Look through the wine lists of many<br />

top restaurants and inevitably there<br />

will be a large selection of wines<br />

from Bordeaux. But is this simply<br />

because of the strong French<br />

influence on restaurant cuisine, or<br />

are the flavours and aromas of<br />

Bordeaux wines just made to go<br />

with food? We invited 12 lucky<br />

<strong>Wine</strong> <strong>Club</strong> members to join us for<br />

dinner at a smart London gastropub<br />

to find out for ourselves.<br />

We all met at The White Horse<br />

Pub in west London where Jilly<br />

Goolden had personally selected<br />

a special taster menu of 6 small<br />

courses, including two starters, two<br />

mains, a cheese course and a<br />

dessert. To accompany the meal,<br />

Jilly had chosen eight different<br />

wines from the Tesco Bordeaux<br />

range, ranging in price from £5.60<br />

to over £20.00.<br />

The evening started with Jilly<br />

explaining why it’s important to<br />

smell a wine before tasting it.<br />

“Our sense of smell is so much<br />

more powerful than our sense of<br />

taste. It’s how you pick up all the<br />

nuances, all the differences, all the<br />

light and shade in your wine.”<br />

With that Jilly went on to advise us<br />

to “swirl the wine around, get your<br />

nose in have a really good sniff!”<br />

The first wine to receive this<br />

treatment was the Calvet Limited<br />

Release 2007, a white Bordeaux<br />

made from 100% Sauvignon Blanc,<br />

chosen to accompany a small<br />

portion of watercress soup served<br />

in an espresso cup. This was a great<br />

start to the dinner as most people<br />

agreed that the two went extremely<br />

well together. Richard Webster was<br />

particularly impressed, saying that,<br />

“The richness of the watercress<br />

soup was beautifully offset by the<br />

crispness of the wine.”<br />

The next course was more of a<br />

surprise. To accompany quail egg<br />

Florentine, Jilly had chosen Château<br />

Tronquoy Lalande 2003, a red<br />

Bordeaux. As Despina Smith said,<br />

“I wouldn’t have thought a red wine<br />

would go with eggs but it did.<br />

The wine tasted even nicer and<br />

more mellow.”<br />

As the two main courses of beef<br />

and lamb were served, there was<br />

plenty of scope for discussion as Jilly<br />

had chosen two different red wines<br />

to accompany each course. It soon<br />

became apparent that there was no<br />

right or wrong answer as everyone<br />

had their own personal favourite.<br />

One great eye-opener of the<br />

evening was Jilly’s questioning of<br />

whether red wines are always the<br />

best match for cheese. With a<br />

choice of a red, white and sweet<br />

Sauternes to accompany the cheese<br />

course, she was proved right when<br />

most people voted for the<br />

combination of Sauternes and<br />

Roquefort as the best match of<br />

the evening.<br />

The overall verdict? Bordeaux<br />

wines really do shine when enjoyed<br />

with food, either complementing<br />

the flavours or providing a delicious<br />

With more area under vine than any other<br />

country, Spain is the perfect destination if you<br />

like discovering delicious wines in out-of-theway<br />

places. The ancient regions of Castilla y<br />

León and Aragón have some outstanding wines<br />

that are well worth searching out, as you can<br />

see from the notes I made on a recent visit.<br />

THE REGIONS<br />

The regions of Castilla y León and Aragón first came to prominence over<br />

500 years ago when King Ferdinand of Aragón married Queen Isabella<br />

of Castilla. Their union resulted in the birth of Catherine of Aragón: King<br />

Henry VIII’s first wife. When I visit either of these former kingdoms I can<br />

