This fundamental understanding, however, seems to have strayed from its mark as marketers,<br />
overnight/online I love Asia. From the Suez Canal to the edge of the vast Pacific Ocean, home<br />
to more than 4 billion of us, Asia is a honeycomb of treasure simply impossible to relish in<br />
one life time. The diversity, richness and depth in its culture, landscape, sights, aroma, music<br />
and of course the food …. The FOOD! Invasions have been orchestrated and empires grown simply<br />

to one of Asia’s fastest growing business centres and excites guests from<br />

hotel design, has launched a private tour of the city’s emerging art scene that<br />

with local artefacts and antiques that reflect the country’s colonial<br />
history, creating not just a resort, Dohogne said, but an experience.<br />
According to Indra Budiman, General Manager with Shinta<br />
Mani Hotels, the property in Angkor was designed by Bill Bensley<br />
with inspiration from local temples – giving guests the opportunity<br />
to embrace the Shinta Mani philosophy of “open doors, open<br />
hearts.”<br />
“The colonnade, prang (a tall tower-like spire), and enclosures<br />
(the spaces between walls, with passage through the walls by<br />
way of gopuras) are common structures in temples which are<br />
incorporated into the hotel design,” Budiman said.<br />
The resorts have not only incorporated Khmer tradition into<br />
the aesthetic, they make a significant contribution to the local<br />
economy – employing Khmer people, providing healthcare<br />
services, supporting Cambodian hospitality training schools, and<br />
promoting environmentally friendly and sustainable practices<br />
among local businesses and producers.<br />
Shinta Mani’s farming development centre, a collaboration<br />
with the United States government’s Feed and Future Initiative<br />
in coordination with the World Vegetable Centre and USAID,<br />
aims to “research the best varietals of vegetables to be grown in<br />
Cambodia’s harsh climate,” Budiman said, “and then use that<br />
information to teach local villagers to grow their own healthy<br />
veggies in their own home gardens.”<br />
He added that guests at Shinta Mani’s Angkor resort have<br />
helped the community even further through a sponsorship<br />
program, providing hundreds of Khmer villagers with homes,<br />
school supplies, piglets, and more than 1,400 clean water wells.<br />

The King of Luxury, Exotic Travel?<br />
Easy. He followed his heart.<br />
While most of his friends were<br />
grabbing a surf board in search of tasty<br />
waves, Bill was more interested in<br />
making some of his own. Travelling to all<br />
corners of Asia from the 80s on infused<br />
and informed his sense of exoticism. Bill<br />
said that the design of hotels are akin to<br />
making movies––complete with script,<br />
scenery, props and cast. He walked us<br />
through the drama of arrival at the highly<br />
acclaimed, much anticipated Shinta Mani<br />
Wild.<br />
“Shinta Mani Wild is the doorstep<br />
to 800,000 square kilometres of the<br />
wilderness of Cambodia’s oldest parks––<br />
Kirirom Bokor and Cardamon. I have<br />
written the script for the guest arrival to<br />
start with a bang, in that the guest will<br />
wind their way through a narrow jungle<br />
path on the back of an ATV, climb a tree,<br />
strap into a zip line and whiz across<br />
400 metres of forest, and a magnificent<br />
waterfall...twice!”<br />
Sounds like a scene straight out of<br />
Raiders of the Lost Ark! You had me at<br />
zip line. Move over Spielberg. Why not<br />
zip through waterfalls twice?<br />
When asked about the adventure of<br />
acquiring the land for Shinta Mani Wild,<br />
Bill shared that the whole deal was a bit<br />
of a fluke. His partner’s father mentioned<br />
off-handedly that the concession within<br />
the national parks was due to go to<br />
auction about ten years ago. They won<br />
the auction, thinking themselves lucky at<br />
the time.<br />
In a moment of reflection, he shared,<br />
“I often think we bit off more than we<br />
can chew as the task at hand, controlling<br />
rampant logging and illegal wildlife<br />
trade, is exhausting.”<br />
The lure of celebrity helped to define<br />
the experience that will be Shinta Mani<br />
Wild. Bill has said that he hoped guests<br />
would have the feeling of what it would<br />
have been like to be on a luxury safari<br />
in the jungles of Cambodia with Jackie<br />
O. When asked to share what that idea<br />
means to him, Bill explained that Jackie<br />
O visited during a time of peace, adding<br />
it was perhaps the zenith of recent<br />
Cambodian history.<br />
“It was a time when few people visited<br />
Cambodia, but those that did were<br />
treated like royalty. This is how we will<br />
treat our guests.”<br />

Where fantasy<br />
transcends reality<br />
This Page, from top, whimsy meets the mythic<br />

Bill’s accolades run the gamut from<br />
King of Exotic Luxury Resorts to one of<br />
the 100 most creative people in the world.<br />
When we asked Bill to share his current<br />
favourite exotic and creative example<br />
of wonder and fun, he didn’t miss a beat<br />
touting the wacky idea of shoe-horning<br />
a JW Marriott Beach Resort into a 150+<br />
year-old university named Lamarck.<br />
The property, known as JW Marriott<br />
Phu Quoc Emerald Bay, has a Vietnamese<br />
soul with the passion of the university’s<br />
namesake French naturalist. The<br />
design holds hands with history and<br />
sustainability, full of Bill’s signature<br />
myth and whimsy. Qualities that speak<br />
to his penchant of treating work like<br />
a full-time hobby. When asked where<br />
this philosophy of work began he said,<br />
“Gardening.”<br />
This playful, inspirational outlook on<br />
his life’s work was fostered by many<br />
mentors over the years. Bill shared how<br />
lucky he was to have had Lek Bunnag, a<br />
classmate at Harvard as his architectural<br />
mentor, Jeffrey Wilkes as his interior<br />
design mentor, and now Jason Friedman<br />
as his hotel business mentor. In Bill’s<br />
enthusiastic fashion he rattled off many<br />
more, a who’s who in the of world art,<br />
architecture, and horticulture.<br />
“I admire and have been inspired by<br />
a whole host of good folks including<br />
Geoffrey Bawa, Isamu Noguchi, Diego<br />
Rivera, Goetz Hagmuller, Jaya Ibraham,<br />
Made Widjaya, Anouska Hempel, but<br />
most importantly my spiritual mentor and<br />
my partner in life; Jirachai Rengthong.”<br />
Wondering about the ultimate<br />
compliment someone could pay, Bill said<br />
he’s gotten one a lot that he enjoys. It<br />
happens when he’s visiting projects like<br />
The Siam in Bangkok or JW Marriott<br />
Phu Quoc Emerald Bay, both new and<br />
built in a period style. Guests frequently<br />
ask, “Wow, how long did it take you to<br />
renovate this project!”<br />
The ultimate compliment for a man<br />
who likes fantasy to transcend reality.<br />
This had us curious about what a creative<br />
mind like Bill’s enjoys in his downtime.<br />
When asked about his current read, he<br />
mentioned several books. Recently, while<br />
fly fishing in Mongolia, he finished The<br />
Alchemist and shared that he felt it was<br />
everything everyone said it would be.<br />
He’s currently halfway through First<br />
They Killed my Father by Loung Ung,<br />
about the Cambodian atrocities. Next on<br />
deck will be The Refugees by Viet Thanh<br />
Nguyen, a Pulitzer Prize winner.<br />
Boundless creativity, energy and<br />
whimsy have been great companions on<br />
this wild, unscripted ride of The King of<br />
Exotic Luxury travel. We look forward to<br />

