Hello and welcome to a very busy issue of Golden<br />

Times. Spanning <strong>November</strong> and <strong>December</strong> means<br />

we encompass all the exciting events and activities<br />

that are going on from Halloween to New Year, so we're<br />

packed with wintery fun.<br />

On the cover of this issue is a truly beautiful shot<br />

taken in the gardens of Sheffield Park with the snow<br />

laying "Deep and crisp and even". Will we have a white<br />

Christmas this year ? Only time will tell.<br />

Minack Theatre, Cornwall<br />

There I was perched on the foot path preparing to hike<br />

to the Minack Theatre. The sheer drop on my left side<br />

looked far too dicey with the sea crashing on the rocks<br />

many metres below. I retraced my steps and took the<br />

safer route scrambling up the hill.<br />

Hot and bothered I arrived at the top and was welcomed<br />

like a celebrity. “This is the traveller who has come all the<br />

way from a drama group in the Southern Hemisphere”, the<br />

front of house manager announced. It was marvellous,<br />

given a cup of tea and escorted to the best seat, high<br />

in the centre turret. I settled back to enjoy the play and<br />

marvelled at the breathtaking panorama. The Atlantic<br />

Ocean as the theatrical backdrop, a director’s dream.<br />

Jean Anouilh’s comedy with identical twin brothers<br />

and their respective lovers cavorting across the stage<br />

and exiting with great speed, was performed in 1930’s<br />

slinky gowns, clinging ever closer as the rain drizzled<br />

down. The performers deserved a medal for completing<br />

this French farce in such inclement conditions. At the<br />

final bow, the audience showed their appreciation with<br />

deafening applause.<br />

Luckily a teacher in charge of a school group offered me a<br />

lift back to the Truro railway station as the bus strike made<br />

my return to Falmouth from Penzance that night totally<br />

impossible.<br />

It was getting late when I managed<br />

to board a train, eventually returning<br />

to the Falmouth hotel after 9pm to<br />

the relief of my fellow travellers as<br />

our tour moved on the following<br />

morning. A very thoughtful<br />

member of the group had requested<br />

a plate of dinner to be kept for me which I gratefully<br />

munch down. Between mouthfuls I recounted my<br />

amazing and adventurous thirteen hour day. The dogged<br />

performance of the ’Ring Round the Moon’ cast with<br />

slightly soggy evening clothes drooping and their goose<br />

bumps growing bigger than the beads in their necklaces.<br />

“And another thing", I related, “ I come across an enormous<br />

plant . It’s huge Gulliver sized leaves made me feel like a<br />

Lilliputian.” “That must be a Gunnera Manicata,” a local<br />

resident interjected. Camera happy me took a slide which<br />

shows a travel bag at the base of a huge bush to show size<br />

comparison. Not really that fantastic – problem would<br />

have been solved with a selfie !<br />

Amongst my collection of crested spoons and forks, I also<br />

have a Falmouth crested tea strainer, a reminder of my<br />

escapade down the West Country.<br />

Festive Greetings to my readers and more travel yarns in<br />

the New Year.<br />

Let me introduce you to the Sussex<br />

Stitchers. Technically, we are your<br />

local members of the Embroiderers’<br />

Guild, currently celebrating 40 years<br />

of blissful existence. We like to think<br />

we are much more fun, user friendly,<br />

and less formal than that sounds.<br />

We come from all corners of nearby<br />

communities and walks of life to<br />

learn and partake in endless aspects<br />

of textile creation and decoration.<br />

We love to celebrate local events<br />

such as the opening of new hospitals<br />

and schools as well as those of<br />

national status. Last year we created<br />

exhibits for the 300th anniversary of<br />

Capability Brown for Standen House,<br />

part of a nationwide initiative and we<br />

have previously restored significant<br />

treasures for Batemans in Burwash<br />

and Monk’s House in Rodmell, all<br />

National Trust properties in our<br />

beautiful Sussex locality. We have<br />

also produced decorative panels to<br />

be seen in the Conquest Hospital<br />

and a school in Eastbourne. We are<br />

currently planning our project for<br />

2018.<br />

For many of us, this has been a<br />

lifelong craze, though some were<br />

