A vintage year<br />

for South Africa<br />

Anyone lucky enough to be flying into South Africa<br />

for the World Cup this summer is in for a treat.<br />

Whether or not it’s a vintage year for football, the<br />

celebrations are certain to be accompanied by some<br />

delicious wines and fantastic food.<br />

Earlier this year in the great tradition of football giant-killing<br />

a monumental upset occurred: for the first time ever in the<br />

UK, sales of South African wine have overtaken sales of<br />

French wine. From complete outsiders just a couple of<br />

decades ago, South Africa now stands at number four in the<br />

UK wine league.<br />

How has this remarkable turnaround come about? Firstly,<br />

post-apartheid there has been a huge investment with new<br />

equipment and wine-making techniques introduced.<br />

Secondly, UK wine drinkers have discovered that South<br />

African wines offer something truly unique: a style that sits<br />

at a delicious halfway house between the out-and-out<br />

fruitiness of the New World and the restrained elegance of<br />

the Old.<br />

Three centuries of<br />

wine-making<br />

Although South Africa’s success is relatively<br />

recent, its wine-making roots go back much<br />

further. The first vines were planted in 1655 by<br />

Dutch Settlers, just outside Cape Town. However<br />

it wasn’t until the end of the seventeenth century<br />

that quality started to improve with the arrival of<br />

French Huguenots and their wine-making skills.<br />

The French settlers quickly realised that this<br />

southernmost tip of Africa, with its combination<br />

of rugged mountains, stunning coastline and<br />

delightful Mediterranean-style climate is not only<br />

an idyllic place to live but the perfect place for<br />

growing grapes.<br />

Known as the Cape <strong>Wine</strong>lands, the area<br />

stretches 150 miles north and east of Cape Town.<br />

It’s actually one of the few places in this<br />

sun-baked part of Africa that can support grape<br />

growing, thanks to cooling breezes blowing off<br />

the surrounding oceans, chilled by the Benguela<br />

current coming up from Antartica.<br />

Table Mountain is famous for its<br />

‘Table cloth’, a thin, white, wispy<br />

cloud formation that flows over the<br />

top, often expanding and contracting<br />

throughout the day.<br />

Cool sunshine<br />

The combination of hot sunshine and cool<br />

breezes is known as ‘cool sunshine’ amongst<br />

South African wine-makers and is one of the<br />

factors that make their wines so special.<br />

White varieties seem to thrive as the climatic<br />

conditions lengthen the ripening process,<br />

creating masses of flavour in the grapes.<br />

Sauvignon Blanc does superbly in this<br />

environment. The style is beautifully intense<br />

yet without the extreme crispness often found<br />

in Sauvignon Blancs from New Zealand.<br />

These conditions equally suit Chardonnay.<br />

Lighter than many of their Australian<br />

counterparts, yet more flavoursome than the<br />

wines of Burgundy, South African Chardonnay<br />

can really offer the best of both worlds.<br />

With such modern styles of wine it’s easy to<br />

forget that South Africa has a long wine-making<br />

tradition. When it comes to reds, the tradition<br />

shines through as a few of the estates in the<br />

<strong>Wine</strong>lands have been making wines from<br />

Cabernet Sauvignon and Merlot for longer<br />

than some of the great First Growth estates<br />

in Bordeaux.<br />

South African reds tend to deliver lovely ripe<br />

fruit flavours yet they are generally more<br />

restrained and elegant than the very rich and<br />

intense styles of wine that have become popular<br />

in Australia and California.<br />

The same is true of Shiraz. At its best it has<br />

all the delicious flavour synonymous with a big<br />

Australian Shiraz but with a surprising amount<br />

of elegance and complexity which is what really<br />

distinguishes this grape variety in South Africa.<br />

Chenin Blanc<br />

For a long time Chenin Blanc was famous for<br />

simply being South Africa’s most widely planted<br />

grape variety. But quality has improved<br />

dramatically in recent years as top wine-makers,<br />

such as Ken Forrester, turn out everything from<br />

crisp, apple scented thirst quenchers to rich,<br />

barrel fermented Chenin Blancs full of delicious<br />

honeyed flavours.<br />

developed in 1925 at the University of Stellenbosch<br />

as a crossing between Pinot Noir and Hermitage<br />

Stellenbosch<br />

Most visitors start their wine tours in<br />

Stellenbosch. Just a short drive east<br />

of Cape Town, this is the country’s<br />

leading wine region, and is home to<br />

many of the country’s top estates.<br />

The town itself is very picturesque<br />

with an idyllic wine route well<br />

marked out from the town that<br />

takes visitors past mountain-fringed<br />

vineyards. It’s here where you’ll find<br />

many of the country’s most famous<br />

estates, with their Bordeaux style<br />

reds and elegant Chardonnays.<br />

Paarl<br />

Just to the north of Stellenbosch is<br />

Paarl. As it’s slightly more inland,<br />

Paarl receives only the tail end of<br />

the sea breezes so it has a slightly<br />

warmer climate, more favourable to<br />