new glass-and-chrome suburban facades, the city has a lot<br />

Eat street<br />
Mumbai’s eclectic dining scene has been burgeoning<br />
over the past few years and has positively hit turbospeed<br />
in <strong>2017</strong>. The city’s first Brazilian restaurant,<br />
Boteco in Bandra Kurla Complex (BKC) opened doors<br />
recently with potent caipirinhas, delectable coxinhas<br />
(chicken stuffed in dough & golden fried to perfection),<br />
and assorted grilled meats on offer. BKC is also home<br />
to Hello Guppy, a brightly coloured casual Japanese<br />
restaurant where the walls are plastered with retro anime<br />
pop art and the sushi, ramen, and donburi are some of<br />
the best in the city. Practically next-door, celebrated<br />
ex-Taj chef has opened the eponymous Hemant Oberoi<br />
Restaurant serving up modern European with a touch of<br />
Japanese and Latin American influences. If you prefer to<br />

in Khar, a glam restaurant designed by Gauri Khan where<br />
the kitchen eschews the stove and cooks everything from<br />
litti-chokha to raan biryani either on charcoal or tandoor.<br />
For fans of the East, Progressive Oriental House<br />
(POH) at Lower Parel promises a delectable pan-Asian<br />
experience, while the très français Slink & Bardot at<br />
Worli will satiate your taste buds with inventive French<br />
cuisine – try ‘The Duck’ and the ‘Belle-Helene’ poached<br />
pear, and thank us later.<br />
Raise a toast<br />
Some standout new watering holes have opened up in<br />
Mumbai lately where you’ll be guaranteed a swinging<br />
time. The much-awaited Bengaluru import Toast & Tonic<br />
at BKC is the place to go for fabulous (and generously<br />
sized) gin cocktails spiked with housemade shrubs – The<br />
Herbalist with its citrus and basil notes is our favourite.<br />
Lower Parel’s Kamala Mills is bursting at the seams<br />
with excellent restaurants and bars, the newest of which<br />
is Kode, with its massive centrepiece of a bar where each<br />
drink is a theatrical, three-course presentation – you will<br />
never look at a Bloody Mary or an Old Fashioned in quite<br />
the same way again. The Taj Land’s End has a new<br />
gastro-bar, The House of Nomad, where heady cocktails<br />
mix with a global tapas menu, while a floor-to-ceiling<br />
‘wine wall’ woos the oenophile. If you’d rather sip on a<br />
whisky, Burn – Kitchen & Malt Room in BKC beckons<br />
with an extensive list of single malts from around the<br />
world.<br />
Culture vulture<br />
Mumbai’s art scene got a new addition recently with<br />
the Rukshaan Art Gallery opening doors in the art and<br />
culture precinct of Kala Ghoda. The gallery presents the<br />
novel concept of ‘undated’ shows where the artists will<br />
be showcased for several months while its minimalistic<br />
décor allows the art to shine through. Further north, an<br />
old mill warehouse in Mahalaxmi has been repurposed<br />
into The G5A Foundation of Contemporary<br />
Culture with a rotating calendar of music and theatre<br />
performances, documentary screenings, and discussions.<br />
Suburban Andheri gets a new live music venue, The<br />
Finch, where international and homegrown artists treat<br />
you to everything from jazz and folk to soft rock and<br />
world music, all of which is combined with craft beers<br />
and world cuisine.<br />
Retail therapy<br />
Take a piece of Mumbai back with you from India<br />
Circus, the designer Krsnaa Mehta’s first-ever store.<br />
Located in Kala Ghoda, this is your one-stop shop for<br />
everything from kitschy home décor to funky accessories<br />
and fashion. Nearby, the cool design store Filter has an<br />

Supanniga Eating Room: Restaurateur Thanareuk<br />
Laoraowirodge, owner of the Michelin-starred Somtum Der<br />
in New York has several branches of Supanniga, serving<br />
traditional recipes from his grandmother’s cooking from Trat,<br />
on Thailand’s eastern seaboard. His latest openings include an<br />
intimate dinner boat and a riverside venue opposite iconic Wat<br />
Arun.<br />
House on Sathorn: Set inside an exquisite 130-year old<br />
colonial mansion that belonged to a lord, the House has been<br />
restored to its former glory, and Culinary Director and head<br />
chef Fatih Tutak matches the building’s history by creating<br />
cuisine art inspired by his memories living in both Istanbul<br />
and Germany.<br />
Gaggan: Winner of the prestigious San Pellegrino Best<br />
Restaurant in Asia award for three years running now, Chef<br />
Gaggan Anand mixes molecular dining techniques and<br />
progressive interpretations to turn Indian food on its head and<br />
deliver an amazing dining experience. The 19-part tasting<br />
menu is reason alone to visit Bangkok.<br />
DRINK<br />
Vogue Lounge: Sporting sophistication and elegant drinks,<br />
Vogue Lounge features an interior that is right out of a black<br />
and white 1960’s Vogue Magazine shoot, as well as the city’s<br />
only air-conditioned outdoor deck. Watch Italian bar maestro<br />
Francesco Moretti (of Shanghai’s Bar Rouge fame) pour<br />
classic and signature drinks with house-infused gins and rums.<br />
CRU Champagne Bar: Not is it only Bangkok’s new<br />
highest rooftop bar, but this suave new open-air nightspot is<br />
the only place in town where you can get a bottle of Bollinger<br />
James Bond 007 Spectre Limited Edition champagne, Agent<br />
007’s drink of choice. The only thing more enticing than this<br />
are the 360-degree panoramas of the Bangkok cityscape.<br />
J Boroski: This is Manhattan cocktail guru (he calls<br />
himself a “mixsultant”) Joseph Boroski’s private speakeasy.<br />
He doesn’t list an address (you’ll have to contact him on<br />
Facebook for directions), and there isn’t even a menu, but<br />
watching the mixologists craft something for you is akin to<br />
witnessing a magic show.<br />
Q & A: Modelled after a 1920’s American railway carriage,<br />
this is another Bangkok speakeasy option, with a handful of<br />
leather bar stools providing guests with a closeup view of<br />
the trio of mixologists who craft up nonorthodox takes on<br />
Negronis and plenty of other classics.<br />
Sky Bar at Lebua: Perched on top of the golden-domed<br />
State Tower, the Sky Bar remains a perennial favourite. High<br />
rollers come for the dazzling views of the Chao Phraya River<br />
far below, as well as to sample the Hangovertini, created when<br />
the Hollywood blockbuster Hangover II had scenes filmed<br />
here.<br />