“Much is Done” by the Sussex Stitchers<br />

initially rather nervous about where<br />

and how to start the art, being barely<br />

able to jiggle threads on fabric on<br />

arrival. No matter, we welcome<br />

newcomers, experienced or not, and<br />

encourage them to blossom.<br />

We create decorative fabrics<br />

then embellishment follows using<br />

whatever comes to hand, including<br />

the traditional silks, cottons and<br />

wools. Re-incarnation technology<br />

with glue guns, soluble fabrics,<br />

soldering irons and the like whilst<br />

less favoured by the National Trust<br />

gives us a sense of exploration.<br />

The Sussex landscape and coast<br />

inspires greatly and the countryside<br />

and beaches bear many bits and<br />

bobs ripe for inclusion in a project.<br />

Consequent achievements can be<br />

stunning, especially with a little help<br />

from friends.<br />

sharing our various skills, techniques<br />

and enthusiasm in our monthly<br />

gatherings. More significantly, we<br />

friendship and company, generally<br />

over tea and the all important cake.<br />

A Morris kind of Christmas!<br />

I seem to remember seeing<br />

the first Christmas items and<br />

catalogues surfacing around<br />

the end of September. Some<br />

people love it and others find<br />

it very stressful for various<br />

reasons. If you are one of the<br />

ones with a more stressful<br />

outlook, perhaps we can look at<br />

Christmas rather like any other<br />

stressful situation that comes<br />

along.<br />

I am a member of Mad Jacks<br />

Morris. You may well have<br />

seen us dancing out around<br />

Hastings, particularly at Jackin-the<br />

Green. I am normally<br />

quite a self-contained person,<br />

happy to go with the flow, but<br />

I have now been charged with<br />

steering our club to a higher<br />

profile, recruiting more dancers<br />

and generally having a bigger<br />

profile myself. I have done<br />

this kind of thing before in a<br />

corporate life, but over the last<br />

twenty years or so I have got<br />

used to being in the background<br />

more. So this could have been<br />

a little overwhelming for me.<br />

However, once I got over the<br />

shock I realised that I actually<br />

had a choice as to how I dealt<br />

with this. In fact, I thought<br />

it through in the same way I<br />

did with my lower back pain<br />

many years ago! Alexander’s<br />

discoveries with movement<br />

were based on stopping the<br />

stimulus to move in a habitual<br />

way (which may be the cause of<br />

our pain) and choosing to move<br />

in a different, more balanced,<br />

way for the body (thereby<br />

helping to alleviate the pain). In<br />

other words, we can choose our<br />

responses to situations rather<br />

than behaving as we always<br />

do out of habit. So instead of<br />

getting stressed I chose to stop<br />

and remember my ‘past life’<br />

with more of a ‘can do’ attitude.<br />

I urge you to try it next time<br />

stress rears its head. Talking<br />

of heads, if your Christmas<br />

requires a turkey weighing<br />

around 6 kg (c12lb) you will<br />

be cooking approximately<br />

the weight of your head!!<br />

Alexander’s work is centred<br />

around how the head influences<br />

spinal movement and which, in<br />

turn, can prevent vocal strain,<br />

can help with management<br />

of pain, poise, balance and<br />

freedom of movement.<br />

will, as usual, be dancing out<br />

on Winkle Island on Boxing Day,<br />

at 12.30 so do come and chat<br />

to us. We are always looking<br />

for new dancers and musicians.<br />

Gardening tips for late Autumn - early Winter<br />

The leaves are starting to build up and that grass rake<br />

is going to see some use. Keep leaves from building up<br />

on lawns as they’ll smother the grass and kill it off, as<br />

long as they don’t get too bad I can put up with leaves<br />

in beds and borders providing they’re not smothering<br />

plants. Prune Red and blackcurrants, gooseberries and<br />

raspberries. There is a slight difference between pruning<br />

red and blackcurrants. Red currants tend to fruit on wood<br />

that is at least two years old and are grown on a single<br />

stem. Blackcurrants tend to fruit on year old branches<br />

and are grown as a bush. So with blackcurrants you can<br />

take out older growth but not so much on a red currant.<br />