almost imagine myself back in the 15th century. Castilla y León (as it’s<br />

now known) is still dotted with fairytale castles and royal palaces, while<br />

sparsely-populated Aragón is a region of rolling countryside and ancient<br />

stone villages.<br />

THE GRAPES<br />

Tempranillo Spain’s best known grape is grown<br />

throughout the country, most famously in Rioja.<br />

It usually announces its presence with irresistible<br />

flavours of ripe strawberries.<br />

Garnacha Although known in almost every other country<br />

as Grenache (its French name), Garnacha is Spanish through<br />

and through. It adores sunshine, producing big juicy wines<br />

that are jam-packed with wonderful red berry flavours.<br />

Verdejo If you haven’t tried Verdejo before, just think of it<br />

as Spain’s answer to Sauvignon Blanc. It produces some of<br />

the country’s best whites, often intensely aromatic and full<br />

of zingy citrus fruit.<br />

ARAGÓN<br />

I’m a great fan of Aragón as I think it<br />

produces some of the best Garnacha<br />

based wines in the whole of Spain. On<br />

this trip I fly into Zaragoza airport, right in<br />

the heart of the region. As my plane<br />

touches down I’m already getting excited<br />

about visiting the wineries and tasting the<br />

latest vintages.<br />

Day 1: Cariñena<br />

After a short drive in the Spanish sunshine,<br />

I arrive in Aragón’s celebrated wine district of Cariñena.<br />

With plains of gnarled old bush vines reaching out either<br />

side of the car, I know there are going to be some<br />

fantastic wines to try.<br />

Today I’m going to the winery of Marques De Carano<br />

wines. Set in the middle of immaculately maintained<br />

vineyards, the Grandes Vinos y Vinedos is built in a<br />

traditional Moorish style around a beautiful stone<br />

courtyard. I first came here about six or seven<br />

years ago and was instantly impressed by the<br />

quality of wines made by the wine-maker,<br />

Marcelo Morales Calderon.<br />

I’m always given a warm welcome<br />

by the team here. Last time I was<br />

here they put on a ‘light lunch’ for<br />

me. I now realise that a ‘light lunch’<br />

in Spain can easily last for hours…so<br />

after the 15th different dish hit our<br />

table I had to admit defeat and<br />

politely suggest we should really go<br />

and start doing some work!<br />

This time I make straight for the<br />

blending room to taste the latest<br />

vintages. The reds are as rich and<br />

delicious as ever and the quality of<br />

these wines remains phenomenal.<br />

If you normally drink reds from Rioja,<br />

it’s well worth giving the Reservas or<br />

Gran Reservas a try.<br />

After a long afternoon’s tasting,<br />

I get dropped off at my hotel. It’s in<br />

the centre of Zaragoza; a wonderful<br />

city that’s a hotchpotch of modern<br />

architecture and historical<br />

monuments. I could easily spend<br />

the evening walking from tapas bar<br />

to tapas bar. However, I can’t<br />

stay late because it’s an early<br />

Ribera del Duero<br />

An early start and a morning’s<br />

drive gets me to Castilla y León<br />

and its trendy red wine district of<br />

Ribera del Duero. Here the<br />

impressive wineries seem to<br />

announce themselves with grand<br />

authority, letting you know you’re<br />

in one of Spain’s best wine<br />

regions.<br />

One of the most striking is the<br />

Vina Mayor winery, where the<br />

Tesco Ribera del Duero is<br />

made. Today I’m just paying a<br />

quick visit to catch up with the<br />

wine-makers and check on the<br />

latest vintage.<br />

Like the best Riojas, the reds<br />

from here are generally made<br />

from 100% Tempranillo. But as<br />

the vineyards are at a higher<br />

altitude, the grapes have thicker,<br />

darker skins, leading to darker,<br />

more intense wines. I would love<br />

to linger as I adore Ribera del<br />

Duero wines, but I have to make<br />

tracks for my hotel which lies on<br />

the way to Rueda.<br />

Day 3: Rueda<br />

A short drive southwest brings<br />

me to the plains of Rueda:<br />

Castilla y León’s white wine<br />

district. Over here everything<br />

seems a bit more laid-back,<br />

more restrained and low key.<br />

You would never guess that it<br />

produces many of Spain’s<br />

greatest whites!<br />

Today I’m going to Agricola<br />

Castellana, a brilliant<br />

co-operative based in La Seca.<br />

The simple square building<br />

looks nothing from the<br />

outside…but behind its doors<br />

there’s some real winemaking<br />

wizardry going on!<br />

Chief ‘wizard’ is Angel Calleja, the<br />

head winemaker here. I’ve been<br />

working with him for the past few<br />

years, since I first introduced the<br />

Rueda to Tesco. In fact I always<br />