EmQuartier: Since opening in 2015, this flashy luxury mall<br />
has become the darling of well-heeled Bangkok shoppers.<br />
EmQuartier has flagship stores from Valentino, MCM, Jimmy<br />
Choo and a dazzling array of high-end boutiques. The mall<br />
also boasts a world class Virgin fitness centre, an IMAX<br />
theatre, and an entire zone of classy restaurants.<br />
Button Up: Lots of Thai celebrities get their duds made<br />
here, Rapper Snoop Dogg recently came in for an outfit, and<br />
the customised service and fitting is the best in Bangkok.<br />
You’ll pay high prices, but you’ll get Loro Piana and other fine<br />
European fabrics for your suit.<br />
Disaya: Celebrities Jennifer Lopez and Amy Winehouse<br />
have worn Thai fashion diva Disaya’s dresses. She mixes<br />
Thai cuteness with British practicality and her Central Groove<br />
boutique shop has 120 square me-tres of pink and gold tones<br />
to accent all the chic clothing.<br />
Open House: It’s not just the gorgeous coffee table and<br />
highbrow art books that will bring you here, but the entire<br />
layout. The open-plan fine art bookstore on top of the snazzy<br />
Central Embassy Mall is surrounded by gourmet eateries, coworking<br />
spaces, and a bevy of chill-out spots all in one place.<br />
Gaysorn Village: The uber-luxury Gaysorn Plaza has<br />
both expanded and rebranded, and in addition to its stellar<br />
collection of Hugo Boss, Louis Vuitton, and Prada boutiques,<br />
it has now become a lifestyle urban village featuring an array<br />
of pop-up stores. It also boasts a newly completed elevated<br />
skywalk connecting all the downtown shops.<br />
STAY<br />
The Siam Hotel: Catering to the 5-star traveller who wants<br />
privacy and exclusivity, the Siam has a fantastic ‘hidden’<br />
location in historical Dusit, on the banks of the Chao Phraya<br />
River. Run by a well-heeled family of noted Thai musicians<br />
and actors, Bangkok’s most luxurious digs feature a Thai<br />

SAMUI IS THE BOUTIQUE ISLAND OF CHOICE IN SOUTHEAST ASIA<br />
Unlike most airports, landing in Koh Samui<br />
is an experience in itself. Flying high above the clouds,<br />
you slowly descend through the mist, catching glimpses<br />
of green mountains ringed by rocky shores and sandy<br />
beaches. As you spy the odd fishing boat and sailing<br />
yacht, you pass low over a patchwork of houses and<br />
pool villas, before finally coming to a stop – but the<br />
fun doesn’t end there. After walking down a movable<br />
staircase, you board what must be the cutest airport<br />
‘buses’ in existence. A fleet of colourful trolley cars<br />
transport you to an open-air terminal that welcomes<br />
you to the tropics: huge tree trunk-shaped pillars hold<br />
up a vast wooden roof, as you casually walk through<br />
immigration and baggage claim.<br />
It may all seem rather nonchalant, but this relaxed<br />
sense of arrival is part of the reason that Samui is rapidly<br />
becoming the boutique island of choice in Southeast Asia<br />
– as soon as you land, you feel warmly welcomed. Of<br />
course, there are other factors at play as well: an emerging<br />
upmarket dining scene, chic cocktail bars, amazing diving<br />
and snorkelling, and – perhaps most importantly – a raft<br />
of luxury hotels to cater to visitors’ every need, including<br />
the likes of the Four Seasons, InterContinental, Samujana,<br />
W and Vana Belle.<br />

A HIDDEN STONE PATH LEADS YOU INTO A MAGICAL MINI-VALLEY<br />

Opened a decade ago, the Four Seasons Resort Koh<br />
Samui, to give it its proper name, occupies a small headland<br />
on the northwest corner of the island. Designed by iconic<br />
Bangkok-based hotel designer Bill Bensley, the all-pool villa<br />
property has taken the idea of a traditional Thai village –<br />
thatched roofs, plentiful vegetation, use of indoor-outdoor<br />
areas – and given it an ultra-luxe twist. Interestingly, the resort<br />
was built on the site of a former coconut plantation (Samui is<br />
said to grow the best coconuts in Thailand), with more than<br />
800 of the trees being retained after construction. I was once<br />
fortunate to stay here on a ‘babymoon’ with my pregnant wife,<br />
and the two night stay has remained long in the mind.<br />
Over lazy days, we wandered down to the beach (well<br />
actually, the excellent golf cart chauffeur service gave us a<br />
ride), hung out in the pool, and enjoyed a breakfast of fresh<br />
chocolate croissants, hand served by the pastry chef. We hear<br />
that their Sunday brunch is equally as amazing, held atop a<br />
palm-tree clad hill in their Koh Thai Kitchen. However, what<br />
we can vouch for is the rather amazing spa, accessed by a<br />
hidden stone path, that leads you into a magical mini-valley<br />
that is rather aptly called: The Secret Garden Spa. Here, you<br />
savour treatments such as the ‘Earth Energy Four Hands’, a<br />
rhythmic massage performed by two therapists using crystals,<br />
or the soothing ‘Siam Lovers’ couples ritual.<br />
With its lush landscape and hilly interior, it’s no<br />
surprise that many of Samui’s high-end hotels can claim<br />
to have the best views on the island, through those at the<br />
InterContinental Samui Baan Taling Ngam Resort have to<br />
be a contender. You arrive at the InterCon, as its guests fondly<br />
call it, via a steep, twisty road that emerges at the back of the<br />
lobby. As the bellboy fetches your luggage, you’re ushered<br />
into a vast lobby filled with ornate, traditional furnishings. But<br />
those aren’t what catch the eye – that would be the floor-toceiling<br />
views of the endless blue ocean, only interrupted by<br />
small green outcrops, and the wake of passing boats. However,<br />
if you can manage to tear yourself away from the view, the<br />
resort’s Amber restaurant holds one of the best cooking classes<br />
in Samui. Running from mid-morning to mid-afternoon, it’s<br />
one of the most pleasurable ways to understand Thai culture.<br />
You begin with a shopping trip to the lively local market,<br />
where the hotel chef introduces some of the distinctive<br />
vegetables, fruits and spices that make up the menu of the<br />
– often quite spicy – southern Thai cuisine, followed by a<br />
stop at the fish market, full of local seafood such as lobster,<br />
barracuda, and crab. Pay close attention to the tutorials, as<br />
you’ll need to pick up your own ingredients for the cooking<br />
lesson back at the InterCon, where you’re taught to make<br />
classic Thai favourites such as Pad Thai and Tom Yum Goong.<br />

