With dim sum, variety
overrides quantity. But you
could easily get carried away
by the whole range at Tai
Thong restaurants, both
steamed and fried. Some
like them steamy — In dim
sum terms, subtleties are
the rule. An example is the
wrap-to-filling proportion
and condiments used. So
it is with Tai Thong’s Har
Kao, Siew Mai and Shark’s
Fin Dumplings. While you
cannot miss the freshness
of the prawn filling, savour
the touches of condiments.
A sprinkle of sesame oil,
chopped scallions perhaps.
Pillow-soft chicken Char Siew
Buns are such a favourite. So
are the Fish Balls – freshly
made and nothing like the
little machine-mashed spheres
from the stalls. The same is
true for the Beef Balls, with
less starch or other binder
and more meat. How about
Braised Chicken Feet? Like a
firm terrine, they come in a
delectable bean paste sauce.
Then the chefs surprise you
with spicy Bean Curd Skin
with seafood and honey
filling. It stands out from the
rest for its peppery heat.