visit around this time of year to help<br />

Angel put the blend together for the<br />

latest vintage.<br />

Day 4 & 5: Rueda<br />

– the blending process<br />

Angel doesn’t speak English and my<br />

Spanish is rusty at best, so we end up<br />

talking to each other through Norrel<br />

Robinson, a Scottish Master of <strong>Wine</strong><br />

who’s based in Spain. With a mixture<br />

of pidgin-English, pidgin-Spanish and<br />

much pointing and gesturing, we<br />

manage to get the best blend for the<br />

Rueda.<br />

I enjoy serving this wine to friends<br />

who usually drink Sauvignon Blanc as<br />

the Verdejo grape is equally aromatic<br />

but with some additional peach and<br />

citrus notes that make it deliciously<br />

different.<br />

It’s just the sort of wine to get your<br />

taste buds going, so after the blending<br />

we all decide to jump in a taxi and head<br />

for the pretty town of Tordesillas, in<br />

search of something to eat. We end up<br />

in a charming café near the impressive<br />

redbrick Convent of Santa Clara.<br />

Day 6: Toro<br />

I just have time for a quick stop in<br />

neighbouring Toro. Here the landscape<br />

appears more rough and ready, in fact<br />

the complete opposite of Ribera del<br />

Duero. I love it here as the reds are<br />

usually big juicy blends of Garnacha<br />

and Tempranillo and are often real<br />

bargains. In fact, they’re just the sort of<br />

wines you always hope to find when<br />

you go travelling off the beaten track.<br />

That evening I fly back to London<br />

satisfied but exhausted…it’s been a<br />

truly rewarding trip.<br />

The inside view<br />

Australian wine by Neil McGuigan<br />

<strong>Wine</strong>-maker of the Year, Neil McGuigan, recently met<br />

Pierpaolo Petrassi, MW to give him his thoughts on Australian wine.<br />

The Hunter Valley must be<br />

one of the toughest places on<br />

earth to grow grapes. It’s the<br />

first fertile valley you come across<br />

when you travel north from Sydney,<br />

which is why the early settlers<br />

planted vineyards there. I doubt<br />

anyone would choose it today.<br />

The climate is so extreme, you’re<br />

literally walking a tightrope every<br />

day. But when you get it right, the<br />

wines are fantastic. It’s where I grew<br />

up, and where I still live today.<br />

I started working in the<br />

family winery when I was<br />

just five years old. There were<br />

huge 750 gallon casks that could<br />

only be cleaned by climbing in small<br />

doors at the front. Because I was so<br />

small I used to get in with my<br />

brother to clean them. We used to<br />

enjoy helping out but I doubt health<br />

and safety would allow that sort of<br />

thing today.<br />

If I hadn’t been a<br />

wine-maker, I would like to<br />

have been a pilot. Just down<br />

the road from us in the Hunter<br />

Valley is the Williamtown air force<br />

base. It’s where the F1-11s used to<br />

be based. When I was a kid growing<br />

up, the air force guys used to come<br />

and visit the winery from time to<br />

time. So I was very tempted to sign<br />

up. But wine won out in the end.<br />

Australia was the first<br />

country to make wines that<br />

people could really<br />

understand. Our wines were the<br />

first to deliver bags of flavour and<br />

intensity. So, for the first time, you<br />

could pick up a glass and<br />

immediately know what grape you<br />

were drinking. For instance, you<br />

could instantly tell a Chardonnay<br />

from the lovely buttery, vanilla<br />

flavour. The wines may have got<br />

more subtle over the years, but<br />

it’s still a great feature of<br />

Australian wine.<br />

There’s a lot of talk about<br />

climate change in Australia.<br />

There’s no doubt that in my lifetime<br />

the vintages have been getting<br />

earlier because the summers are<br />

hotter. We’re also experiencing more<br />

extreme weather patterns, such as<br />

huge storms. But we’re already<br />

adapting our way of working.<br />

Australia is a dry country so we’re<br />

learning to use our precious asset of<br />

water very carefully.<br />

The proudest moment in my<br />

life was having my three<br />

children. But career-wise, it would<br />

have to be winning ‘Best White<br />

<strong>Wine</strong>maker in the world’ at the<br />

International <strong>Wine</strong> Challenge last<br />

year, followed by ‘<strong>Wine</strong>maker<br />

of the Year’ at the International <strong>Wine</strong><br />

& Spirits Competition. I don’t know<br />

whether that’s been done before by<br />

one winery in one year. I think we’ve<br />

really lifted the bar for Australian<br />

wine; both in a quality sense and the<br />

evolution of Australian wine style.<br />