BOBBLING ON THE OCEAN WAVES<br />
AS THE SKY TURNS TO ORANGE<br />
Lunch is served!<br />
Back on the north shore is a relative newcomer to the island,<br />
the W Retreat Koh Samui. With the hip, brightly coloured<br />
vibe that has come to define the brand, a giant ‘W’ marks the<br />
spot on the beach that faces out to the neighbouring party<br />
island of Koh Phangan. That lively spirit continues up the<br />
hillside to the 74 private pool villas, and the resort’s six bars<br />
and restaurants. However, the most famous has to be Woo<br />
Bar, where a series of sunken lounges, lined by neon green<br />
cushions, dot a clear infinity pool that blends into the Gulf of<br />
Thailand. While open all day long, in the evening it becomes<br />
a destination for the young and cool from all across the island,<br />
drawn by daily drinks specials, live DJs – check out the classic<br />
funk and disco played on Tuesday nights – and, of course, the<br />
sunsets. If that’s not enough, they also hold monthly events,<br />
including pool parties with names like ‘Wild Wild Wet’,<br />
international DJ sets, such as the Back Stage Festival, and<br />
Monday movie nights.<br />
Of course, a trip to Samui wouldn’t be complete without<br />
getting out on the water, and they don’t come much more<br />
luxuriously appointed than the Kindred Spirit. Part of<br />
Samujana, a group of 27 luxury residences on the island’s<br />
northeast coast that are available to book (or buy, if you decide<br />
you never want to leave, a distinct likelihood) this is one of<br />
the grandest boats to sail in the island’s waters: a fully kitted<br />
out 13-metre long catamaran, including three staterooms, airconditioning,<br />
and a full kitchen. Depending on your schedule,<br />
they run half day and full day cruises, that can include sailing<br />
to the remarkable Ang Thong Marine Park – Thailand’s most<br />
visited marine park consists of 42 uninhabited islands covering<br />
some 100 square kilometres – for a day of fun snorkelling,<br />
cruising over to Koh Phangan for lunch on the beach, or<br />
exploring around Samui, searching for secret coves.<br />
The boat comfortably accommodates up to 15 guests,<br />
though you might want to pare down that number for their<br />
signature sunset cruise, which only allows a maximum of ten.<br />
If you do plump for their evening sail – and we recommend<br />
you do – you may find yourself bobbling on the ocean waves,<br />
enjoying good company, the breeze gently blowing past,<br />
champagne in hand, as the sky turns from blue to purple to<br />
orange. On evenings like this, it’s all-too-easy to forget that<br />
there’s another world beyond this – Asia’s fantasy island.<br />

Once a backpacker haven with dazzling beaches and<br />
cheap food, Phuket has been a fixture on Asia’s tourist trail for<br />
decades. Today, its many high-end villas and luxury hotels are<br />
attracting new travellers in search of fine food, great cocktails and<br />
new experiences. Here’s a look at what’s new for visitors to Phuket.<br />
EAT<br />
An eccentric newcomer to Phuket’s restaurant scene is HOME<br />
Kitchen, Bar & Bed, just north of Patong in a hangar-sized space<br />
cleverly renovated by the new owners, the Underwood family, into<br />
an intimate restaurant with waterfront views, warm lighting, cosy<br />
couches and quirky home fixtures. HOME doubles as an art space<br />
with an upstairs gallery featuring local artists, while dishing up<br />
international cuisine like Wagyu steaks, chocolate lava cake and<br />
signature cocktails. Go on Tuesday evening to dine at the chef’s<br />
table with a set menu under 1,000 baht. If you appreciate their decor,<br />
check out the Underwood’s design studio located near IKEA in the<br />
centre of the island.<br />
Couples seeking a more romantic night should try Benny’s<br />
American Bar & Grill, located on a quiet road between Surin and<br />
Bangtao near the luxurious Amanpuri resort. This hotspot serving<br />
up excellent cocktails, ribs and other casual fare was founded by<br />
longtime Phuket resident Benedikt De Bellis, an Italian who earned<br />
his chops among Phuket expats by managing established icons like<br />
Catch Beach Club and Siam Supper Club.<br />
Need lighter fare after a big night out? Atsumi Raw Cafe<br />
in Rawai has gained fame among vegetarians for dishes like<br />
Cauliflower Mint Cous Cous, Indonesian Gado Gado Wrap and Thai<br />
Coconut Wrapped Dumplings, plus an amazing selection of juices<br />
and smoothies that cleanse, energise and boost immunity.<br />
DRINK<br />
Phuket’s party animals were delighted when Twinpalms recently<br />
reopened Catch on Bangtao beach. Phuket’s first beach club to bring<br />
glamour to late-night dining and drinking, the original location was<br />
shuttered last year as part of a government clean-up that closed all<br />
businesses on Surin beach. Don’t worry, the new location is just as<br />
good as the original, combining great service, food and music until<br />
early morning hours at a stunning beachside location.<br />
Budding mixologists will enjoy the Chalong Bay Rum Distillery,<br />
which produces original handcrafted rum using sustainable<br />
production that binds the traditional French art of distillation with<br />
the rich sugarcane heritage of Thailand. Using a traditional copper<br />
still imported from France and a centuries-old distillation process,<br />
Chalong Bay’s innovative craftsmanship has produced an award-<br />

winning white rum of incredible character using 100% natural Thai<br />
sugarcane. Some varieties are flavoured with local ingredients like<br />
kaffir lime, lemongrass, cinnamon and Thai sweet basil. Small<br />
tours are offered throughout the day, or just sample their rum in<br />
affordable cocktails or delicious homemade rum raisin ice cream in<br />
their breezy outdoor bar.<br />
DO<br />
The Phuket Elephant Sanctuary bordering the Khao Phra Thaeo<br />
National Park is pioneering ethical elephant tourism by offering<br />
a retirement home for sick, injured, and old elephants who have<br />
worked an exhausting life in the logging and tourism industries. You<br />
can feed, walk with, and observe these beautiful mammals as they<br />
roam freely, socialise and bathe naturally in fresh water lagoons<br />
— a great way to entertain kids while also educating them about<br />
ethical tourism and animal cruelty issues. Open less than a year, the<br />
sanctuary has already hosted celebrities like Coldplay, Leonardo<br />
DiCaprio and Britney Spears. Afterwards, be sure to check out the<br />
The Phuket Gibbon Rehabilitation Project just five kilometres up<br />
the road, which rescues local gibbons that were caged as pets or<br />
sold to touts who parade them around tourist areas.<br />
Need a bit of rehab for yourself? Benjamin Carter, Aman Resort’s<br />
former spa director, has set up Health & Wellbeing Asia in Phuket,<br />
offering bespoke lifestyle programs that integrate spa treatments,<br />
personalised exercise classes, nutrition, naturopathic medicine,<br />
and advanced specialist bodywork. He works alongside the chef<br />
at top hotels like Trisara, Amanpuri and J.W. Marriott to prepare<br />
healthy meals and detox juices delivered to your door. Prices start at<br />
US$1,000 per day.<br />
If that sounds too ambitious, Phuket now offers a range of yoga<br />
studios like Yoga Republic near Bangtao which offers packages<br />
ranging from 260 to 460 baht per class, depending on how long<br />
you’re staying.<br />
STAY<br />
The Nai Harn, one of Phuket’s finest luxury hotels, opened last<br />
year following an extensive 18-month renovation. Dating back<br />
to 1986, the property was first as a Mandarin Oriental, then a Le<br />
Royal Méridien and finally, the Royal Phuket Yacht Club. The<br />
Nai Harn sets a new bar for luxury, proven by its status as the only<br />
hotel on the island accepted as a member of The Leading Hotels of<br />
the World. All rooms and suites offer private balconies and views<br />
overlooking stunning Nai Harn beach and bay.<br />
If you seek serenity more than sea views, another newcomer<br />
worth trying is Keemala, a five-star eco-friendly resort nestled<br />
in the mountains behind Kamala beach. Forgoing the anonymous<br />
nature of major hotel chains, Keemala embraces Thai culture,<br />
philosophy and materials, all richly brought to life through<br />
distinctive design and customized experiences. Keemala’s pool<br />
villas are decorated using recycled and sustainable materials, for<br />
instance, the restaurant’s ingredients are sourced from the hotel’s<br />
organic garden and the hotel has a strict no-plastics policy for the<br />
hotel and spa. Clever landscaping assistance is provided by rescued<br />
buffalos which graze around the premises.<br />
SHOP<br />
World-famous Thai silk brand Jim Thompson offers stylish bags<br />
at stores around the island including two in the Laguna Phuket<br />
resort complex’s Canal Village. There are a few high-end boutiques<br />
and art galleries worth checking out at Allan Zeman’s tiny mall in<br />
Surin, The Plaza. Antique & art gallery hopping across the island<br />
has its charms as well, with quirky finds and discovering abstract<br />
and mainstream paintings a satisfying pursuit. The mass market<br />
shopping malls like Jungceylon and Central pull the crowds in<br />
during peak afternoon head.<br />
The newcomer to Phuket’s shopping scene is Boat Avenue<br />
Street Mall, an upscale outdoor mall near entrance of the Laguna.<br />
Boutiques such as Zen Sisters, Dalaya, La Lita and Marie France<br />
Van Damme showcase local and international designers offering<br />
evening gowns, Italian shoes, jewellery and swimsuits.<br />
The mall also has several high-end home decoration stores,<br />
notably Quattro Design’s 900-square meter flagship store, as well as<br />
shops selling food and wine, spa services and small cafes and food<br />
trucks. The mall is anchored at the lake end by The Cut, Phuket’s<br />
newest grillhouse with its own pool to keep the kids entertained<br />
while parents enjoy great steaks and cocktails.<br />

