A vintage year 

for South Africa

Anyone lucky enough to be flying into South Africa 

for the World Cup this summer is in for a treat. 

Whether or not it’s a vintage year for football, the 

celebrations are certain to be accompanied by some 

delicious wines and fantastic food. 



Earlier this year in the great tradition of football giant-killing 

a monumental upset occurred: for the first time ever in the 

UK, sales of South African wine have overtaken sales of 

French wine. From complete outsiders just a couple of 

decades ago, South Africa now stands at number four in the 

UK wine league. 

How has this remarkable turnaround come about? Firstly, 

post-apartheid there has been a huge investment with new 

equipment and wine-making techniques introduced. 

Secondly, UK wine drinkers have discovered that South 

African wines offer something truly unique: a style that sits 

at a delicious halfway house between the out-and-out 

fruitiness of the New World and the restrained elegance of 

the Old. 

 

 

 

 

 

 

 

 

 

 

 

 

Three centuries of 

wine-making 

Although South Africa’s success is relatively 

recent, its wine-making roots go back much 

further. The first vines were planted in 1655 by 

Dutch Settlers, just outside Cape Town. However 

it wasn’t until the end of the seventeenth century 

that quality started to improve with the arrival of 

French Huguenots and their wine-making skills. 

The French settlers quickly realised that this 

southernmost tip of Africa, with its combination 

of rugged mountains, stunning coastline and 

delightful Mediterranean-style climate is not only 

an idyllic place to live but the perfect place for 

growing grapes. 

Known as the Cape Winelands, the area 

stretches 150 miles north and east of Cape Town. 

It’s actually one of the few places in this 

sun-baked part of Africa that can support grape 

growing, thanks to cooling breezes blowing off 

the surrounding oceans, chilled by the Benguela 

current coming up from Antartica. 

Table Mountain is famous for its 

‘Table cloth’, a thin, white, wispy 

cloud formation that flows over the 

top, often expanding and contracting 

throughout the day. 

Cool sunshine 

The combination of hot sunshine and cool 

breezes is known as ‘cool sunshine’ amongst 

South African wine-makers and is one of the 

factors that make their wines so special. 

White varieties seem to thrive as the climatic 

conditions lengthen the ripening process, 

creating masses of flavour in the grapes. 

Sauvignon Blanc does superbly in this 

environment. The style is beautifully intense 

yet without the extreme crispness often found 

in Sauvignon Blancs from New Zealand. 

These conditions equally suit Chardonnay. 

Lighter than many of their Australian 

counterparts, yet more flavoursome than the 

wines of Burgundy, South African Chardonnay 

can really offer the best of both worlds. 

With such modern styles of wine it’s easy to 

forget that South Africa has a long wine-making 

tradition. When it comes to reds, the tradition 

shines through as a few of the estates in the 

Winelands have been making wines from 

Cabernet Sauvignon and Merlot for longer 

than some of the great First Growth estates 

in Bordeaux. 

South African reds tend to deliver lovely ripe 

fruit flavours yet they are generally more 

restrained and elegant than the very rich and 

intense styles of wine that have become popular 

in Australia and California. 

The same is true of Shiraz. At its best it has 

all the delicious flavour synonymous with a big 

Australian Shiraz but with a surprising amount 

of elegance and complexity which is what really 

distinguishes this grape variety in South Africa. 

Chenin Blanc 

For a long time Chenin Blanc was famous for 

simply being South Africa’s most widely planted 

grape variety. But quality has improved 

dramatically in recent years as top wine-makers, 

such as Ken Forrester, turn out everything from 

crisp, apple scented thirst quenchers to rich, 

barrel fermented Chenin Blancs full of delicious 

honeyed flavours.

developed in 1925 at the University of Stellenbosch 

as a crossing between Pinot Noir and Hermitage

Visiting the Winelands 

The best time to visit the Winelands is from November through to March, 

when the days are warm and sunny, yet never too hot, thanks to cooling

regions to visit: 

Stellenbosch 

Most visitors start their wine tours in 

Stellenbosch. Just a short drive east 

of Cape Town, this is the country’s 

leading wine region, and is home to 

many of the country’s top estates. 

The town itself is very picturesque 

with an idyllic wine route well 

marked out from the town that 

takes visitors past mountain-fringed 

vineyards. It’s here where you’ll find 

many of the country’s most famous 

estates, with their Bordeaux style 

reds and elegant Chardonnays. 

