regions of Castilla y
León and Aragón have some outstanding wines
that are well worth searching out, as you can
see from the notes I made on a recent visit.
James Griswood, wine buyer for Spain
THE REGIONS
The regions of Castilla y León and Aragón first came to prominence over
500 years ago when King Ferdinand of Aragón married Queen Isabella
of Castilla. Their union resulted in the birth of Catherine of Aragón: King
Henry VIII’s first wife. When I visit either of these former kingdoms I can
almost imagine myself back in the 15th century. Castilla y León (as it’s
now known) is still dotted with fairytale castles and royal palaces, while
sparsely-populated Aragón is a region of rolling countryside and ancient
stone villages.
THE GRAPES
Tempranillo Spain’s best known grape is grown
throughout the country, most famously in Rioja.
It usually announces its presence with irresistible
flavours of ripe strawberries.
Garnacha Although known in almost every other country
as Grenache (its French name), Garnacha is Spanish through
and through. It adores sunshine, producing big juicy wines
that are jam-packed with wonderful red berry flavours.
Verdejo If you haven’t tried Verdejo before, just think of it
as Spain’s answer to Sauvignon Blanc. It produces some of
the country’s best whites, often intensely aromatic and full
of zingy citrus fruit.
by James Griswood
Garnacha growing in Cariñena
ARAGÓN
I’m a great fan of Aragón as I think it
produces some of the best Garnacha
based wines in the whole of Spain. On
this trip I fly into Zaragoza airport, right in
the heart of the region. As my plane
touches down I’m already getting excited
about visiting the wineries and tasting the
latest vintages.
Day 1: Cariñena
After a short drive in the Spanish sunshine,
I arrive in Aragón’s celebrated wine district of Cariñena.
With plains of gnarled old bush vines reaching out either
side of the car, I know there are going to be some
fantastic wines to try.
Today I’m going to the winery of Marques De Carano
wines. Set in the middle of immaculately maintained
vineyards, the Grandes Vinos y Vinedos is built in a
traditional Moorish style around a beautiful stone
courtyard. I first came here about six or seven
years ago and was instantly impressed by the
quality of wines made by the wine-maker,
Marcelo Morales Calderon.
I’m always given a warm welcome
by the team here. Last time I was
here they put on a ‘light lunch’ for
me. I now realise that a ‘light lunch’
in Spain can easily last for hours…so
after the 15th different dish hit our
table I had to admit defeat and
politely suggest we should really go
and start doing some work!
This time I make straight for the
blending room to taste the latest
vintages. The reds are as rich and
delicious as ever and the quality of
these wines remains phenomenal.
If you normally drink reds from Rioja,
it’s well worth giving the Reservas or
Gran Reservas a try.
After a long afternoon’s tasting,
I get dropped off at my hotel. It’s in
the centre of Zaragoza; a wonderful
city that’s a hotchpotch of modern
architecture and historical
monuments. I could easily spend
the evening walking from tapas bar
to tapas bar. However, I can’t
stay late because it’s an early
CASTILLA Y LEÓN
Day 2:
Ribera del Duero
An early start and a morning’s
drive gets me to Castilla y León
and its trendy red wine district of
Ribera del Duero. Here the
impressive wineries seem to
announce themselves with grand
authority, letting you know you’re
in one of Spain’s best wine
regions.
One of the most striking is the
Vina Mayor winery, where the
Tesco Ribera del Duero is
made. Today I’m just paying a
quick visit to catch up with the
wine-makers and check on the
latest vintage.
Like the best Riojas, the reds
from here are generally made
from 100% Tempranillo. But as
the vineyards are at a higher
altitude, the grapes have thicker,
darker skins, leading to darker,
more intense wines. I would love
to linger as I adore Ribera del
Duero wines, but I have to make
tracks for my hotel which lies on
the way to Rueda.
Day 3: Rueda
A short drive southwest brings
me to the plains of Rueda:
Castilla y León’s white wine
district. Over here everything
seems a bit more laid-back,
more restrained and low key.
You would never guess that it
produces many of Spain’s
greatest whites!
Today I’m going to Agricola
Castellana, a brilliant
co-operative based in La Seca.
The simple square building
looks nothing from the
outside…but behind its doors
there’s some real winemaking
wizardry going on!
Chief ‘wizard’ is Angel Calleja, the
head winemaker here. I’ve been
working with him for the past few
years, since I first introduced the
Rueda to Tesco. In fact I always
visit around this time of year to help
Angel put the blend together for the
latest vintage.
Day 4 & 5: Rueda
– the blending process
Angel doesn’t speak English and my
Spanish is rusty at best, so we end up
talking to each other through Norrel
Robinson, a Scottish Master of Wine
who’s based in Spain. With a mixture
of pidgin-English, pidgin-Spanish and
much pointing and gesturing, we
manage to get the best blend for the
Rueda.
I enjoy serving this wine to friends
who usually drink Sauvignon Blanc as
the Verdejo grape is equally aromatic
but with some additional peach and
citrus notes that make it deliciously
different.
It’s just the sort of wine to get your
taste buds going, so after the blending
we all decide to jump in a taxi and head
for the pretty town of Tordesillas, in
search of something to eat. We end up
in a charming café near the impressive
redbrick Convent of Santa Clara.
Day 6: Toro
I just have time for a quick stop in
neighbouring Toro. Here the landscape
appears more rough and ready, in fact
the complete opposite of Ribera del
Duero. I love it here as the reds are
usually big juicy blends of Garnacha
and Tempranillo and are often real
bargains. In fact, they’re just the sort of
wines you always hope to find when
you go travelling off the beaten track.
That evening I fly back to London
satisfied but exhausted…it’s been a
truly rewarding trip.