What other jobs are there, if you want to plant fruit<br />

bushes now is a good time, start clearing the summer<br />

bedding, if you want to remove the dead tops of<br />

herbaceous perennials do that too or leave them as an<br />

insect habitat. If you’re planting spring bulbs you need<br />

to get on with it.<br />

Early Winter then, get the Christmas list in early so<br />

Santa can bring you a new pair of warm gloves. Dig over<br />

the veg plot, one way to warm up in winter. Check bulbs,<br />

corms and tubers that you have put in storage regularly<br />

for health and discard any damaged ones.<br />

Take root and hardwood shrub cuttings. If you grow<br />

alpines cover them with a sheet of glass, if possible, to<br />

protect them against frost. Gradually reduce the amount<br />

of water you give plants in the greenhouse except winter<br />

flowering plants that are still in strong active growth.<br />

Ventilate the greenhouse on warm days to get some air<br />

flowing through, lack of air can encourage diseases.<br />

Don’t forget to protect any vulnerable plants that are<br />

going to stay in the garden.<br />

Creative Writing Corner<br />

"The ESSO Map (circa 1960)"<br />

Jemima had rented a stall for ten years now at The Peckleberry<br />

vintage fair. Each month sorting, packing and pricing her stock before<br />

stacking it in her little old car called Doris. "I don’t know why I take<br />

these maps" she had thought while putting them in their bubble wrap<br />

storage envelopes. They were now nearly sixty years old and becoming<br />

quite fragile. The maps were lovely, produced by Esso and sold in<br />

their garages to ensure “Happy motoring” in the 1960s. On the front<br />

page there would always be a colourful scene of the area the map was<br />

covering, and at the top of the page would be the bright red, blue and<br />

white colours of the Esso logo.<br />

The map was sold for six pence. Each map was numbered and<br />

collectors would one by one search out the full series, but mostly<br />

people would just stand, study them and reminisce. So many stories<br />

people had shared with Jemima about long road journeys before<br />

motorways. Grandparents showed their Grandchildren the maps and<br />

explained to them what “trunk roads” were, indicated on the map<br />

with a clear red line. They also explained that hand signals were used,<br />

and the highway code of the time stipulated the arm must be fully<br />

extended out of the window, the appropriate signal must be given and<br />

“only when it is safe to do so” must the manoeuvre take place.<br />

Not as reliable as today, the car would break down frequently, so to<br />

be a member of the AA breakdown service was a good investment. It<br />

was always a reassurance to see the AA man in his uniform standing<br />

at the roadside, his bright yellow motorcycle parked beside him,<br />

saluting those drivers displaying the AA membership badge on their<br />

cars.<br />

One couple had been standing studying the Esso maps for an hour<br />

before explaining on their first holiday in the 1960s they had got lost.<br />

They had followed the Esso map black lines for B roads, but ended<br />

up lost and short of petrol late into the evening. They had knocked on<br />

the door of a farm house and the farmer had offered a field for them<br />

to camp in and the following morning took them to the nearest petrol<br />

station… 20 miles away.<br />

The single black line indicated was no more than a lane really, and<br />

there were tales of long delays while farmers herded there cows down<br />

the lanes to greener pastures. There were few cafés around and you<br />

would be reliant on the farms to purchase produce to make up a<br />

picnic.<br />

Jemima had enjoyed her day at the fair; she had sold three maps and<br />

enjoyed the different stories and the reminiscing. Now it was time to<br />

pack up, drive Doris home, and start the search for more stock for the<br />

Peckleford Fair. Hopefully she would find some more Esso maps, but<br />

it was getting difficult. They were becoming quite rare.<br />

LAW FIRM JOINS WILL WRITING CHARITY CAMPAIGN<br />

FOR ANOTHER YEAR<br />

A local solicitor firm from Eastbourne & Hastings is aiming<br />

to raise vital funds for nine of the UK’s best loved charities,<br />

after signing up for Will Aid, the annual charity will writing<br />

campaign.<br />

Stephen Rimmer LLP has signed up to the scheme, which<br />