WE ARE GREETED - RATHER FITTINGLY - WITH A GLASS OF<br />
ROSE SPARKLING WINE<br />
In<br />
pink as the regal entranceway. Half a dozen smiling and<br />
the midst of negotiating the hectic roads of<br />
Jaipur, the bustling capital of Rajasthan,<br />
our driver suddenly swings the car into<br />
a discreet driveway. We pass through a<br />
turreted “elephant gate” painted a pretty<br />
pale pink and follow the gravelled route<br />
flanked by verdant gardens before pulling<br />
up outside a palace painted in the same<br />
smartly dressed men each wearing a distinctive candy<br />
pink turban wait to welcome us. We are greeted – rather<br />
fittingly for The Pink City – with a glass of rose sparkling<br />
wine.<br />
So far, so Jaipur perhaps but inside is a complete<br />
surprise. Sujan Rajmahal Palace, now a luxury boutique<br />
hotel, may be approaching 300 years old but its interior<br />
has been decorated in a refreshingly contemporary way.<br />
Each of the public spaces is adorned with fantastically<br />
striking, custom made wallpaper from bright pinks and<br />
turquoise blues to sultry Art Deco Chinoiserie and Indian<br />
inspired designs. The chandeliers, antiques and paintings<br />
remind you however that you are staying in a royal<br />
residence.<br />
As palaces go Rajmahal is on the petite side rather than<br />
a mammoth mausoleum with just 14 guest rooms – it<br />
was commissioned by Maharaja Sawai Jai Singh II for<br />
his wife. Society interior designer Adil Ahmad, recently<br />
commissioned to spruce the place up, has achieved a<br />
sumptuous cosiness that feels like a private home albeit a<br />
very grand one. Jaipur’s royal family still own Rajmahal<br />
(it is run by Sujan, the renowned company behind three<br />
luxury tented camps in Rajasthan) and the princess has an<br />
office in the grounds though they reside in the far larger<br />
City Palace in old Jaipur (the hotel can arrange a private<br />
tour of this palace as well as secure you a set in the royal<br />
box at the polo).<br />
While still a royal residence, Rajmahal played host to<br />
the likes of Queen Elizabeth the second, the Prince and<br />
Princess of Wales and Jackie Kennedy as the framed<br />
black and white photographs and the names of the suites<br />
attest. Beautiful carpets gifted by another distinguished<br />
visitor, the Shah of Iran, hang on the walls as the Maharini<br />
magnanimously wanted everyone to enjoy them. The<br />
family’s love of “the sport of kings” is also reflected in<br />
The Polo Bar, lined with trophies and photographs.<br />
Our Palace Room is reached via a stunning marble<br />
staircase and like all the guest rooms and suites lies<br />
discreetly behind mirrored doors which adds to the feeling<br />
of a private home. Inside our host tells me “A Maharini<br />
does not make her own coffee,” before explaining that<br />
there are no facilities for hot beverages in the room: “You<br />
ring, and we will bring you coffee.”<br />
Once you’ve ticked off sightseeing inside the old walled<br />
city and the Amber Fort; and shopped ‘til you’ve dropped<br />
in the bazaars and boutiques, Rajmahal Palace provides a<br />
whimsical oasis. We spend our days exploring in the early<br />
mornings, after breakfasting on fresh juice and stuffed<br />
parathas, and retreating to Rajmahal in the heat of the<br />
afternoon. The hotel has the bonus of a large, glamorous<br />
looking swimming pool surrounded by inviting sun<br />
loungers. The designer has had fun here too with a shady<br />
terrace complete with mirrors and modern chandeliers<br />
which look spectacular at dusk. And a note for shopping<br />
fans: there’s a branch of the revered New Delhi based<br />
Kashmir Loom at Rajmahal so you can stock up on the<br />
best cashmere shawls without leaving the grounds.<br />
Another unique touch is that afternoon tea is served to<br />
hotel guests every day between 4 pm and 6 pm. You may<br />
have it wherever you wish, but one particularly charming<br />
spot is on the manicured lawn under a series of attractive<br />
open sided tents (pale pink of course).<br />
A pleasant surprise for the (relatively) diminutive size<br />
of the hotel is that there are three dining rooms, each<br />
more strikingly designed than the other: the grand Orient<br />
Occident is open for dinner while the cool mint Colonnade<br />
and 51 Shades of Pink (decorated as the name suggests)<br />
restaurants both serve breakfast and lunch. All offer<br />
the same menu of Indian and Western dishes; we stuck<br />
resolutely to the former which is excellent.<br />
We also tried one of the Sujan Rajmahal Palace’s private<br />
dining experiences one evening, dining in one of the<br />
aforementioned tents on the lawn. At night the scene is<br />
enticingly lit by lanterns and makes for a gorgeous venue.<br />