The inside view
Australian wine by Neil McGuigan
Wine-maker of the Year, Neil McGuigan, recently met
Pierpaolo Petrassi, MW to give him his thoughts on Australian wine.
The Hunter Valley must be
one of the toughest places on
earth to grow grapes. It’s the
first fertile valley you come across
when you travel north from Sydney,
which is why the early settlers
planted vineyards there. I doubt
anyone would choose it today.
The climate is so extreme, you’re
literally walking a tightrope every
day. But when you get it right, the
wines are fantastic. It’s where I grew
up, and where I still live today.
I started working in the
family winery when I was
just five years old. There were
huge 750 gallon casks that could
only be cleaned by climbing in small
doors at the front. Because I was so
small I used to get in with my
brother to clean them. We used to
enjoy helping out but I doubt health
and safety would allow that sort of
thing today.
If I hadn’t been a
wine-maker, I would like to
have been a pilot. Just down
the road from us in the Hunter
Valley is the Williamtown air force
base. It’s where the F1-11s used to
be based. When I was a kid growing
up, the air force guys used to come
and visit the winery from time to
time. So I was very tempted to sign
up. But wine won out in the end.
Australia was the first
country to make wines that
people could really
understand. Our wines were the
first to deliver bags of flavour and
intensity. So, for the first time, you
could pick up a glass and
immediately know what grape you
were drinking. For instance, you
could instantly tell a Chardonnay
from the lovely buttery, vanilla
flavour. The wines may have got
more subtle over the years, but
it’s still a great feature of
Australian wine.
There’s a lot of talk about
climate change in Australia.
There’s no doubt that in my lifetime
the vintages have been getting
earlier because the summers are
hotter. We’re also experiencing more
extreme weather patterns, such as
huge storms. But we’re already
adapting our way of working.
Australia is a dry country so we’re
learning to use our precious asset of
water very carefully.
The proudest moment in my
life was having my three
children. But career-wise, it would
have to be winning ‘Best White
Winemaker in the world’ at the
International Wine Challenge last
year, followed by ‘Winemaker
of the Year’ at the International Wine
& Spirits Competition. I don’t know
whether that’s been done before by
one winery in one year. I think we’ve
really lifted the bar for Australian
wine; both in a quality sense and the
evolution of Australian wine style.
Tastes change and I think
it’s my job as a wine-maker
to reflect that. A few years ago
I realised that many white wine
drinkers were looking for a lighter,
more floral style of wine. So I began
working to bring out the fresh fruit
characteristics in the aromas, while
adding freshness, elegance and
complexity to the palate. Of course,
it’s not something you can achieve
overnight; it’s an evolutionary
process that takes a lot of hard
work in the vineyard and winery.
That’s one of the reasons why I
think we won the awards.
People expect Australian
wines to have a certain
warmth. But that doesn’t mean
they have to be high in alcohol.
We have been developing our reds
over the past few years to deliver
that beautiful Australian warmth
and richness, but without too
much alcohol. I think these will be
next to shine in the competitions.
It may take a year or two as reds
The wine-maker ’ s year: spring
For someone who grows
grapes and makes wine,
every season brings its
own unique set of
events and challenges,
as I’ll be outlining in this new
series of articles.
Pierpaolo Petrassi, MW.
In the vineyard
Anyone visiting a vineyard in Europe or North America
around this time of year can witness one of the great
sights of nature. Vines that only a few weeks ago
appeared brown and lifeless, with just a few woody
branches and twigs, will once again be showing signs
of life.
First, sap begins to emerge from the places where the
vine was pruned over the winter months. Next, small green
buds start to appear along the growing canes. Then as we
go into April, shoots and leaves will begin to emerge from
the buds, followed by miniature bunches of flower buds in
early May.
This makes frost a real danger at this time of year: if
temperatures drop below 1°C then the little green buds
will simply fall off. The buds are fledgling grapes, so frost
could spell the loss of the crop. It’s no
surprise therefore that frost prone regions
such as Bordeaux and Burgundy employ
every frost protection method possible,
from small portable heaters in the vineyards
to helicopters that hover over the vineyards
to break up the air.
In the cellar
Wines made from grapes harvested
last autumn will have finished
fermenting over the winter and
many will still be sitting in either
stainless steel tanks or oak barrels
in the cellar. Most reds and whites
being kept in oak barrels will
probably remain there for a few
more months or even years.
However, wines that are best
enjoyed young and fresh are now
ready to be bottled. This includes
everything from Italian Pinot Grigio
to French Sauvignon Blanc and
Spanish Albariño.
Small wineries will often do their
own bottling in the cellar, straight
from the cask. Those that can’t
afford the equipment make use of
mobile bottling trucks; a familiar site
on the back-roads of Europe at this
time of year. One thing is for
certain: the vintage printed on the
label always refers to the year the
grapes were picked, not the year it
was bottled.
With vines springing
back to life in the
vineyard, this is an
exciting and crucial
time for wine-makers
in the Northern
Hemisphere.
What’s going on down under?
As they’re roughly six
months ahead of us,
wine-makers in the
Southern Hemisphere
are getting ready for
this year’s harvest.
Frost protection
netting in Chablis.
The Southern Hemisphere harvest usually
takes place around this time of year, which is
why the New World is always first with the
latest vintage. Look out for 2010 in the next
few months.
The exact timing of the harvest can be an
agonising decision. Pick too early and the
grapes may not be ripe enough; leave it too
late and a sudden downpour may wash the
crop away. It’s a yearly dilemma in
Australia’s Limestone Coast, where
wine-makers coax every degree of flavour
from late-ripening Cabernet Sauvignon
while dodging the frequent rain at harvest
time. These days a decision can be made
instantly, as modern mechanical harvesters
will pick around 5 tons per hour, a job that
would require calling on 100 hand pickers.
