Bowali village in Gaibandha
abuzz with making of
lentil dumplings
GAIBANDHA : Bowali
village in Sadar upazila of
the district, popularly
known as 'Bori village' for
producing delicious
'Daaler Bori' or lentil
dumplings, is now
reverberating day and
night with the sound of
grinding and pasting
lentils to make the popular
food item, reports UNB.
This 'Daaler Bori', which
is one of the most popular
and traditional items in
Bengali cuisine, is a must
for the food lovers,
especially in winter.
At the Bowali village, the
preparation for making
these 'bori' begins at dawn
and continues till night.
Some wash lentils while
some paste and grind
those and some other mix
lentils and rice powder
together and lay the
dumplings under the sun
for drying them. Once the
dumplings are dried
properly, they are ready
for eating.
According to locals,
dealing in 'Daaler Bori' is
an inherited business.
Though it takes a lot of
hard work, there is no risk
of loss.
There is a good demand
for dumplings at home
and abroad. If the lentil
price had been less, the
dumplings would have
cost less too, said the
locals, adding that it is not
that much profitable now.
Over three hundred
families are earning their
bread and butter from this
business. Even small
children help their parents
in the work alongside their
study.
The production cost of
each kg of bori is Tk 175
while it is selling at Tk
250-300 per kg.
Each family can produce
up to 10 kg of bori a day.
If the government
provides assistance to the
families, the production
can be boosted using
modern technology and
the dumplings can be
exported abroad after
fulfilling the local demand.
'Daaler Bori' can be fried
and eaten as snacks, but is
mainly added to fish or
vegetable dishes to add to
the taste.
A discussion meeting was held at Government KC college yesterday marking Martyrs Intellectuals
Day.