Some 80 kilometres outside Jaipur deep in the<br />
countryside is a former royal hunting ground turned<br />
exclusive retreat. The tranquil Amanbagh, part of the<br />
elite Aman resorts, surrounded by the Aravali Hills is the<br />
perfect antidote to energetic Jaipur.<br />
As we draw nearer we pass through a village entirely<br />
devoted to the craft of stone masonry. Apparently, orders<br />
are placed for these statues from far and wide across<br />
the region. The landscape becomes rockier and the road<br />
bumpier until we reach the ancient walled grounds of<br />
Amanbagh. Within are palm, mango and fig trees and a<br />
camel trots down the driveway ahead of us. “He is Babu,<br />
our in-house camel,” explains our driver. Lucky old Babu<br />
being an Aman camel I can’t help but think.<br />
Although Amanbagh is 21st century built it’s classic<br />
fairytale India in its design: all romantic domes and<br />
archways, colonnades and courtyards, in pink marble and<br />
sandstone. Our room is a Pool Pavilion, a standalone villa<br />
with its own private swimming pool. We spend most of<br />
our time in the terraced garden and are joined variously<br />
by families of monkeys and colourful butterflies and birds<br />
that swoop over the pool.<br />
Some guests come to Amanbagh for safari trips to the<br />
nearby Sariska Tiger Reserve (further afield Ranthambore<br />
may be more well-known, but Sariska is less crowded<br />
and has a high rate of tiger sightings); others book in for<br />
the four to 21-day Ayurvedic programmes. And there are<br />
easily do-able day trips to lesser visited sites such as the<br />
temples of Neelkanth, serene Somsagar Lake (good for<br />
picnics or meditation) and the abandoned city of Bhangarh<br />
where you are more likely to encounter monkeys and<br />
peacocks than other tourists. As such it makes for a<br />
special place for a yoga session. But one of the unique,<br />
unforgettable experiences of Amanbagh is simply to<br />
witness rural Rajasthani life around you.<br />
One evening we joined aarti at the local roadside temple<br />
where devout locals banged drums, rang bells and chanted<br />
to herald the last hour of prayer. Another night we joined<br />
‘The Cow Dust Tour’, so named after the Indian phrase for<br />
the time of day when the cows are lead home, stirring up<br />
dust as they go.<br />
Just before dusk we head out in an open topped jeep<br />
and pass a smattering of chhatri, a hillside fort and temple<br />
(once connected by tunnel) and a “haunted” village. In<br />
the golden light we pass camel and carts and goats being<br />
herded. Long, loopy tailed langur monkeys regard us<br />
from stone walls and smaller macaque monkeys crouch<br />
overhead in the trees. There’s an abundance of peacocks<br />
and it’s easy to see why this area is a bird watchers’<br />
paradise even though at the time of our visit many have<br />
already migrated.<br />
Women in brightly coloured safaris and headscarves<br />
of orange, yellow and purple farm the fields for wheat or<br />
okra, the former impressively balanced on their heads in<br />
huge parcels and the latter a local speciality that later we<br />
see being sold in the village centres. As we drive through<br />
tiny enclaves small children run out waving and calling<br />
“goodbye!” to us and we are invited in for chai several<br />
times.<br />
That evening we sample both okra and goat on the<br />
Amanbagh’s superb pan Indian menu. We eschew the<br />
pleasant air conditioned dining room each meal for the<br />
terrace, overlooking the fabulous swimming pool and<br />
serenaded every night by traditional musicians. There<br />
are also opportunities for private dining on the lantern lit<br />
roof terrace or more intrepid locations in the surrounding<br />
countryside.<br />
As with all Amans there’s a calming energy about<br />
the resort that’s hard to leave. And of course the spa is<br />
fantastic (the suites are particularly stunning). As well<br />
as Ayurvedic treatments, following a consultation with a<br />
traditional Indian medicine doctor, there’s a range of body<br />
treatments on offer such as the Maharaja or Maharani<br />
massage which I opt for. The masseuse applied just the<br />
right amount of firm pressure to sort out my back tension<br />
and I emerged feeling as if I was walking taller.<br />
And if you haven’t had your fill of shopping by the time<br />
you reach Amanbagh, the boutique here has a tight, expert<br />
edit from some of Jaipur’s finest including The Gem<br />
Palace and Kashmir Loom. This being Aman they promise<br />

TUSCANY, AN INDULGENT COMBINATION OF WINE,<br />
FOOD AND SCENIC LANDSCAPES<br />
Tuscany has one of the most alluring landscapes<br />
in the whole of Italy and its rolling hills<br />
covered in vineyards and olive groves<br />
continues to lure travellers from all around<br />
the world. Fortress-topped peaks are scattered across<br />
the countryside reminding visitors of the past tussles<br />
that occurred throughout history between the region’s<br />
powerful city states.<br />
The most significant locations are now protected as<br />
UNESCO World Heritage Sites and include central<br />
Florence, the historic centre of Siena, historic centre<br />
of San Gimignano, historic Pienza, the Medici villas<br />
and gardens, Piazza de Duomo in Pisa and the Val<br />
d’Orcia.<br />
Visitors can explore these sites as well as enjoy the<br />
picturesque landscape, superb wines and wonderful<br />
food on a self-drive holiday with May being a perfect<br />
time of year with perfect Mediterranean weather and<br />
just before the European summer with its crowds and<br />
over-booked hotels.<br />
Montalcino is a medieval hill town located in<br />
southern Tuscany that came under the influence<br />
of Florence in the mid 16th century after various<br />
conflicts between Siena and Florence. It is a lessvisited<br />
Tuscan destination and a good base to explore<br />
the more popular cities of Siena (42km away) and<br />
Florence (110km away) to the north.<br />
Historical Context<br />
Wine is an important element of any visit to Tuscany<br />
with several iconic wines including Chianti and<br />
Brunello di Montalcino. The Etruscans started<br />
cultivating grapes in southern Tuscany many<br />
centuries ago with contemporary winemakers<br />
continually refining the technology to produce some<br />
of the world’s most acclaimed wines. Montalcino<br />
is famous for its Brunello di Montalcino red wine<br />
while in other parts of Tuscany, Chianti is king<br />
although both are made from the same grape variety<br />
of Sangiovese.<br />