runs throughout <strong>November</strong>– for the 15th<br />

year in a row.<br />

Joe Richardson from the firm said: “We are<br />

very excited to be involved again in the Will<br />

Aid campaign this year.<br />

“It gives us an excellent opportunity to<br />

reach people in our community who do not<br />

have a will and help them to protect their<br />

loved ones for the future.<br />

“It also means we can raise funds for nine<br />

incredible charities which make a huge<br />

difference to millions of vulnerable people both here in the<br />

UK and around the world.”<br />

Campaign director Peter de Vena Franks added: “One<br />

in three people die in the UK without making a will, often<br />

leaving confusion and chaos at an already difficult time.<br />

“Will Aid encourages people to prepare this vital document<br />

and at the same time making a real difference by raising<br />

money for the partner charities.<br />

“We are thrilled that Stephen Rimmer LLP<br />

is continuing their wonderful support of<br />

Will Aid.”<br />

The Will Aid scheme takes place across the UK from 01-30<br />

<strong>November</strong> and supports the life-changing work of ActionAid,<br />

Age UK, British Red Cross, Christian Aid,<br />

NSPCC, Save the Children, Sightsavers,<br />

SCIAF (Scotland) and Trocaire (N.<br />

Ireland).<br />

It has raised more than £19 million for<br />

these charities since it launched in 1988.<br />

Lawyers from Stephen Rimmer will be<br />

seeing people at their offices in Hastings<br />

and Eastbourne in <strong>November</strong> to write<br />

basic wills, waiving their normal fee,<br />

and instead asking clients to make a<br />

voluntary donation to Will Aid. Donations support the vital<br />

work of the nine partner charities.<br />

The recommended donation for a basic Will Aid will is £95 for<br />

a single will and £150 for a pair of mirror wills.<br />

Reading back through my last column, I We really ought not to be<br />

noticed I ended with the words "It'll be focusing on that right now<br />

Christmas before you know it" well, how though. I ought to be mindful<br />

right I was. The festive season has crept up of the fact that many of you<br />

on me like an invisible cat with commando training. will be reading this in early<br />

As I write this, I've barely got a month and a half's <strong>November</strong>, thinking it's still<br />

worth of shopping days left to get my ridiculously way too early to be talking<br />

large family something delightful each. It's easy about festivities, even if the<br />

with the little kids. They give you a list of about 100 local supermarket has had a<br />

things that they absolutely "must have" from Santa tree up since September!<br />

this year, and I just try to pick a couple of things<br />

that I hope they wont have changed their minds<br />

about by Christmas morning.<br />

But the older they get the harder it is. Once they're<br />

into adulthood, it's almost impossible to pick<br />

something they actually want that you can afford. I<br />

asked my adult son what he'd like for Christmas and<br />

he suggested a £2,500 mountain bike, a £1,500<br />

computer and an £80,000 car. He got pants, and<br />

was grateful they weren't a lump of coal.<br />

It's easy to get lost in a frenzy of consumerism at<br />

this time of year, but there's nothing wrong with<br />

presents. I get a huge amount of satisfaction and<br />

pleasure seeing a smile on someone's face when<br />

they open a gift I've bought them.<br />

Even if you're putting off<br />

thoughts of the festive season for a few weeks,<br />

there's still plenty of ideas in Golden Times for<br />

things to do and places to go. Lots of days out,<br />

bonfire parades, and firework displays before you<br />

have to go anywhere near a grotto or think about<br />

stroking a reindeer.<br />

Make sure you have a good look through all our<br />

advertisements and listings to make sure you know<br />

what's going on where. Try to stay sane in the<br />

run up to the end of the year, and if you're feeling<br />

stressed, just think - before you know it you'll be<br />

nodding off in front of the Queens Speech with a<br />

half eaten mince pie on your lap!<br />

Meet Lottie "Our Golden Girl"<br />

Initially, she trained as a Special Needs Teacher and has worked in a variety<br />

Educational Consultant for Special Educational Needs and Emotional Well<br />

being in both the Independent sector and mainstream. She is involved in staff<br />