Paarl 

Just to the north of Stellenbosch is 

Paarl. As it’s slightly more inland, 

Paarl receives only the tail end of 

the sea breezes so it has a slightly 

warmer climate, more favourable to 

red varieties. Shiraz and Pinotage 

can be exceptional from Paarl, as 

can Cabernet Sauvignon. Styles 

vary considerably as there is a great 

variation in landscape, with some 

estates sitting high in the hills. 

Without doubt the best way to get 

to know the area is to follow the 

region’s aptly named ‘Red Route’ 

which takes in 24 of the region’s 

best estates. 

Franschhoek 

Football fans won’t have to splash 

out on Champagne to toast their 

teams’ victories as South Africa has 

been making sparkling wine since 

1688 when a group of Huguenots 

arrived from France. Settling in the 

wine-producing region of 

Franschhoek (Dutch for ‘French 

Corner), they started making ‘Cap 

Classique’ sparkling wine using the 

classic Champagne method. 

More recently, Franschhoek has 

become a centre for gourmet dining 

and boutique wineries. It still retains 

its French character and the grapes 

that have made their name here 

are the French classics such as 

Merlot, Cabernet Sauvignon and 

Sauvignon Blanc. 

Eat like a local 

South African cooking is as 

diverse and interesting as the 

many cultures that make up the 

land, with influences from as 

far afield as Europe, India and 

Indonesia. The national dish is 

Bobotie, a spicy shepherd’s pie

The wine-maker ’ s year: Summer 

A long hot summer. 

That’s what winemakers 

in Europe are 

praying for at this time 

of year. A stable period 

of good weather will enable vines 

to turn sunshine into top quality 

grapes and fine wine.

In the vineyard 

From now until August wine-makers throughout Europe 

will be keeping a careful eye on the weather. Unlike much 

of the New World which can rely on constant sunshine to 

ripen grapes, we are at the mercy of the weather. A cold, 

damp summer can spell disaster. This is particularly true of 

regions that are only just suitable for ripening grapes such 

as Champagne and the Loire. Here much time is spent 

on canopy management; the process of opening up the 

leaves around the bunches by hand so the berries are 

exposed to as much sunshine and heat as possible. 

This aids the development of sugars which will eventually 

be turned into alcohol in the wine. 

As we get towards August and the 

grapes begin to change colour, a crucial 

decision is whether or not to carry out a 

‘green harvest’. This is when some of 

the immature grape bunches are 

removed in order to reduce the overall 

level of the crop. Removing the tiny 

grapes while they are still green 

stimulates the vine into putting all its 

energy into developing the remaining 

bunches. This relatively modern practice 

is now common in fine wine areas such 

as Bordeaux, where quality is crucial. 

Summer is the 

crucial ripening time 

for grapes. By 

August the berries 

will begin to change 

colour in a process 

known as véraison. 

In the cellar, many 

fine wines are now 

being racked. This is 

when clear wine is 

moved from one cask 

to another, leaving 

the sediment behind. 

In the cellar 

Most wine produced in the world is 

made for early consumption and is 

not intended to improve with age. 

However, many finer wines benefit 

from ageing in barrels. This is 

particularly true of red wine, which 

may initially have harsh flavours and 

tannins that need to soften. As a 

result, last year’s vintages in regions 

from Burgundy to Rioja will all still 

be mellowing in barrels in the cellar. 

The majority will undergo occasional 

racking to remove sediment before 

being bottled after 18 months to 

2 years. Bottling often takes place 

around now before the heat of the 

summer kicks in. However, some 

long-lived reds such as Barolo will 

remain in barrel for much longer, 

sometimes for up to 40 years. 

What’s going on down under? 

It’s the middle of 

winter in the Southern 

Hemisphere which is 

when the pruned 

cuttings are removed 

from the vineyard. 

Just like perennial garden plants, the best 

time to prune vines is in the middle of 

winter when they become dormant; 

around this time of year in the Southern 

Hemisphere. The dry prunings are known 

as sarments in France where they have 

long been used on barbecues to impart a 

sweet, smoky flavour to the food. This 

tradition was quickly picked up by 

Australians, thanks to their strong culture 

of outdoor eating. You often see bags of 

vine cuttings for sale down under from 

the previous year’s winter pruning. 

Simply soak the vine cuttings in water for 

half an hour and spread them over the 

hot coals. Then throw another prawn on 

the barbie, open a cold bottle of 

sparkling Shiraz and enjoy!