Montalcino is a great walking destination as it’s<br />
not too undulating and with steps in the steeper parts.<br />
Caution needs to be exercised while walking along<br />
the main thoroughfares as vehicles use the mostly<br />
one-way alleyways. Narrow cobblestone lanes<br />
dominate and the narrower pathways are pedestrian<br />
only. While maps are available of the town and its<br />
roads, Montalcino is a good place to wander with<br />
little chance of getting lost.<br />
The 14th century fortress is the place to start<br />
exploring as it is located on the highest land in the<br />
town where it’s possible to view the various valleys<br />
below. There are several old churches within the<br />
walled town including the Duomo or cathedral near<br />
the main town plaza including a Friday market.<br />
Sant’ Antimo, just 5km from Montalcino, is another<br />
famous abbey where monks used to chant. However,<br />
they became a victim of their own success with<br />
tourists and the religious significance of the chanting<br />
became lost in translation with too many camerabearing<br />
tourists and all that visitors can expect now is<br />
recorded chanting. However, the valley setting is very<br />
scenic making it well worth visiting.<br />
Estate Living<br />
Being an ancient walled town, space is limited and<br />
most of the accommodation in the town itself is in<br />
small hotels and bed and breakfast properties. Some<br />
of the district’s wineries also provide accommodation<br />
but this too is on a small scale.<br />
In Montalcino, families should check into<br />
Residence Palazzo Saloni which is a quaint familyoperated<br />
property with spacious rooms including<br />
some with self-catering facilities. Enjoy comfortable<br />
no-frills accommodation with an excellent buffet<br />
breakfast on the back terrace that affords panoramic<br />
views of the valley.<br />
For grand estate living, stay on the Castello Banfi<br />
wine estate in the 18th century hamlet known as<br />
Il Borgo inside the stone walls and towers of the<br />
Castello. While wine lovers will be especially<br />
attracted to the estate, the accommodation has<br />
universal appeal. Luxurious accommodation is<br />
located either side of the sloping village street which<br />
is ideal for families and children to play. Beautiful<br />
residential hideaways have been sumptuously<br />
appointed by one of Italy’s leading interior designers<br />
to reflect Tuscan country style with all the comforts<br />

Known in the 13th century as Poggio alle Mura,<br />
Castello Banfi is one of the most acclaimed winemakers<br />
in the region as well as producing a range of other<br />
agricultural products on the estate. These can all be<br />
sampled at the estate’s restaurants and purchased in<br />
its produce store where the locally-produced balsamic<br />
vinegar is not to be missed. While the wine cellar and<br />
restaurants are open year-round, its accommodation is<br />
only opened in <strong>2017</strong> from March 24 to November 12.<br />
Probably the most exclusive address in this part<br />
of Tuscany is the Rosewood-managed Castiglion del<br />
Bosco which is basically a boutique resort in an 800<br />
year old village that is part of a 2,000ha estate owned<br />
by Massimo and Chiara Ferragamo (of fashion house<br />
fame). The Borgo is a historic village that forms the<br />
heart of the estate which is also famous for producing<br />
wine. There are two restaurants and a cooking school<br />
but surprisingly, no Ferragamo boutique.<br />
Golf is another great reason to stay here as hotel<br />
guests get a once in a lifetime opportunity to play on the<br />
exclusive 18-hole championship golf course. Designed<br />
by British Open winner Tom Weiskopf, the exclusive<br />
members’ only course, and there are only a handful<br />
of members in what is Italy’s only private course,<br />
allows hotel guests just two rounds of golf per annum<br />
regardless of how long they stay on the property.<br />
Wining and Dining<br />
Food and wine play a central role in a holiday to<br />
Tuscany with the main red wine focus being Brunello<br />
di Montalcino and Rosso di Montalcino. Serious<br />
wine lovers should visit the Consorzio Brunello di<br />
Montalcino offices in the centre of the town for details<br />
on over 200 of the finest wine producers in the region.<br />
Ristorante Re di Macchia is located in the centre of<br />
Montalcino and serves dishes such as salad with roast<br />
rabbit, homemade ravioli with spinach and wild boar<br />
ragu and some of the biggest t-bone steaks in the region.<br />
Another centrally located wine cellar and restaurant<br />
is Isadori do Montalcino where a light lunch of cold<br />
cuts and cheeses outside at the front of the restaurant is<br />
highly recommended.<br />

Osteria di Porta al Cassero is an intimate, casual<br />
and popular restaurant in the town centre where risotto<br />
with porcini fungi and tripe stew with saffron are two<br />
signature dishes.<br />
Trattoria Il Pozzo, 5km south of Montalcino in the<br />
village of Sant’ Angelo In Colle is another casual place<br />
to eat and ideal for children as there is plenty of space<br />
on the outside terrace. The ricotta ravioli here is highly<br />
recommended.<br />
A fine dining experience not to miss is in the wine<br />
estate of Castello Banfi where regional cured meats,<br />
cheeses, olive oil, honey, artisanal pasta, and biscotti<br />
feature. For lunch, dine in La Taverna and for something<br />
more formal in the evening, Sala dei Grappoli is<br />
renowned for elegance and refinement plus awardwinning<br />
estate wines.<br />
Other wineries such as Caparzo, Fattoria dei Barbi,<br />
Col d’Orcia, and Bottega have restaurants attached to<br />
their cellar door.<br />
Getting There<br />
Emirates (www.emirates.com) has daily flights<br />
from Singapore to Rome via Dubai with excellent<br />
connectivity and the opportunity to shop on the way<br />
back home.<br />
Getting About<br />
Montalcino is a 2.5 hour drive from Rome Airport<br />

The Rocky Mountaineer is a luxury rail service<br />
running on four routes in western Canada.<br />
Journeying on the train is a comfortable way<br />
of seeing the region’s landscapes and wildlife.<br />
This year, with Canadians celebrating 150 years since<br />
Confederation — the act that united Britain’s North<br />
American colonies and is regarded by residents as the<br />
birth of their nation — rail travel seems a particularly<br />
fitting as a way of exploring this vast and scenic<br />
country.<br />
Some people speculate as to whether British<br />
Columbia would today even be a part of Canada if<br />
it wasn’t for the Canadian Pacific Railway. It could<br />
well have joined the United States of America, rather<br />
than the Dominion of Canada, if politicians in the<br />
eastern Provinces hadn’t agreed to the enormous<br />
undertaking of financing its construction. In the<br />
late-19th century, an age when powered air travel<br />
was still a distant dream, the railway represented the<br />
only feasible method of rapidly transporting people<br />
and goods across the continent. Even today it takes<br />
four-and-a-half hours to fly the 3,350 kilometres that<br />
separate Vancouver and Toronto. Rail aficionados<br />
may prefer to cover the ground between the two cities<br />
with a journey aboard The Canadian, the train that<br />
takes just shy of three-and-a-half days to cover that<br />
distance.<br />
The Rocky Mountaineer began operating in 1990<br />
and now carries well over 100,000 passengers a year.<br />
It has become recognised as one of the world’s great<br />
train journeys and is an aspirational travel experience.<br />
The First Passage to the West skirts a scenic,<br />
600-kilometre route between Vancouver and Banff<br />
over two days. It passes numerous points noteworthy<br />
for rail enthusiasts, including the Cisco Crossing,<br />
where both the Canadian Pacific and the Canadian<br />
National Railway lines cross the fast-flowing Fraser<br />
River. Arguably the most significant is Craigellachie,<br />
in British Columbia, the place where the final metal<br />
spike was ceremonially hammered into the track to<br />
complete the construction of the Canadian Pacific<br />
Railway on 7 November 1885. Travellers on the train<br />
are unable to disembark to visit the Last Spike Gift<br />
Shoppe and memorial cairn, but they can snap photos<br />
of visitors waving at the train, whose distinctive gold<br />
and blue livery makes it popular with photographers<br />
as it rolls through the countryside.<br />
Guests travelling from west to east are invited<br />
to board the train at a dedicated terminal on the<br />
edge of Vancouver. A smartly turned out gentleman<br />
in Scottish national dress, complete with kilt and<br />
sporran, plays the bagpipes, piping passengers<br />
aboard. As the train accelerates away from the station<br />
non-travelling members of the Rocky Mountaineer’s<br />
staff form a guard of honour to wave off guests — a<br />
scene that prompts many onboard to reach for their<br />
cameras and click the first of many photos during the<br />
journey.<br />
Travellers can choose between two levels of<br />
onboard service — SilverLeaf and GoldLeaf.<br />
Selecting SilverLeaf means travelling in a singlelevel<br />
carriage and being served food at the seat<br />
allocated for the journey. GoldLeaf carriages, by<br />
comparison, have two floors. Meals are served in the<br />
dining carriage on the lower level. Reclining leather<br />
seats are ranged beneath dome-windows on the upper<br />
level, offering elevated, panoramic views over the<br />
landscape through which the train traverses. Those<br />
windows, incidentally, are cleaned prior to each day’s<br />
travel, to minimise the chance of flecks impinging<br />
views or being recorded in photographs.<br />
An enhanced Deluxe GoldLeaf service guarantees<br />
the most luxurious guestrooms in hotels. That means<br />
staying in an executive suite at the Fairmont Olympic<br />
hotel in Seattle, while travelling on the Coastal<br />
Passage route, and overnighting in either the five-star<br />