Dear Alison,<br />

My son is in Year 3 at Primary school<br />

each night his class teacher sends his<br />

reading book home however he refuses<br />

to read to me. I have tried tempting<br />

him with rewards and getting cross<br />

and I have tried to read at different<br />

times. His class teacher keeps writing<br />

comments in the book asking me to<br />

read with him. I just don’t know what<br />

to do anymore.<br />

When we find something difficult<br />

we try to avoid it. For whatever<br />

reason, your son sounds as if he<br />

is struggling to read and certainly<br />

not getting any enjoyment out of it.<br />

My first suggestion would be to<br />

make an appointment and meet<br />

up and discuss this with his class<br />

teacher. Ask how he is doing<br />

in school, whether she has any<br />

concerns over his reading and if<br />

so what sort of support is in place.<br />

Then you can share the difficulties<br />

you are experiencing at home and<br />

then together work out strategies<br />

that support both you and your son.<br />

It is really helpful for children if both<br />

schools and parents get together to<br />

discuss difficulties and then both<br />

work together to create strategies<br />

to overcome these.<br />

There are a range of things that<br />

can work to support reading for<br />

children. Share books together –<br />

if he doesn’t want to read don’t<br />

make it a big deal, just say ‘OK I<br />

can read.’ That way, your son is<br />

still being exposed to the words<br />

on the page, the excitement of the<br />

story, and is hearing the language<br />

of stories.<br />

Other ways that support reading<br />

can be writing on post it notes – in<br />

lunch boxes – with a joke of the day,<br />

on the fridge - what’s for tea or jobs<br />

to do. Emails from grandparents<br />

to share together or texts to Dad<br />

or other older siblings can also be<br />

fun ways where he needs to try and<br />

read.<br />

You can also try games where he has<br />

to read clues to find the treasure – a<br />

new game or a sweet of some sort.<br />

1. Go to the bedroom, 2. Look under<br />

the pillow in the front room, 3. Go to<br />

the kitchen, 4. Look in the fridge etc<br />

Comics are another area that many<br />

children with poor reading enjoy<br />

as they have graphic pictures to<br />

support their understanding of what<br />

is happening in the story. You can<br />

be as creative as possible and make<br />

reading a fun and enjoyable activity<br />

with you.<br />

Dear Alison<br />

We are very lucky as our daughter<br />

is in a mainstream school with a<br />

fantastic class teacher who she enjoys<br />

working with very much. She has a<br />

range of problems including Dyslexia<br />

difficulties with co-ordination and<br />

handwriting. She has been on the<br />

Special Needs register ever since<br />

she was in Y2, she is now in Y5. The<br />

school SENCo has just suggested that<br />

we start a school Based Action Plan.<br />

Please can you help explain?<br />

Thank you for your question it is one<br />

that often is asked by parents.<br />

A School Based Action Plan – SBAP<br />

is a way of ensuring that parents<br />

and schools work together to both<br />

identify and then support a range<br />

of needs that a child might have.<br />

You will be asked to work with<br />

the SENCo to complete the SBAP.<br />

This will identify areas that your<br />

daughter does well both at home<br />

and at school and then also areas<br />

that cause her to struggle. Once<br />

these areas have been identified<br />

then together you will choose the<br />

ones that school needs to focus on<br />

for the term ahead. Once this has<br />

been done then the school will share<br />

how they will support these needs.<br />

Within the SBAP they will show who<br />

will support your daughter, how, and<br />

for how long each session. They will<br />

also share the targets your daughter<br />

and members of staff will work on<br />

and how you can support this at<br />

home.<br />

Each of the areas will be linked<br />

to the 6 areas of SEN that the<br />

Government identifies: 1. Cognition<br />

and learning (for your daughter<br />

her dyslexia) 2. Physical (her coordination<br />

difficulties and possibly<br />

handwriting) 3. Sensory, 4. Social<br />

Emotional and Mental Health (this<br />

might be high anxiety as a child<br />

is not able to do something, low<br />

self esteem or other diagnosed<br />

mental health) 5. Medical, 6.<br />

Communication and interaction.<br />

At the end of the term you will<br />

be invited back into work with the<br />

SENCo to review the progress your<br />

daughter has made against the<br />

targets set. At the end of this part<br />

you and the SENCo will agree the<br />

next lot of targets for the coming term. After 2 or<br />

3 cycles you will be able to see the progress your<br />

daughter has been able to make with this support.<br />

If progress is good then the school will be able<br />

