set lovely tables. Today’s Muslim woman is as likely to work all day<br />

as her husband, and so it is important that we also have a variety of<br />

easy, economical and delicious and nutritious meals that we can<br />

enjoy daily without too much fuss.<br />

The recipes found here are a compilation of recipes from my favorite<br />

cook <strong>book</strong>s. I have, to the best of my ability rewritten them to<br />

conform to Islamic dietary laws. There is no wine and no pork, and<br />

of course it is preferable that all meats and poultry are halal<br />

(permissible) meaning that they were slaughtered according to<br />

Islamic laws for slaughtering. There are so many halal butchers in<br />

the US that this should not be a problem. For those who do not have<br />

halal markets in their area, check the internet for places that allow<br />

you to order meat and poultry online and that will ship it to you.<br />

Also, consider making the trip to an area where there is a halal<br />

butcher. Sisters have told me that in some communities they appoint<br />

a brother who knows how to slaughter meat properly to serve as a<br />

butcher for the community. He finds farms that allow for the<br />

purchase and slaughter of animals, and prepares meat and poultry<br />

for the community during <strong>Ramadan</strong>.<br />

Pay close attention to the serving sizes of the recipes. Some are for 2<br />

servings or more, usually not more than four. If you are having<br />

more or fewer people for break fast, or for the early morning suhur,<br />

adjust the recipe accordingly, and season to taste.<br />

We have worked hard to select recipes that are easy, relatively<br />

inexpensive, yet can be presented in good taste as part of any<br />

<strong>Ramadan</strong> meal, no matter how simple or elaborate. They are<br />

American favorites that deserve a place on the <strong>Ramadan</strong> table<br />

whether here in the US or abroad. As my children say, “Muslim<br />