For those travelling through the Canadian Rockies,<br />
on both the First Passage to the West and Journey<br />
Through the Clouds routes, that means spending a<br />
night in a comfortable hotel in downtown Kamloops.<br />
The four-star Sandman Signature Kamloops<br />
Hotel overlooks the town’s Riverside Park, by the<br />
confluence of the North and South Thompson Rivers.<br />
The DoubleTree by Hilton Hotel Kamloops is another<br />
of the properties where Rocky Mountaineer guests<br />
can lie down for the night.<br />
Seats aboard the train have lots of leg room, but<br />
one of the joys of undertaking a rail journey is that it’s<br />
possible to get up to walk around at any point. The<br />
carriages have open vestibules at their rears. Keen<br />
photographers tend to enjoy spending time out on the<br />
vestibule as it means being able to lean out and record<br />
images without catching reflections on the inside of<br />
windows. It also means being able to breathe in air<br />
laden with the fresh scent of pine or spruce while<br />
travelling through areas of dense forestation.<br />
One of the disadvantages of spending time on<br />
the vestibule is that the rush of air and clacking<br />
of the track make it tricky to hear the informative<br />
commentaries provided by members of the guest<br />
services team as the train passes points of interest<br />
or wildlife along the route. Intermittently, the team<br />
takes turns to use a microphone to provide travellers<br />
with advice when the train is approaching photo<br />
opportunities, and recount anecdotes providing<br />
insights into the heritage of landmarks. An onboard<br />
radio system means that the driver can relay<br />
information regarding wildlife sightings, so that<br />
guests are ready to photograph animals such as<br />
bighorn sheep, bald eagles and grizzly bears —<br />
including The Boss, the 250-kilogram male who<br />
inhabits territory on the edge of Banff National Park.<br />
Though the guest services team commit to memory a<br />
lengthy script, they adapt and enhance it according to<br />
their personal interests. That means some providing<br />
knowledgeable insights into railway history while<br />
others give commentaries about the behaviour and<br />
lifecycle of grizzlies.<br />
Like the mighty bears, who pull leaping salmon<br />
fresh from the rivers of western Canada, guests<br />
travelling in the GoldLeaf carriages can tuck into<br />
locally sourced fish for lunch. The team of chefs<br />
working aboard the fleet of Rocky Mountaineer<br />
trains sends out around 500,000 plates of exquisitely<br />
presented food each year. The cuisine is designed to<br />
meet the demands of discerning diners who are no<br />
strangers to cruising or fine-dining establishments.<br />
The menu includes vegetarian and gluten-free dishes<br />
and evolves each season. But old favourites — such<br />
as the short ribs, made with Alberta beef — have<br />
featured on the menu for years.<br />
A 10-day tour, aimed at gourmet travellers, is being<br />
added to the array of packages offering adventure<br />
experiences and sightseeing opportunities before and<br />
after journeys on the Rocky Mountaineer. The First<br />
Passage to the West Culinary Exploration includes<br />
a guided culinary walking tour of Granville Island<br />
or the expansive Chinatown district of Vancouver,<br />
plus two six-course tasting menus paired with<br />
wine. One of those is in the Eden Restaurant at The<br />
Rimrock Resort Hotel in Banff, which holds one of<br />
the American Automobile Association’s coveted Five<br />
Diamond ratings.<br />
Anybody wishing to learn more about the cuisine<br />
served in British Columbia can participate in one<br />
of the newly introduced guided walking tours of<br />
Kamloops, run by ACT Adventures. A local guide<br />

points out heritage locations around the city. A gold<br />
rush and, of course, the railway played roles in<br />
establishing Kamloops. A memorial to the first settlers<br />
of European origin, who walked from Winnipeg, stands<br />
opposite Brownstone Restaurant, where popular dishes<br />
are given a gourmet twist. The starters include poutine<br />
— traditionally a comfort food of French fries topped<br />
with gravy and curds — featuring wild mushroom,<br />
truffle oil and roast chicken. The main courses include<br />
locally caught rainbow trout and breast of duck from<br />
nearby Brome Lake. The renowned poet Robert Service<br />
worked in the heritage building now occupied by<br />
Brownstone’s while it was still used as the Canadian<br />
Bank of Commerce.<br />
Banff, the First Passage to the West’s eastern<br />
terminus, stands in Canada’s oldest national park and<br />
forms part of a UNESCO World Heritage Site. The<br />
national park was established in 1885 to encourage<br />
tourism to geothermal springs that were discovered,<br />
by chance, while railway construction workers took<br />
a break on Sulphur Mountain in 1883. The Banff<br />
Gondola now runs to the summit of that mountain,<br />
where a rooftop observation platform offers panoramic<br />
views of the surrounding landscape. Tours of the<br />
Cave and Basin National Historic Site are a way of<br />
learning about the discovery of the springs. Bathers<br />
who enjoy high-end experiences might prefer a trip<br />
to the Fairmont Banff Springs hotel’s Willow Stream<br />
Spa. The grand hotel has 764 guestrooms and is built<br />
in the style of a Scottish manor. Reputedly haunted, it<br />

over which it has commanding views.<br />
Dining with a backdrop of mountain scenery is also<br />
an option at nearby Lake Louise, which was named<br />
in honour of the fourth daughter of Queen Victoria —<br />
Princess Louisa Caroline Alberta — after whom the<br />
province is also called. Sitting in the Fairmont Chateau<br />
Lake Louise’s Walliser Stube, where fondue is served,<br />
provides views onto the lake and the steep slopes of the<br />
Canadian Rockies that rise above it, forming one of the<br />
country’s most popular ski resorts.<br />
Winter sports continue to draw visitors to the<br />
mountainous region outside of the season from April<br />
until October, when Rocky Mountaineer trains roll<br />