to meet her needs within their budget. If however<br />

the SBAP shows that progress is not sufficient<br />

and that more specialised support is needed or<br />

that they are not able to make progress within<br />

their budget then an application can be made to<br />

the Local Authority for and Education Healthcare<br />

Plan – EHCP.<br />

This will identify your daughters needs and ensure<br />

that they are met at whichever school she attends.<br />

For some children it also recognises the greatness<br />

of their need and enables schools to access<br />

further money to meet these needs within their<br />

environment.<br />

There's a new man in my life<br />

I<br />

’m so excited I can hardly<br />

sleep. The most wonderful<br />

thing has happened to me.<br />

At the age of 58 I’ve discovered<br />

the real meaning of life. And<br />

things will never be the same<br />

again. No, I haven’t started<br />

watching Strictly. I’ve become a<br />

grandmother. It’s amazing, isn’t<br />

it? Don’t know why I didn’t do<br />

it years ago.<br />

My friends who got here before<br />

me had suggested they had<br />

something a bit special in<br />

their lives. Suddenly they were<br />

unavailable for girl’s nights<br />

out. They had to be available<br />

at the drop of a hat “just in<br />

case I’m needed”. Weekends<br />

were reserved for “the new<br />

person in my life”. It was worse<br />

than having your best friend<br />

get a new lover! Now I get it.<br />

I know you more experienced<br />

grandparents are rolling your<br />

eyes as you studiously avoid<br />

picking up the phone to yet<br />

another request for emergency<br />

babysitting. No doubt there will<br />

be highs and lows but, right at<br />

this moment, my joy is totally<br />

unstoppable.<br />

Have you noticed how<br />

grandmothers are now<br />

very “in”? Everyone’s at it.<br />

Grandchildren are the new<br />

“must have” accessories.<br />

Gorgeous models and<br />

actresses are all over the<br />

glossies with their two<br />

generations. The emphasis is<br />

very much on how young and<br />

attractive the grandmother is,<br />

rather than the baby’s dimples.<br />

The words glamorous and<br />

grandmother are put together<br />

constantly. This is a totally new<br />

phenomenon. We are the first<br />

generation of “glam grans”,<br />

youthful, active, and influential.<br />

The pressure is now on to look<br />

good at all ages. No more<br />

settling back by the fire with<br />

your knitting and a pack of<br />

digestives. Now it’s all pilates<br />

and climbing Katmandu. The<br />

era of twin-sets and perms<br />

disappeared years ago, but<br />

this new world of super-grans<br />

is very new. I’m embracing it.<br />

Rather than allowing the mantle<br />

of “grandparent” to age me, I’m<br />

pushing back the boundaries<br />

and refusing to be defined by a<br />

label (and don’t get me started<br />

on what I should be called – it’s<br />

the question everyone asks!).<br />

I’ve started a new dance class<br />

– contemporary, not ballroom.<br />

I’m enrolling in a new language<br />

course – in Milan. I’ve bought<br />

a new coat in bright pink. I’m<br />

experimenting with new makeup.<br />

I’m making my diet even<br />

more healthy. I’m upping my<br />

game to make my business<br />

more successful. I want my<br />

grandchildren to be proud of<br />

me, to see me as a woman of<br />

style and substance who loves<br />

life and lives it to the full. Bring<br />

NOVEMBER: Heading up to Christmas there’s a lot to<br />

see and do! On Saturday 18th and 19th <strong>November</strong> we<br />

have the final fish festival of the year put on by Hastings<br />

Borough Council - The Herring Fair. Although it’s held at<br />

the Stade Open Space in Hastings Old Town, this one is<br />

completely under cover. The stage, the music,<br />

the bar and the various stalls selling fish dishes<br />

(a lot of Herring variations) but of course other<br />

choices. There’s also local wines, ciders and<br />

beers. You’ll find Children’s entertainment in<br />

The Stade Hall with crafts and face painting.<br />

Warm clothes are advisable.<br />

DECEMBER: On <strong>December</strong> 9th at St Mary in the Castle,<br />

Hastings seafront, you can see the fabulous Christmas<br />

Soul Party featuring 3 great bands: Funk & Disorderly,<br />

The Kytes and The Blues Brothers, Soul Sisters Show<br />

(15 piece band). Advance tickets are available from The<br />

Hastings Tourist Information Centre on Hastings Seafront.<br />

It’s the 20th year of this wonderful fund raiser so expect<br />

some extra guests!<br />

Tickets are £8.50 in advance and £10 on the<br />

door. All proceeds are divided between St<br />

Michael’s Hospice and Surviving Christmas. To<br />

date we have raised £160,000.00 over the 20<br />

years. This is always a great night - so if you<br />

A simple roast beef dinner, ideal for Christmas - Recipe by Faz Razeen<br />

It is always lovely to have a Roast Beef meal at Christmas as a change from the traditional Roast Turkey.<br />