red varieties. Shiraz and Pinotage<br />

can be exceptional from Paarl, as<br />

can Cabernet Sauvignon. Styles<br />

vary considerably as there is a great<br />

variation in landscape, with some<br />

estates sitting high in the hills.<br />

Without doubt the best way to get<br />

to know the area is to follow the<br />

region’s aptly named ‘Red Route’<br />

which takes in 24 of the region’s<br />

best estates.<br />

Franschhoek<br />

Football fans won’t have to splash<br />

out on Champagne to toast their<br />

teams’ victories as South Africa has<br />

been making sparkling wine since<br />

1688 when a group of Huguenots<br />

arrived from France. Settling in the<br />

wine-producing region of<br />

Franschhoek (Dutch for ‘French<br />

Corner), they started making ‘Cap<br />

Classique’ sparkling wine using the<br />

classic Champagne method.<br />

More recently, Franschhoek has<br />

become a centre for gourmet dining<br />

and boutique wineries. It still retains<br />

its French character and the grapes<br />

that have made their name here<br />

are the French classics such as<br />

Merlot, Cabernet Sauvignon and<br />

Sauvignon Blanc.<br />

Eat like a local<br />

South African cooking is as<br />

diverse and interesting as the<br />

many cultures that make up the<br />

land, with influences from as<br />

far afield as Europe, India and<br />

Indonesia. The national dish is<br />

Bobotie, a spicy shepherd’s pie<br />

with an egg-based topping and<br />

perfect with a spicy Shiraz or<br />

Pinotage. And of course there’s<br />

the braai, South Africa’s<br />

The wine-maker ’ s year: Summer<br />

A long hot summer.<br />

That’s what winemakers<br />

in Europe are<br />

praying for at this time<br />

of year. A stable period<br />

of good weather will enable vines<br />

to turn sunshine into top quality<br />

grapes and fine wine.<br />

In the vineyard<br />

From now until August wine-makers throughout Europe<br />

will be keeping a careful eye on the weather. Unlike much<br />

of the New World which can rely on constant sunshine to<br />

ripen grapes, we are at the mercy of the weather. A cold,<br />

damp summer can spell disaster. This is particularly true of<br />

regions that are only just suitable for ripening grapes such<br />

as Champagne and the Loire. Here much time is spent<br />

on canopy management; the process of opening up the<br />

leaves around the bunches by hand so the berries are<br />

exposed to as much sunshine and heat as possible.<br />

This aids the development of sugars which will eventually<br />

be turned into alcohol in the wine.<br />

As we get towards August and the<br />

grapes begin to change colour, a crucial<br />

decision is whether or not to carry out a<br />

‘green harvest’. This is when some of<br />

the immature grape bunches are<br />

removed in order to reduce the overall<br />

level of the crop. Removing the tiny<br />

grapes while they are still green<br />

stimulates the vine into putting all its<br />

energy into developing the remaining<br />

bunches. This relatively modern practice<br />

is now common in fine wine areas such<br />

as Bordeaux, where quality is crucial.<br />

Summer is the<br />

crucial ripening time<br />

for grapes. By<br />

August the berries<br />

will begin to change<br />

colour in a process<br />

known as véraison.<br />

In the cellar, many<br />

fine wines are now<br />

being racked. This is<br />

when clear wine is<br />

moved from one cask<br />

to another, leaving<br />

the sediment behind.<br />

In the cellar<br />

Most wine produced in the world is<br />

made for early consumption and is<br />

not intended to improve with age.<br />

However, many finer wines benefit<br />

from ageing in barrels. This is<br />

particularly true of red wine, which<br />

may initially have harsh flavours and<br />

tannins that need to soften. As a<br />

result, last year’s vintages in regions<br />

from Burgundy to Rioja will all still<br />

be mellowing in barrels in the cellar.<br />

The majority will undergo occasional<br />

racking to remove sediment before<br />

being bottled after 18 months to<br />

2 years. Bottling often takes place<br />

around now before the heat of the<br />

summer kicks in. However, some<br />

long-lived reds such as Barolo will<br />

remain in barrel for much longer,<br />

sometimes for up to 40 years.<br />

What’s going on down under?<br />

It’s the middle of<br />

winter in the Southern<br />

Hemisphere which is<br />

when the pruned<br />

cuttings are removed<br />

from the vineyard.<br />

Just like perennial garden plants, the best<br />

time to prune vines is in the middle of<br />

winter when they become dormant;<br />

around this time of year in the Southern<br />

Hemisphere. The dry prunings are known<br />

as sarments in France where they have<br />

long been used on barbecues to impart a<br />

sweet, smoky flavour to the food. This<br />

tradition was quickly picked up by<br />

Australians, thanks to their strong culture<br />

of outdoor eating. You often see bags of<br />

vine cuttings for sale down under from<br />

the previous year’s winter pruning.<br />

Simply soak the vine cuttings in water for<br />

half an hour and spread them over the<br />

hot coals. Then throw another prawn on<br />

the barbie, open a cold bottle of<br />

sparkling Shiraz and enjoy!<br />