Tastes change and I think<br />

it’s my job as a wine-maker<br />

to reflect that. A few years ago<br />

I realised that many white wine<br />

drinkers were looking for a lighter,<br />

more floral style of wine. So I began<br />

working to bring out the fresh fruit<br />

characteristics in the aromas, while<br />

adding freshness, elegance and<br />

complexity to the palate. Of course,<br />

it’s not something you can achieve<br />

overnight; it’s an evolutionary<br />

process that takes a lot of hard<br />

work in the vineyard and winery.<br />

That’s one of the reasons why I<br />

think we won the awards.<br />

People expect Australian<br />

wines to have a certain<br />

warmth. But that doesn’t mean<br />

they have to be high in alcohol.<br />

We have been developing our reds<br />

over the past few years to deliver<br />

that beautiful Australian warmth<br />

and richness, but without too<br />

much alcohol. I think these will be<br />

next to shine in the competitions.<br />

It may take a year or two as reds<br />

take longer to evolve…but time<br />

will tell.<br />

The wine-maker ’ s year: spring<br />

For someone who grows<br />

grapes and makes wine,<br />

every season brings its<br />

own unique set of<br />

events and challenges,<br />

as I’ll be outlining in this new<br />

series of articles.<br />

In the vineyard<br />

Anyone visiting a vineyard in Europe or North America<br />

around this time of year can witness one of the great<br />

sights of nature. Vines that only a few weeks ago<br />

appeared brown and lifeless, with just a few woody<br />

branches and twigs, will once again be showing signs<br />

of life.<br />

First, sap begins to emerge from the places where the<br />

vine was pruned over the winter months. Next, small green<br />

buds start to appear along the growing canes. Then as we<br />

go into April, shoots and leaves will begin to emerge from<br />

the buds, followed by miniature bunches of flower buds in<br />

early May.<br />

This makes frost a real danger at this time of year: if<br />

temperatures drop below 1°C then the little green buds<br />

will simply fall off. The buds are fledgling grapes, so frost<br />

could spell the loss of the crop. It’s no<br />

surprise therefore that frost prone regions<br />

such as Bordeaux and Burgundy employ<br />

every frost protection method possible,<br />

from small portable heaters in the vineyards<br />

to helicopters that hover over the vineyards<br />

to break up the air.<br />

In the cellar<br />

<strong>Wine</strong>s made from grapes harvested<br />

last autumn will have finished<br />

fermenting over the winter and<br />

many will still be sitting in either<br />

stainless steel tanks or oak barrels<br />

in the cellar. Most reds and whites<br />

being kept in oak barrels will<br />

probably remain there for a few<br />

more months or even years.<br />

However, wines that are best<br />

enjoyed young and fresh are now<br />

ready to be bottled. This includes<br />

everything from Italian Pinot Grigio<br />

to French Sauvignon Blanc and<br />

Spanish Albariño.<br />

Small wineries will often do their<br />

own bottling in the cellar, straight<br />

from the cask. Those that can’t<br />

afford the equipment make use of<br />

mobile bottling trucks; a familiar site<br />

on the back-roads of Europe at this<br />

time of year. One thing is for<br />

certain: the vintage printed on the<br />

label always refers to the year the<br />

grapes were picked, not the year it<br />

was bottled.<br />

With vines springing<br />

back to life in the<br />

vineyard, this is an<br />

exciting and crucial<br />

time for wine-makers<br />

in the Northern<br />

Hemisphere.<br />

What’s going on down under?<br />

As they’re roughly six<br />

months ahead of us,<br />

wine-makers in the<br />

Southern Hemisphere<br />

are getting ready for<br />

this year’s harvest.<br />

Frost protection<br />

netting in Chablis.<br />

The Southern Hemisphere harvest usually<br />

takes place around this time of year, which is<br />

why the New World is always first with the<br />

latest vintage. Look out for 2010 in the next<br />

few months.<br />

The exact timing of the harvest can be an<br />

agonising decision. Pick too early and the<br />

grapes may not be ripe enough; leave it too<br />

late and a sudden downpour may wash the<br />

crop away. It’s a yearly dilemma in<br />

Australia’s Limestone Coast, where<br />

wine-makers coax every degree of flavour<br />

from late-ripening Cabernet Sauvignon<br />

while dodging the frequent rain at harvest<br />

time. These days a decision can be made<br />

instantly, as modern mechanical harvesters<br />

will pick around 5 tons per hour, a job that<br />

would require calling on 100 hand pickers.<br />