Why does Christmas always seem like the perfect time for roast beef? It’s likely because people associate a hearty joint of<br />

juicy beef and the Christmas time to Indulge yourself, your family and guests by creating the ultimate Sunday Roast Beef.<br />

Happily, it doesn’t take a lot of skill or effort to produce a roast beef meal, in fact, it doesn’t even take a huge budget - long,<br />

slow cooking will tenderize even tough, inexpensive cuts of beef. But if you’re planning a fancy Christmas celebration, you can<br />

also opt to go all-out, a top-side joint is never unwelcoming at the Christmas lunch or dinner table.<br />

Serves: 6 - Cooking Time: 1 hour and 30 Minutes<br />

Ingredients :<br />

1.5kg approx. Beef topside<br />

4-5 tbsp. olive oil<br />

A few sprigs of thyme<br />

1 glass of red wine<br />

1 tbsp. redcurrant jelly<br />

1 cube of beef stock for gravy<br />

2-3 tbsp. honey for parsnip<br />

3-4 garlic crushed and minced<br />

2 tbsp. whole grain mustard<br />

3 tsp. brown sugar<br />

3 large red onions, peeled and cut into quarters<br />

Flour, salt and black peppercorn as required<br />

Make a paste by mixing below ingredients in a bowl :<br />

2 tbsp. whole grain mustard or alternatively you may use<br />

mustard powder<br />

3-4 cloves of garlic crushed and minced<br />

2 tsp. brown sugar<br />

Generous pinches salt & black peppercorn finely crushed.<br />

Drop of red wine to mix paste (not too weak)<br />

6-8 medium size carrots, peeled and leave whole and brush<br />

with olive oil<br />

6-8 medium parsnips peeled, trimmed and leave whole, brush<br />

with honey<br />

1.5kg floury potatoes, cut into good size chunks then boiled<br />

in salted water, bring to boil and immediately drain in a<br />

colander. Brush with olive oil and dust with generous pinch of<br />

seasoned flour<br />

Cook ½ kilo of brussels sprouts separately in a saucepan or<br />

alternatively use frozen brussels sprouts.<br />

Method :<br />

1: Trim fat and sinew from beef. Do not remove cooking string<br />

which helps to keep its shape during cooking, stab the beef<br />

very carefully with a pointed knife without cutting the strings,<br />

rub the paste thoroughly all over the beef, leave the joint in<br />

the fridge 4 -5 hours to marinate with the mustard paste.<br />

2: Prepare your vegetables in advance to make your life easy.<br />

3: Seal the joint gently in a hot pan for 3-4 minutes over a<br />

high heat before transferring to a roasting tray, and place<br />

joint with a few sprigs of thyme in the oven. Ensure oven is<br />

preheated and cook at 180°C fan/ gas 6 and cook for 30<br />

minutes, after 30 minutes remove roasting tray and add<br />

potatoes, parsnips and carrots around the joint. Return the<br />

roasting tray to the oven and cook at the same temperature<br />

for a further 60 minutes.<br />

4: Place the onion quarters in with the joint and vegetables<br />

during the last twenty minutes of cooking.<br />

The time taken to rest will depend on its size, a roast is best<br />

rested for 10 to 20 minutes before carving.<br />

Gravy with Red Wine: Add 200ml hot water to stock cube stir<br />

well in saucepan then add small glass of red wine and redcurrant<br />

jelly, gently stir until the gravy is thickened.<br />

Yorkshire Puddings: much simpler, easier and economical to<br />

use frozen Yorkshire puddings such as Aunt Bessie's, Tesco’s<br />

and Waitrose frozen Yorkshire puddings.<br />
