16 FEATURES Friday, October 02, 2020 The Indian Weekender Quick and easy dinners MASALA KHICHDI INGREDIENTS: • 11/2cup - rice • 1cup - lintels (split moong dal with skin on) • 2 - carrots • 2 - beans • 2 - potatoes, medium • 1cup - spinach, chopped • 1/2cup - peas (frozen) • 1/4tsp - turmeric powder • 1/4tsp - red chilli powder • 1tsp - salt • 21/2cups - water FOR TEMPERING: • 1/2tsp - cumin seeds • 1/4tsp - asafoetida • 2 - onions, large • 1/2tsp - ginger paste • 1/2tsp - garlic paste • 3 - green chillies • 1/4tsp - turmeric powder • 1/4tsp - red chilli powder • 1/4tsp - coriander powder • 3tbsp - clarified butter (ghee) or oil • Fresh coriander to garnish METHOD: • Rinse rice and lintels, each separately under the running water, til the water runs clear. Set aside. • Wash and chop carrots and beans and dice potatoes into the desirable cubes. Set aside. • In a deep heavy base saucepan heat 2 tablespoons of clarified butter over medium flame. • Add lintels and fry for a minute (frying lentil gives a very nice flavour to it) add rice and sauté for a minute again. • Add chopped carrots, beans, potatoes and spinach. • Add peas, turmeric powder, red chilli powder and salt followed by water, give a good mix. • Cover and cook for 4-5 minutes or until done (you can pressure cook as well). FOR TEMPERING • Peel, wash and chop onions and chop green chillies, keep aside. • In a pry pan heat 1 tablespoon of clarified butter over medium flame. • Add cumin seeds followed by asafoetida, stir for few seconds or until aromatic. • Add chopped onions and sauté until brown in colour. • Add ginger, garlic paste, sauté for 2 minutes. • Add chopped green chillies and sauté for another minute. • Add turmeric powder, red chilli powder and coriander powder, mix well. • Add the onion tempering (tadka) to the rice mixture and give a good mix (you can add more water as per your choice of consistency). • Garnish with a dollop of clarified butter on top and fresh chopped coriander. • Serve with yoghurt and pickle of your choice. TIP: The difference between split moong dal with skin on and without skin is that split moong dal without skin is easy to digest so mainly used in khichdi is when someone is unwell. Other wise split moong with skin on gives more flavour and has fibre. Serves - 4 FLAKY ROLL INGREDIENTS: • 4 - flakey paratha ( Kawan flaky plain or onion) • 1/2 - cabbage • 1 - capsicum • 5 - potatoes, large • 1tsp - garlic paste • 1tsp - ginger paste • 2 - green chillies • 1/2tsp - coriander powder • 1/2tsp - red chilli powder • 1/4tsp - asafoetida • 1tsp - garam masala powder • 2tbsp - tomato ketchup • 3 - tomatoes • 1/4tsp - cumin powder • 1/2tsp mango powder (amchoor powder) • 1/2tsp - salt or according to taste • 1tbsp - fresh coriander chopped • 4tbsp - oil FOR CHILLI VINEGAR • 4 - green chillies • 1/2cup - vinegar • 1/2tsp - salt or according to taste • 1 - red onion • 1 - lemon METHOD FOR CHILLI VINEGAR: • Wash and chop green chillies then add them to the small bowl. • Add vinegar and salt to green chillies, mix well and keep aside for later use. METHOD: • Wash and thinly slice cabbage and capsicum. Set aside. • Boil potatoes and keep aside for later use. • In a heavy base saucepan heat 2 tablespoons of oil over medium flame. • Add garlic paste, stir, add ginger paste and sauté well for a minute. • Add washed and chopped green chillies, sauté for few seconds. • Add coriander powder, red chilli powder, asafoetida and garam masala powder, stir well. • Add tomato ketchup and sauté until oil comes on top. • Wash and make a purée of tomatoes then add them to the pan and sauté till oil comes on top. GREEN CHUTNEY INGREDIENTS: • 1/2cup - coriander leaves • 1/4cup - mint leaves • 6 - green chillies • 1 - tomato • 2 - onions • 1 - lemon • 1tsp - salt METHOD: • In a mixer add coriander leaves, mint leaves, green chillies, tomato, juice of lemon and salt, beat until well combined. • Break the boiled potatoes with your hand then add them to the pan, mix well until well combined with the masala, then remove from the flame. • Add cumin powder, mango powder and season with salt. • Add fresh chopped coriander and mix everything together until well combined by using fork or with your hands. • Rubbing some oil on your palms roll potato mixture into a round cylinder shape kebabs (nearly 8cm long). • In the same pan add 1 tablespoon of oil over medium flame. • Press kebabs slightly between your hands then place them in the pan. • Fry the kebabs till they are brown and crisp on both the sides then transfer them onto a plate (repeat the process until the whole mixture is used). • In the same pan heat 1 tablespoon of oil over medium flame. • Add sliced cabbage and capsicum and slightly sauté them until the extra water evaporates, transfer them onto a plate. TO ASSEMBLE: • In a pan or skillet cook flaky, flipping it over until done over medium flame. • Take flaky in a plate. • Place potato roll on it. • Sprinkle cabbage and capsicum on top. • Sprinkle chilli vinegar and sliced red onions. • Sprinkle some chaat masala on top and squeeze lemon. • Roll the flaky and serve with green chutney. • Serves - 4 • Add peeled and washed onion and coarsely grind it (chutney tastes good with little bit of crunchy onion in it). Serve. For acne-prone skin Acne is difficult to deal with but thanks to Indian ingredients with medicinal properties, you can not only deal with acne but also work towards cleaning it out. For this, you will need to crush a few clean neem leaves into a paste. Now add besan and aloe Vera to it and combine well till you get a smooth paste. Apply evenly on your face and let it sit for 15 minutes. Rinse with cold water and repeat it once a week. Both aloe and neem have medicinal properties and are antibacterial which helps in reducing acne.

So far, actors Deepika Padukone, Shraddha Kapoor, Sara Ali Khan and Rakul Preet Singh have been summoned by the NCB for questioning. The actors names came up in the NCB’s investigation of Rhea Chakraborty’s connections to drug suppliers. Rhea was initially being investigated in connection with her boyfriend, Sushant Singh Rajput’s death. According to Republic, sources have said that the upcoming phase of the investigation is expected to last a month, and will involve a few of the ‘biggest names in Bollywood’. On the occasion of Daughters' Day, late actor Irrfan Khan's wife Sutapa Sikdar revealed how the two "desperately" wanted to have a daughter in their life. "Me and Irrfan wanted to have a daughter so desperately that on my second delivery my doc could not utter the word son and said instead 'congratulations!! healthy child!!' I was disappointed.... yes, I was. That day for us and today, I feel sad that a girl child got deprived of Irrfan's parenting of a girl. The Bhojpuri film industry is likely to spread its wings even higher following the announcement that a film city will come up in Uttar Pradeshs Noida by 2021 by Chief Minister Yogi Adityanath. A large number of Bhojpuri films are made in Uttar Pradesh. However, from studios to technical work, the Bhojpuri producers have to depend on Mumbai. With the setting up of a film city in Noida, these filmmakers hope to get better facilities with an advanced infrastructure in UP itself.
